ALMOND SHORTBREADS

Almond Shortbreads image

The word "short" in the recipe title is a promise of melt-in-your mouth tenderness. That's the butter doing its job.

Provided by Food Network Kitchen

Categories     dessert

Time 1h45m

Yield 18 wedges

Number Of Ingredients 8

1/2 cup raw almonds with skins, plus about 18 whole almonds for decorating
2/3 cup sugar, plus more for top
14 tablespoons unsalted butter (7 ounces, 1 3/4 sticks), softened, cut into pieces
2 teaspoons pure vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon fine salt
1 1/2 cups all-purpose flour
1 large egg white, beaten

Steps:

  • Preheat oven to 325 degrees F. Blend and pulse the 1/2 cup nuts in a food processor with the sugar until mixture resembles coarse sand. (If there are a couple small chunks of nuts that is fine.) Add the butter, vanilla and almond extracts, and the salt, and pulse until creamy. Add the flour and continue to pulse to make a soft dough.
  • Turn the dough out into a 9-inch tart pan and spread it out evenly with an off-set spatula. Dip the spatula in a little warm water to help smooth and even the surface of the shortbread. Cover and freeze until firm, about 20 minutes.
  • Put the tart pan on a baking sheet and dock (prick) the dough all over with a fork. Generously sprinkle the top of the shortbread with sugar. Toss the remaining whole almonds in the egg white; evenly arrange and press the nuts into the dough around the edge of the pan. Bake until golden brown and set, about 1 hour and 10 minutes.
  • Cool the short bread in the pan on a rack for 10 minutes. Carefully remove the tart ring and cut the shortbread with a sharp knife into wedges, each with a nut. Cool shortbreads on a rack completely. (Alternatively present the shortbread as 1 large cookie. Cool the shortbread in the pan completely and remove the tart ring. Cut the shortbread into wedges as desired.) Serve. Store in a tightly sealed container for up to 5 days.

Almond Shortbread: An

Almond shortbread is a deliciously buttery and crumbly treat perfect for any occasion. It is a type of shortbread that incorporates ground almonds into its dough, providing a nutty flavor and textured mouthfeel. Almond shortbread is a wonderful accompaniment to tea or coffee, or an excellent foundation for other desserts like tarts, pies, and crumbles.

The Ingredients

To make almond shortbread, you will need the following ingredients:
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely ground almonds or almond flour
Unsalted Butter
It is important to use unsalted butter in this recipe to have better control over the salt level in your dough. Using salted butter may result in an overly salty shortbread.
Granulated Sugar
Granulated sugar is essential in providing sweetness to the shortbread. Make sure to use fresh sugar to avoid any clumping in the dough.
Salt
Salt is added to balance out the sweetness in the shortbread dough. Use a fine-grained salt to ensure that it incorporates uniformly with the other ingredients.
Vanilla Extract
Vanilla extract helps to infuse flavor into the dough. For a more potent flavor, you can use vanilla bean paste or scrap out the inside of a fresh vanilla bean.
All-Purpose Flour
All-purpose flour is used to bind the dough together. Make sure to measure the flour accurately to avoid a dry or crumbly shortbread.
Ground Almonds
Ground almonds or almond flour gives the shortbread its distinct nutty flavor and texture. Use freshly ground almonds or almond flour for optimal flavor.

The Method

Here is a step-by-step method on how to make almond shortbread:
  1. 1. In a large mixing bowl, cream together the butter, sugar, salt, and vanilla extract until light and fluffy.
  2. 2. Add the flour and almond flour into the butter mixture, making sure to mix slowly and thoroughly to avoid overworking the dough.
  3. 3. The mixture should come together into a smooth dough. Flatten the dough into a disk and wrap it in plastic wrap. Refrigerate for at least 30 minutes or until firm.
  4. 4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. 5. On a floured surface, roll the chilled dough to your desired thickness. Use cookie cutters or a sharp knife to cut out your desired shapes and place them on the prepared baking sheet.
  6. 6. Bake for 12-15 minutes, or until golden brown around the edges.
  7. 7. Allow the shortbread to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. 8. Enjoy your delicious almond shortbread alone or as an accompaniment to your favorite hot beverage or dessert.

Variations

There are many ways to modify this recipe to suit your preferences. Here are a few variations you can try:
Chocolate Almond Shortbread
Add 1/2 cup of cocoa powder to the dough to make it chocolatey. You can also add chocolate chips for more texture and flavor.
Lemon Almond Shortbread
Add the zest of 2 lemons to the dough for a zesty, citrusy twist.
Cinnamon Almond Shortbread
Add 1/2 teaspoon of ground cinnamon to the dough for a cozy, warm flavor.

Almond shortbread is a buttery and crumbly cookie that is perfect for any occasion. It is a simple yet tasty recipe that can be enjoyed with a cup of tea or coffee. Shortbread cookies have a nice texture as they are made with a combination of flour, sugar, and butter. In this article, we will share some valuable tips when making almond shortbread cookies.

Ingredients

The key to making good almond shortbread is to have fresh, high-quality ingredients. You will need: - 1 1/2 cups all-purpose flour - 1/2 cup almond flour - 1/2 cup granulated sugar - 1/2 teaspoon salt - 1 cup butter (unsalted) - 1 teaspoon pure vanilla extract

Tip 1: Use unsalted butter

It is important to use unsalted butter when making almond shortbread. This is because salted butter can alter the flavor of the cookies. Also, if you use salted butter, you will need to adjust the amount of salt in the recipe. Using unsalted butter will give you control over the amount of salt in the recipe.

Tip 2: Preparing the Dough

When making the dough for almond shortbread, you should use a food processor to combine the ingredients. This will ensure that the ingredients are evenly distributed, and you won't end up with lumps of butter in the dough. It is also important to ensure that the butter is at room temperature before you begin. Cold butter will not blend well with the other ingredients, and the dough will not come together properly.
Step-by-step instructions to prepare the dough:
1. In a food processor, combine the all-purpose flour, almond flour, granulated sugar, and salt. 2. Add the room temperature butter and the vanilla extract to the food processor and process until the dough comes together. 3. Take the dough out of the food processor and shape it into a disk or log. 4. Wrap the dough in plastic wrap and refrigerate for at least an hour, or until the dough is firm.

Tip 3: Rolling out the Dough

When rolling out the almond shortbread dough, it is important to use flour to prevent the dough from sticking to the surface or the rolling pin. However, you should use the minimal amount of flour necessary to prevent the dough from sticking. Too much flour can alter the texture of the cookies.
Step-by-step instructions to roll out the dough:
1. Flour the surface and the rolling pin lightly. 2. Take the dough out of the refrigerator and place it on the floured surface. 3. Roll out the dough to the desired thickness, which is usually around 1/4 inch. 4. Use cookie cutters to cut out the cookies in the desired shape.

Tip 4: Baking the Cookies

When baking the almond shortbread cookies, it is important to keep an eye on them to prevent them from over-browning. Also, the baking time may vary depending on the thickness of the cookies. Thinner cookies will bake faster than thicker ones. You should bake the cookies until they are lightly golden brown around the edges.
Step-by-step instructions to bake the cookies:
1. Preheat your oven to 350°F. 2. Place the cut-out cookies on a baking sheet lined with parchment paper. 3. Bake the cookies for 10-15 minutes or until lightly golden brown around the edges. 4. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tip 5: Storage

To ensure that the almond shortbread cookies stay fresh, store them in an airtight container at room temperature. They will keep well for up to a week. You can also freeze the cookies for up to 3 months.
Conclusion
Making almond shortbread cookies is a simple and enjoyable process. By using fresh, high-quality ingredients and following the tips shared in this article, you can ensure that your cookies come out delicious and crumbly. Happy baking!
