Apricot, Almond & Pineapple Sour Cream Coffee Cake image

I created this pineapple sour cream coffee cake recipe for a contest at the Los Angeles County Fair in the 1980s. My kids were very proud of me when my name was called for first place. The cake would be the perfect partner for morning coffee or it'd be a delightful dessert with a scoop of ice cream. -Marina Castle-Kelley, Canyon Country, California

Almond dream coffee cake is a divine dessert that combines the goodness of almond and the richness of coffee. This cake is loved by all ages and can be the perfect treat for any occasion. However, baking this cake can be a little tricky, especially if you are new to the world of baking. In this article, we are going to discuss some valuable tips that will help you make the perfect almond dream coffee cake.

Tip 1: Measure Accurately

One of the most crucial steps in baking any cake is measuring the ingredients accurately. The measurements need to be precise; otherwise, the cake may turn out to be dry or too moist. Make sure you weigh or measure your ingredients before adding them to the batter.
Tips for measuring ingredients:
  • Use a kitchen scale to weigh the dry ingredients.
  • Use measuring cups spoons to measure liquids.
  • Fluff the flour before measuring it to avoid packing it down.
  • Level off the measuring cup of flour with a straight edge.

Tip 2: Prepare Your Baking Pan

The next step after measuring the ingredients is to prepare the baking pan. Make sure you clean and grease the pan with baking spray. You can also line the bottom with parchment paper to prevent the cake from sticking to the pan.
Tips for preparing the baking pan:
  • Grease the pan with baking spray evenly.
  • Use parchment paper to line the bottom of the baking pan.
  • Dust the pan lightly with flour and tap out the excess.

Tip 3: Use High-Quality Ingredients

Whenever you are baking a cake, the quality of the ingredients you use is critical. Use high-quality ingredients to create a delicious and flavorful cake. When it comes to almond dream coffee cake recipes, make sure you use freshly brewed coffee and almond extract to enhance the flavor.
Tips for choosing quality ingredients:
  • Choose high-quality dairy products like milk, butter, and cream cheese.
  • Use fresh eggs for better results.
  • Choose high-quality coffee beans to brew fresh coffee for the recipe.
  • Use pure vanilla extract.
  • Use natural almond extract.

Tip 4: Mix the Batter Correctly

Mixing the batter correctly is crucial for the perfect texture of the cake. Overmixing or undermixing the batter can result in a dry or tough cake. When you combine the wet and dry ingredients, mix them until just combined.
Tips for mixing the batter:
  • Use a stand mixer or a hand mixer for efficient mixing.
  • Start with beating the butter and sugar together until light and fluffy.
  • Add the eggs, one at a time, and mix until blended.
  • Alternate adding the dry and wet ingredients in small batches, starting with the dry ingredients.
  • Mix until just combined to avoid overmixing.

Tip 5: Add Toppings and Add-ins

The almond dream coffee cake recipe leaves plenty of room for creativity. You can add toppings and add-ins to enhance the texture and flavor of the cake. You can add chopped nuts, chocolate chips, dried fruits or even a crumb topping.
Tips for adding toppings and add-ins:
  • Reserve some almond slices to sprinkle on top of the cake before baking for a beautiful presentation.
  • Add chopped nuts like walnut or pecan to the cake batter for added crunch.
  • Add chocolate chips, dried fruits or raisins to the batter for added flavor and texture.
  • Add a crumb topping to the cake before baking by mixing butter, sugar, and flour in a separate bowl.

Tip 6: Bake the Cake Perfectly

Baking the almond dream coffee cake is the last step. You need to ensure you bake the cake perfectly to get the best result. Do not overbake the cake, or it will be dry, and do not underbake the cake or it will not set correctly.
Tips for baking the cake:
  • Preheat the oven to the right temperature as per the recipe.
  • Do not open the oven frequently while the cake is baking.
  • Test the cake with a toothpick or cake tester about five minutes before the recipe's suggested baking time to avoid overbaking the cake.
  • Once done, remove the cake from the oven and let it cool for about 10-15 minutes before removing it from the baking pan.
