4 medium onions, thinly sliced
4 tablespoons extra virgin olive oil, plus additional
extra virgin olive oil, to drizzle on top of the fish
4 tablespoons honey
4 tablespoons balsamic vinegar
1 pinch salt
4 -6 ounces tilapia fillets
1/2 cup toasted almond, ground
2 tablespoons lemon zest
1 teaspoon garlic powder (1/4 for each fillet)
1 teaspoon lemon pepper (1/4 for each fillet)
1 teaspoon salt (1/4 for each fillet)
4 teaspoons fresh lemon juice
4 tablespoons chopped fresh basil (to garnish) (optional) or 4 tablespoons parsley (to garnish) (optional)

  • 1. Preheat oven to 475°F.
  • 2. Cut 4 pieces 7 inch pieces of Reynolds Wrap Foil. Coat the bottom of each piece with 1/2 tbsp olive oil.
  • 2. In a large bowl, combine sliced onions with balsamic vinegar, honey, remaining olive oil and a pinch of salt, mixing well so the onions are well coated.
  • 3. In a medium bowl, combine ground almonds with lemon zest and a pinch of salt.

2 tilapia fillets
1 egg
1/4 tsp garlic powder
1/4 tsp lemon pepper
1/4 tsp parsley flakes
1 Tbsp flour
1/4 c grated Parmesan cheese
1/4 c almonds, finely chopped
1-1/2 Tbsp butter
2 lemon wedges

Steps:

  • 1. In a shallow dish beat egg and add spices, then set aside.
  • 2. In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.
  • 3. Lightly dust each fillet with flour on both sides.
  • 4. Melt butter in a non-stick skillet over medium-high heat.
  • 5. Dip floured fillets into egg mixture.

  • 1. Preheat oven to 425 F. From 1 lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice; cut second lemon into wedges. In cup, mix lemon peel and 1 tablespoon juice, 1 tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. 2. Spray 13" by 9" glass baking dish with nonstick spray; place tilapia, dark side down, in dish. Drizzle tilapia with lemon mixture; top with almonds, pressing them on. Bake 15 minutes or until tilapia turns opaque. 3. Meanwhile, in 12-inch skillet, heat remaining 1 tablespoon oil on medium-high 1 minute.
