ALMOND BARS

Almond Bars image

Almond Bars are tender, lightly sweetened shortbread-like bars that are so good, you'll find yourself doubling the recipe every single time you make them.

Provided by Mary Younkin

Categories     Dessert

Time 40m

Number Of Ingredients 12

1 cup sugar
1/2 cup butter, room temperature
1 egg, room temperature
1/2 teaspoon almond extract
1 3/4 cups all purpose flour *
2 teaspoon baking powder
1/4 teaspoon kosher salt
1 tbsp milk
1/2 cup sliced almonds
1 cup powdered sugar
1/4 tsp almond extract
1-2 tbsp milk

Steps:

  • Preheat the oven to 325 degrees. Sift together the flour, baking powder and salt and set aside. Cream together the butter and the sugar. Add the egg and the almond extract and then mix until light and fluffy. Slowly add the flour mixture to the butter mixture. Mix until combined.
  • Press the dough into the bottom of a well-greased 9x13 pan. Press with your fingers or a pastry roller to smooth the top of the dough. Using a pastry brush, brush a tiny bit of milk across the top of the dough. Sprinkle with sliced almonds and very lightly press them into the top of the dough.
  • Bake for 18-20 min, or until just barely beginning to brown around the edges. Do not let the bars brown at all. Let cool in the pan for 5 minutes and then cut into bars. If they are too soft to cut, let them cool for a few more minutes. Carefully transfer the bars to a wire rack to cool completely before icing.
  • To make the icing: Add just a tiny bit of milk at a time to the powdered sugar. If the consistency is too thick, it won't drizzle nicely over the bars. If it is too thin, the icing will just melt into the bars. If you are unsure, test a bit of it on the edge of one bar before drizzling the icing over the entire batch.

AWARD WINNING ALMOND DESSERT BARS

Award Winning Almond Dessert Bars image

These unbelievably delicious almond dessert bars are so good, they won a 1st place at a local baking contest. The baker of these bars was kind enough to share the recipe with us.

Provided by Chew Out Loud, adapted from friend Jim Schmidt

Categories     Dessert

Number Of Ingredients 12

1 cup salted butter (softened to room temp)
1/2 cup powdered sugar
2 cups all purpose flour
2 large eggs (room temp)
1 8oz package regular cream cheese, fully softened
1/3 cup granulated sugar
1 tsp pure almond extract
1 cup powdered sugar
1/4 cup salted butter (softened to room temp)
1 1/2 TB milk (I used whole milk)
1 tsp pure almond extract
Garnish: Almond slices or slivers

Steps:

  • Preheat oven to 350F with rack on lower middle position. Grease a 9x13 pan and set aside.
  • Make the Crust: In a large bowl, combine the butter and powdered sugar; using electric (or stand) mixer fitted with paddle attachment, mix together on medium high speed until light and fluffy, 3-4min. Gently add flour and mix on low speed just until combined. Mixture will be crumbly, so use hands to form a dough ball. Press evenly into prepared glass pan to form bottom crust (I use bottom of a flat glass cup to press down evenly.) Bake 18 minutes or until lightly browned and set. Remove from oven, but leave oven on.
  • While the crust is baking, make Filling: In a large bowl, combine eggs, very-soft cream cheese, and sugar. Whisk together until creamy and no lumps remain (it really helps if your cream cheese is quite soft to start with.) Add almond extract and mix to combine. Evenly pour the filling over crust, using rubber spatula to scrape all filling. Bake 15-20 min or until set. Let dessert cool completely on wire rack.
  • Frost the Bars: In a bowl, combine all frosting ingredients. Whisk until smooth and no more lumps. Evenly frost over cooled dessert bars (be sure bars have cooled completely before frosting.) Cover, chill, and serve with almond slices on top.

Almond squares are delectable and addictive desserts that are perfect for any occasion. This dessert comprises of a rich, buttery crust that is not too sweet and a soft, chewy almond-based filling that adds an appealing texture and taste to the dessert. Almond squares have been around for decades, but still remain one of the most popular and well-loved desserts in the world.

The Origin of Almond Squares

The exact origin of almond squares is uncertain, but it is believed to have emerged in Europe, particularly in France and Italy. The early versions of this dessert were more of a pastry than a square, and they were meant to be eaten with tea or coffee. It wasn't until the 1920s and 1930s that the first almond square recipe was published in American cooking magazines.

Ingredients Used to Make Almond Squares

There are a few common ingredients used to make almond squares. These include flour, sugar, butter, eggs, vanilla and of course, almond flour. The flour, sugar and butter are used to make the crust while the eggs, vanilla and almond flour are used to create the filling. Some recipes will include additional ingredients such as lemon zest, raisins or raspberry jam, which adds a unique and flavorful twist to this classic dessert.

Tips for Making Perfect Almond Squares

Making almond squares requires some level of skill and attention to detail. Here are some tips to ensure you make the perfect almond squares every time:
1. Use High-Quality Ingredients
The quality of your ingredients plays a critical role in the final taste and texture of your almond squares. Always use fresh, high-quality ingredients.
2. Be Precise When Measuring Ingredients
To get the perfect texture and consistency, it is important to measure all ingredients carefully. Use measuring cups and spoons to ensure precise measurements.
3. Chill the Crust
Before pouring the filling, it is important to chill the crust in the refrigerator to prevent it from puffing up and losing its shape when baking.
4. Be Patient When Cooling the Almond Squares
Almond squares are best when cooled to room temperature before serving. This allows the filling to set and gives the dessert its signature texture and flavor.

Variations of Almond Squares

There are many variations to the classic almond square recipe. The most popular variation involves adding a layer of raspberry jam between the crust and filling, which adds a sweet and tangy flavor. Another popular variation is the addition of coconut and chocolate chips, which gives the dessert a unique twist.

Conclusion

Almond squares are a timeless dessert that has been enjoyed for generations. They are easy to make, incredibly delicious and perfect for any occasion. With the right ingredients and attention to detail, anyone can make this mouth-watering dessert.
Almond squares are a delicious dessert that makes use of almonds as the main ingredient. These squares are perfect for those who have a sweet tooth and love the nutty taste of almonds. While making almond squares, there are certain tips that you should keep in mind to ensure that your dessert turns out perfect. In this article, we will discuss some valuable tips that will help you when making almond squares. 1. Use fresh almonds The first tip when making almond squares is to use fresh almonds. Almonds that have been sitting in your pantry for a while may have lost their freshness and could affect the taste of your dessert. It is recommended to use raw almonds that have a sweet and nutty taste. You can roast the almonds yourself, or you can buy roasted almonds from the store. It is important to note that roasted almonds have a different texture and taste than raw almonds. 2. Use the right quantity of almonds The second tip when making almond squares is to use the right quantity of almonds. Almonds are the main ingredient in this dessert, so it is important to use the correct quantity. Using too few almonds will result in a dessert that lacks flavor, while using too many almonds will make the dessert too dense and heavy. 3. Grind the almonds properly Grinding the almonds properly is essential when making almond squares. It is important to grind the almonds until they are finely ground but not to a paste. If you grind the almonds too much, they will turn into almond butter, which will affect the texture of the dessert. It is recommended to use a food processor or a blender to grind the almonds. 4. Use the right amount of sugar The amount of sugar you use in your almond squares will affect the sweetness of your dessert. It is important to use the right amount of sugar to balance the flavor of the almonds. Using too little sugar will result in a dessert that is too bland, while using too much sugar will make the dessert too sweet. 5. Use the right type of flour The type of flour you use in your almond squares will affect the texture of your dessert. It is recommended to use all-purpose flour or almond flour. Using almond flour will give your dessert a richer and nuttier taste. However, if you do not have almond flour, using all-purpose flour will still give you a delicious dessert. 6. Use the right baking pan Using the right baking pan when making almond squares is important. It is recommended to use a square or rectangular baking pan that is at least 8x8 inches or 9x9 inches. Using a baking pan that is too small will result in a dessert that is too thick, while using a baking pan that is too big will result in a dessert that is too thin. 7. Use the right amount of butter Butter is an important ingredient when making almond squares. It adds flavor and helps bind the ingredients together. It is important to use the right amount of butter to ensure that your dessert is not too dry or too greasy. Using too little butter will result in a dessert that is dry and crumbly, while using too much butter will make the dessert too greasy. 8. Use the right temperature The temperature of your oven is important when making almond squares. It is recommended to preheat your oven to 350°F (175°C) before baking your dessert. Baking your dessert at a lower temperature will result in a dessert that is not cooked evenly, while baking your dessert at a higher temperature will result in a dessert that is overcooked on the outside and undercooked on the inside. 9. Let the dessert cool down Letting your almond squares cool down before cutting them is important. Cutting your dessert while it is still hot will result in a dessert that is too crumbly and falls apart easily. It is recommended to let your dessert cool down for at least 15-20 minutes before cutting it into squares. 10. Store the dessert properly Storing your almond squares properly is important to keep them fresh and delicious. You can store your dessert in an airtight container at room temperature for up to four days. If you want to store your dessert for longer, you can freeze it for up to three months. However, it is recommended to wrap your dessert tightly in plastic wrap and then store it in an airtight container before freezing. Conclusion In conclusion, making almond squares is easy, but there are certain tips that you should keep in mind to ensure that your dessert turns out perfect. Using fresh almonds, grinding them properly, using the right amount of sugar and butter, using the right type of flour, and baking your dessert at the right temperature are all important factors that you should consider. Letting your dessert cool down before cutting it and storing it properly will also help you to keep your almond squares fresh and delicious for longer.
