ALMOND-CRUSTED PORK CHOPS WITH APPLES

Almond-Crusted Pork Chops with Apples image

My mom always cooked this dish in a heavy cast-iron skillet and every time she heated the pan, it had a fragrance of pure food history. In this recipe, take care to grind the almonds fine enough so they adhere as a crust.

Time 55m

Yield 4 servings

Number Of Ingredients 16

3/4 cup whole almonds, toasted
3/4 cup panko breadcrumbs
1 teaspoon finely grated orange zest (reserve the orange)
4 boneless pork chops (each about 8 ounces and 3/4-inch thick)
Kosher salt and freshly ground black pepper
5 tablespoons Dijon mustard
2 large whole eggs
Extra-virgin olive oil, enough for a shallow frying pan
2 tablespoons (1/4 stick) unsalted butter
2 large shallots, minced
2 Golden Delicious apples, peeled, sliced 1/4-inch thick, then diced
1 teaspoon (1 sprig) chopped fresh rosemary
Kosher salt and freshly ground black pepper
1 teaspoon (packed) light brown sugar
Juice of 1 orange (about 1/3 cup)
1/2 cup chicken stock

Steps:

  • Preheat the oven to 200 degrees F.
  • To make the pork chops: In a food processor, pulse the almonds into crumbs. Mix the breadcrumbs and almonds in a shallow dish and stir in the orange zest. Season the mixture and the pork chops with salt and pepper. In another dish, mix the mustard and eggs together. Brush the chops with the mustard mixture and dredge all over in the crumbs.
  • Heat a large ovenproof skillet over medium heat and add about 1/2 inch of the oil. When the oil is hot, brown the chops on both sides, about 3 to 4 minutes per side. Remove them to a baking sheet fitted with a wire rack and cook in the oven until they reach an internal temperature of 145 degrees F.
  • To make the apples: Pour the fat out of the skillet, then wipe the skillet and set over medium heat. Melt the butter. Add the shallots, apples and rosemary, and toss until the apples begin to brown, about 3 minutes. Add the sugar, orange juice, stock, and some salt and pepper, and bring to a simmer. Cook just until the sauce comes together, about 15 minutes. Remove the pork chops from the oven and serve with the apples.

PRETZEL CRUSTED PORK CHOPS WITH ORANGE MUSTARD SAUCE

Pretzel Crusted Pork Chops With Orange Mustard Sauce image

This recipe was adapted from one that I found in Bon Apetit magazine. If you buy candied orange peel instead of making your own it will go a lot faster. Candied orange peel is really not hard to make; just more time consuming. This recipe would be great for entertaining because most of the components can be made beforehand.

ALMOND-CRUSTED CHOPS WITH CIDER SAUCE

ALMOND-CRUSTED CHOPS WITH CIDER SAUCE image

This recipe originally says to cook the pork chops 3-4 minutes on each side. My personal preference is to cook them longer, because I think cooking them in so short a time makes them tough. Just my opinion. Feel free to experiment with the cooking time. Recipe & photo: tasteofhome.com/simple 01-11-15

Almond crusted orange mustard pork chops recipes are a perfect dish for any dinner or special occasion. This dish is easy to make and can be a crowd-pleaser. However, before you start preparing this recipe, there are some valuable tips that you should consider. These tips will help you create a delicious and flavorful dish that will satisfy everyone's taste buds.

Tip 1 - Choosing the Right Cut of Pork

When making almond crusted orange mustard pork chops recipes, you need to choose the right cut of pork. A good cut will make all the difference in how your dish will turn out. The best cut of pork for this recipe is the bone-in pork chops. Bone-in pork chops provide flavor and moisture to the meat during the cooking process. You can also use a boneless pork chop, but it may lack the tenderness and flavor that a bone-in chop provides.

Tip 2 - Choosing the Right Almonds

To make the crust for the pork chops, you need to choose the right almonds. You can use any type of almonds, but using sliced or slivered almonds will give you the best results. These types of almonds will provide a nice crunchy texture to the pork, without being too overpowering. It's also important to choose almonds that are fresh and unsalted. Salted almonds can make the pork chops too salty, and roasted almonds may not give you the texture you want.

Tip 3 - Toasting the Almonds

Toasting the almonds is an essential step in making almond crusted orange mustard pork chops recipes. Toasting almonds brings out the natural oils, intensifies the flavor, and gives them a crispy texture. To toast the almonds, spread them in a single layer on a baking sheet and bake in the oven at 350°F for 8-10 minutes. Make sure to watch the almonds closely, as they can burn easily.

Tip 4 - Seasoning the Pork Chops

Before coating the pork chops with the almond crust, it's important to season them properly. Use a generous amount of salt and pepper on both sides of the pork chops. You can also use any other seasoning of your choice, such as garlic powder, onion powder, or paprika. Seasoning the pork chops will enhance the overall flavor of the dish.

Tip 5 - Preparing the Orange Mustard Sauce

The orange mustard sauce is what gives this dish its unique flavor. To prepare the sauce, mix orange juice, Dijon mustard, honey, soy sauce, and cornstarch in a saucepan over medium heat. Whisk the ingredients together until the sauce thickens and becomes glossy. Once the sauce is ready, pour it over the cooked pork chops.

Tip 6 - Cooking the Pork Chops

When cooking the pork chops, it's important to cook them at the right temperature and for the right amount of time. Preheat the oven to 400°F and cook the pork chops for 15-20 minutes or until the internal temperature reaches 145°F. Overcooking the pork chops can make them tough and dry, so make sure to monitor the temperature closely.
Conclusion
In conclusion, almond crusted orange mustard pork chops recipes are a delicious and easy-to-make dish that everyone will enjoy. However, by following these valuable tips, you can create a flavorful and tender dish that will be the star of the dinner table. Remember to choose the right cut of pork, toast the almonds, season the pork chops, and cook them at the right temperature to ensure the best results.
