1/2 cup water
Salt and pepper to taste
1 can (14-1/2 ounces) diced tomatoes, undrained
4 large eggs, lightly beaten
4 ounces Velveeta, sliced

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. add the potatoes, water, salt and pepper. 5 eggs, beaten
2 tablespoons milk
1 onion, chopped
2 slices cooked ham, chopped
1 cup shredded Cheddar cheese
1 to taste salt and pepper to taste
⅛ teaspoon garlic powder, or to taste
2 ½ tablespoons butter

7 -8 medium eggs, beaten
1/3 cup ham, cut into bite size pieces
1/4 cup colored bell pepper, cut into bite size pieces (I use green and orange)
1 tablespoon basil
1 tablespoon oregano
1 tablespoon salt
2 tablespoons olive oil
1/4 cup shredded cheddar cheese
3 tablespoons butter

Steps:

  • Preheat oven to 450 degrees.
  • Drizzle potatoes with olive oil and season with basil, oregano and salt. Toss to coat.
  • Place in baking dish and bake for 30 minutes. Toss every now and then to prevent sticking.
