1 tablespoon all-purpose flour
1/2 cup sugar

FLORENTINES - CHOCOLATE ALMOND LACE COOKIES

Florentines - Chocolate Almond Lace Cookies image

Most people are in awe of these light, lacy cookies that you can get at the bakery, but assume are too difficult and delicate to make at home. Nonsense. These are the easiest thing to make and you can opt to take the partially cooled cookies and wrap them around the handle of a wooden spoon to create a tube. The tubes can be enjoyed as is, dipped partially in melted chocolate or filled with a whipped cream mixture to make a funky little cannoli confection.

ALMOND LACE COOKIES

ALMOND LACE COOKIES image

Categories     Cookies

Number Of Ingredients 11

1 3/4 cups sliced, blanched almonds (about 5 ounces)
3 tablespoons all-purpose flour
Finely grated zest of 1 orange (about 2 tablespoons)
1/4 teaspoon fine salt
3/4 cup sugar
2 tablespoons heavy cream
2 tablespoons light corn syrup
5 tablespoons unsalted butter
1/2 teaspoon pure vanilla extract
Chocolate Topping, optional:
2 to 4 ounces semisweet chocolate, chopped

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper. Pulse the almonds in a food processor until finely chopped, but not pasty. Stir together the nuts, flour, zest and salt in a large bowl. Put the sugar, cream, corn syrup and butter in a small saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a rolling boil and sugar is completely dissolved. Continue to boil for 1 minute. Remove from heat and stir in the vanilla, then pour mixture into almond mixture and stir just to combine. Set aside until cool enough to handle, 30 minutes. Scoop rounded teaspoons (for 3-inch cookies) or rounded tablespoons (for 6-inch cookies) of batter and roll into balls. Place on prepared baking sheet, leaving about 3 to 4 inches between each cookie since they spread. Bake 1 pan at a time, until the cookies are thin and an even golden brown color throughout, rotating pans halfway through baking time, about 10 to 11 minutes. Cool on baking sheet for 5 minutes, then transfer to racks to cool. Repeat with remaining batter. Serve.

They are easy to make and are perfect for any occasion, whether it's a tea party or a casual get together. In this article, we will explore the history and popularity of almond lace cookies, the different variations of the recipe, and some of the health benefits of almonds.

The History and Popularity of Almond Lace Cookies:

Almond lace cookies have been around for hundreds of years, with their origins tracing back to Europe. They were a popular treat during the Victorian era, and were often served with tea or coffee. Over time, the recipe has evolved and changed, and now almond lace cookies are enjoyed all over the world.

Ingredients:

The basic ingredients needed for almond lace cookies include almonds, flour, sugar, butter, eggs, and vanilla extract. Some variations of the recipe may include additional ingredients, such as chocolate chips or dried fruit.
Almonds:
Almonds are a key ingredient in almond lace cookies, providing a delicious nutty flavor and a crunchy texture. Almonds are also packed with nutrition, containing fiber, protein, healthy fats, and vitamins and minerals like vitamin E and magnesium.
Flour:
Flour is used to give the cookies structure and to help keep them together. The type of flour used can vary, with some recipes calling for all-purpose flour and others using almond flour or even oat flour for a gluten-free option.
Sugar:
Sugar is used to sweeten the cookies and to help them caramelize and become crispy. Some recipes may call for brown sugar instead of white sugar, which can add a deeper flavor to the cookies.
Butter:
Butter is used to add richness and flavor to the cookies, as well as to help them spread out and become thin and crispy.
Eggs:
Eggs are used as a binding agent and to help the cookies hold their shape.
Vanilla extract:
Vanilla extract is used to add a sweet and fragrant flavor to the cookies.

How to Make Almond Lace Cookies:

To make almond lace cookies, first preheat your oven to 350F. Then, cream together the butter and sugar until light and fluffy. Beat in the eggs and vanilla extract. In a separate bowl, whisk together the flour and finely chopped almonds. Gradually add the dry ingredients to the wet mixture and mix until a dough forms. Chill the dough for at least 30 minutes. Once chilled, use a teaspoon to scoop small balls of dough onto a parchment-lined baking sheet. Flatten the balls with the back of a spoon or your fingers, leaving room for the cookies to spread. Bake for 10-12 minutes, or until the edges are golden brown and the cookies are crispy. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Variations:

There are many variations of the almond lace cookie recipe. Some common variations include:
Chocolate Almond Lace Cookies:
Add a cup of chocolate chips to the dough for a delicious chocolatey twist on the classic recipe.
Cranberry Almond Lace Cookies:
Add a cup of dried cranberries to the dough for a tart and sweet flavor.
Lemon Almond Lace Cookies:
Add 2 tablespoons of lemon zest to the dough, as well as a tablespoon of lemon juice, for a bright and citrusy flavor.
Gluten-Free Almond Lace Cookies:
Substitute almond flour or oat flour for the all-purpose flour for a gluten-free option.

Health Benefits of Almonds:

Almonds are incredibly nutritious and offer many health benefits. They are low in carbs and high in fiber, making them a great snack for weight management. They are also rich in healthy fats, which can help lower cholesterol levels and reduce the risk of heart disease. Additionally, almonds are a good source of vitamin E, which is an antioxidant that helps protect cells from damage.

Conclusion:

Almond lace cookies are a delicious and simple treat that can be enjoyed by anyone. With their crispy texture and delicate flavor, they are sure to impress your guests and satisfy your sweet tooth. Whether you prefer the classic recipe or one of the many variations, almonds are a nutritious and tasty ingredient that will make any cookie recipe better.
Almond lace cookies are a delicious and delicate treat that can be enjoyed as a dessert or as a snack with coffee or tea. These cookies are thin and crispy, with a sweet and nutty flavor that makes them perfect for any occasion. Making almond lace cookies can be challenging, but with a few tips and tricks, you can create these delicate treats like a pro. Here are some valuable tips to consider when making almond lace cookies recipes. Choose the Right Ingredients The first step in making almond lace cookies is to choose the right ingredients. The two main ingredients in these cookies are almonds and sugar. Make sure to use fresh, high-quality almonds that are blanched and finely chopped. You can use either regular white sugar or brown sugar, but using brown sugar will give your cookies a deeper flavor and a darker color. Use Parchment Paper Using parchment paper is key when making almond lace cookies. Parchment paper will prevent the cookies from sticking to the baking sheet and make it easier to remove them once they are done. Make sure to cut the parchment paper to fit the size of your baking sheet and to spread the cookie batter into thin, even circles. Pay Attention to the Temperature Pay attention to the temperature of your oven when baking almond lace cookies. These cookies require a low and slow baking process, meaning that they should be baked at a low temperature for a longer period of time. Set your oven temperature to 300 F and bake the cookies for 12-15 minutes or until they are golden brown. Check the cookies frequently to ensure that they do not burn. Cool the Cookies Properly Properly cooling the cookies is crucial in making almond lace cookies recipes. Once the cookies are done baking, remove them from the oven and let them sit on the baking sheet for a few minutes. This will allow them to cool slightly and become firm enough to remove from the parchment paper. Once the cookies are cool enough to handle, gently lift them from the parchment paper and transfer them to a wire rack to cool completely. Do not stack the cookies on top of each other, as they can stick together and lose their crispy texture. Experiment with Flavors Almond lace cookies are versatile and can be customized to suit your taste. You can experiment with different flavors such as cinnamon, vanilla, and lemon zest to add a unique twist to your cookies. You can also add chocolate chips or chunks for a decadent treat. Try different combinations and find your favorite flavor. Store the Cookies Properly Storing almond lace cookies can be tricky, as they are delicate and can lose their crispiness quickly. To keep them fresh, store the cookies in an airtight container at room temperature. You can also store them in the freezer for up to a month. To thaw frozen cookies, simply let them sit at room temperature for a few hours before serving. Use a Cookie Cutter If you want to give your almond lace cookies a uniform shape, use a cookie cutter. You can use a round or a square cookie cutter to create even circles or squares. Simply spoon the cookie batter onto the parchment paper and spread it into the desired shape. Once the cookies are done baking, use the cookie cutter to cut out the shapes while they are still warm. This will give you perfectly shaped cookies that look great and taste even better. Decorate with Nuts or Chocolate If you want to add some extra flair to your almond lace cookies, try decorating them with nuts or chocolate. You can sprinkle chopped almonds on top of the cookies before baking, or drizzle them with melted chocolate once they are done baking. This will give your cookies a beautiful and delicious finish that will impress your guests. Avoid Over-mixing When making almond lace cookies recipes, it is important to avoid over-mixing the batter. Over-mixing can cause the cookies to become tough and chewy, so make sure to mix the ingredients until they are just combined. You want the batter to be slightly lumpy and not completely smooth. Have Patience Finally, when making almond lace cookies, you need to have patience. These cookies require a delicate touch and a slow baking process, so take your time and don't rush the process. Be patient when spreading the batter onto the parchment paper, and don't try to make the cookies too thin. Take your time when checking the cookies for doneness, and don't open the oven door too often. With patience and practice, you will be able to create perfect almond lace cookies every time. Conclusion Making almond lace cookies recipes can be challenging, but with these valuable tips, you will be able to create delicious and delicate treats that everyone will love. Remember to choose the right ingredients, use parchment paper, pay attention to the temperature, cool the cookies properly, experiment with flavors, store the cookies properly, use a cookie cutter, decorate with nuts or chocolate, avoid over-mixing, and have patience. With these tips in mind, you can create almond lace cookies that look great and taste even better. Happy baking!
