1 tablespoon plus 1/2 cup butter, softened, divided
1/2 cup sugar
1 tablespoon light corn syrup
1 cup sliced almonds

Steps:

  • Line an 8-in. square pan with foil; butter the foil with 1/2 tablespoon butter. Set aside., Spread the sides of a heavy saucepan with 1/2 tablespoon butter. Add 1/2 cup of butter, sugar and corn syrup. Bring to a boil over medium-high heat, stirring constantly. Cook and stir until mixture is golden brown, about 3 minutes. Stir in almonds. Quickly pour into prepared pan. , Refrigerate until firm. Invert pan and remove foil. Break candy into pieces.

This is a yummy candy that I make each year to put in amongst (if that is a word) my cookies on the trays. It came from a Better Homes & Garden Candy Cookbook back in the '60s. It is one that is easy to make and comes out great every time. It is very tasty and has a great crunch if you are sure to bring it to the hard crack stage.

1 cup butter
1 1/3 cups granulated sugar
1 tablespoon light corn syrup
3 tablespoons water
1 cup coarsely chopped almonds (toasted)
4 (4 1/2 ounce) milk chocolate candy bars (melted)
1 cup finely chopped almonds (toasted)

Steps:

  • CANDY:.
  • In a large saucepan melt butter; add sugar, corn syrup, and water.
  • Cook stirring occasionally to hard-crack stage (300 degrees) on a candy thermometer--watch carefully after 280 degrees as it rises fast after this.
  • Quickly stir in the coarsely chopped almonds.
  • Spread in ungreased 9x13 pan.
  • Cool thoroughly and turn out onto waxed paper.
  • TOPPING:.
  • Melt the chocolate and spread half on top of the candy.
  • Sprinkle with half of the finely chopped almonds.
  • Cover with wax paper and invert.
  • Spread the other half of chocolate and sprinkle other half of nuts.
  • If necessary chill in refrigerator till chocolate is firm.
  • Crack in pieces.

1 cup sugar
1/2 cup water
1/4 teaspoon salt

8 ounces dark chocolate candy bars, chopped

1/4 cup dry roasted peanuts, chopped
3 tablespoons chocolate-covered coffee beans, halved

Steps:

  • Line a 13-in. x 9-in. pan with foil. Grease the foil with 1-1/2 teaspoons butter; set aside. In a heavy 3-qt. saucepan, melt remaining butter. Stir in the sugar, water and salt. Cook over medium heat until a candy thermometer reads 240° (soft-ball stage), stirring occasionally. , Stir in almonds. Cook until candy thermometer reads 300° (hard-crack stage), stirring occasionally. Remove from the heat; stir in baking soda until light and foamy. Pour into prepared pan. 2/3 cup blanched whole almonds
2/3 cup cake flour (not self-rising)
1 tablespoon unsalted butter, for pans
6 large eggs, separated
Pinch kosher salt
1 cup granulated sugar
2 teaspoons pure vanilla extract
1 cup blanched sliced almonds
6 tablespoons granulated sugar
1/2 cup granulated sugar
2 tablespoons amaretto or other almond-flavored liqueur, optional
1/2 teaspoon pure almond extract
4 pints vanilla ice cream, slightly softened
3/4 cup cold heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Cake:Preheat oven to 300 degrees with rack in center. Spread whole almonds in a single layer on a rimmed baking sheet; bake until golden, about 12 to 15 minutes. Transfer sheet to a wire rack; let cool completely.
  • Pulse whole almonds and cake flour in a food processor until finely ground, about 30 seconds.
  • Butter two 7-inch round cake pans. Line pans with parchment; butter parchment.
  • In the bowl of a mixer fitted with the whisk attachment, beat together egg whites and salt on medium speed until soft peaks form. Increase speed to high and gradually add 1/2 cup sugar, beating until stiff and glossy, about 4 minutes. Transfer to a bowl.
  • Clean mixer bowl and return to mixer fitted with the whisk attachment; beat together egg yolks and vanilla. With mixer on high speed, gradually add remaining 1/2 cup sugar, beating until pale and thick, about 5 minutes.
  • Fold egg-white mixture into egg-yolk mixture. In three additions, fold in almond mixture. Divide batter evenly between prepared pans, smoothing tops with an offset spatula.
  • Bake until a tester inserted in centers comes out clean, 18 to 20 minutes. Transfer pans to a wire rack; let cool completely. Turn out cakes and wrap in plastic until ready to use.
  • Almond Crunch:Increase oven temperature to 325 degrees. In a medium bowl, toss together sliced almonds, granulated sugar, and 2 tablespoons water. Spread almond mixture evenly on a parchment-lined baking sheet. Bake until golden, about 25 minutes. Transfer sheet to a wire rack; let cool completely.
  • Assembly:Bring granulated sugar and 1/3 cup water to a boil in a small saucepan over medium heat, stirring occasionally. When sugar has dissolved, remove from heat; add amaretto, if using, and almond extract. Let cool completely.
  • Using a serrated knife, split each cake horizontally into two equal layers.
  • Cut three 24-by-6-inch strips of parchment. Place strips on top of one another and use to line the sides of a 7-inch springform pan. Generously brush tops of cake layers with syrup. Place a cake layer in prepared pan.
  • In the chilled bowl of a mixer fitted with the paddle attachment, beat ice cream on medium-low speed until spreadable, about 2 minutes. Spread about 2 cups ice cream over first cake layer. Crumble 1/2 cup almond crunch over ice cream. Top with a second cake layer; transfer to freezer until firm, about 20 minutes. Repeat, spreading 2 cups ice cream and 1/2 cup almond crunch between each layer. Finish with a cake layer. Freeze 1 hour.
  • Just before serving, whisk cream and confectioners' sugar to medium peaks in a chilled bowl. Remove cake from freezer and release sides of pan. Transfer cake to a serving platter. Tuck parchment strips under perimeter of cake. Frost top and sides of cake with whipped cream; remove parchment strips. Garnish top with remaining almond crunch; serve immediately.

400g ripe cherries (pick the darkest cherries you can)
85g caster sugar , plus 2 tbsp
300ml tub whipping cream
2 tbsp Disaronno , or use ¼ tsp almond extract
2 tbsp icing sugar
500g pot ready-made vanilla custard
a little vegetable oil , for greasing
1 heaped tbsp toasted flaked almonds
almond biscotti, to serve

Steps:

  • Remove the stalks and stones from 300g cherries (some garlic crushers have a cherry pitter on the handle, but if not, simply use a knife), then roughly chop. Put into a medium pan, add 85g caster sugar, then cook very gently for 10 mins until the sugar melts. Turn up the heat a little, then simmer for 15 mins until softened and surrounded by a syrupy sauce. Cool completely.
  • Meanwhile, put the cream, icing sugar and Disaronno into a large bowl. Whip the cream until it just holds its shape. Fold in the custard, then churn in an ice-cream machine until very thick.
  • For the almond crunch, lightly oil a baking sheet. Put 2 tbsp caster sugar into a non-stick pan, then gently heat until the sugar melts. Swirl or stir the sugar a few times if it melts unevenly, then bubble for 30 secs or until the sugar turns to amber caramel. Stir in the nuts, then pour onto the sheet. Cool completely until brittle. Snap into chunks, then put into a food bag and crush with a rolling pin.
  • Spoon the soft ice cream into a freezer-proof container, then spoon over ribbons of the syrupy cherries and scatter with the crunchy nut caramel. Ripple through a few times with a knife. Freeze for at least 6 hrs, or ideally overnight. Serve with the whole cherries and almond biscotti.

175g slightly salted butter , softened, plus extra for greasing
85g clear honey (I used blossom honey), plus 4 tbsp for drizzling and extra to serve
85g caster sugar
85g ground almond
200g plain flour
1 tsp bicarbonate of soda
1 tsp baking powder
100ml natural yogurt
2 large eggs , one separated, plus 1 extra egg white
85g flaked almonds

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 900g/2lb loaf tin and line with a strip of baking parchment that overhangs each end - this will help you lift the cake out when it is cooked.
  • Put the butter, honey, caster sugar, ground almonds, flour, baking powder, bicarb and yogurt into a large mixing bowl. Put the egg whites into another small bowl. Put the yolk and remaining whole egg in with all the other ingredients.
  • Whisk the whites until stiff, then put your electric beater into the other bowl of ingredients and beat until just smooth. Stir in a third of the whites, then gently fold in the rest with a wooden spoon. Tip the mix into the prepared tin, scatter over the flaked almonds and bake for 55 mins on the middle-lower shelf of the oven until golden and a skewer inserted into the middle comes out clean.
  • Remove the cake from the oven. Quickly drizzle with 2 tbsp honey and scatter with a small pinch of fine salt. Put back in the oven for 5 mins more. Remove from the oven, drizzle with 2 more tbsp honey, then cool in the tin on a wire rack. Release stuck almonds from around the edge with a knife; then, using the parchment overhangs, carefully lift the cake from the tin. Eat in slices, drizzled with a little extra honey if you like.

40 saltine crackers
1 cup butter
1 cup brown sugar
1 (12 ounce) bag chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 400 degrees. Line a jelly roll pan or cookie sheet with aluminum foil. Spread saltine crackers over the pan (do not overlap). In a saucepan, melt butter. Add in brown sugar. Bring mixture to a rolling boil and boil for 3 minutes, stirring constantly. Pour on top of crackers, spread evenly. Put in oven for 5 minutes. Remove from oven and immediately pour chocolate chips evenly on top. Let chips stand for a few minutes until they are shiny and soft. With a spatula, spread chocolate to cover entire pan. Top with walnuts. Let cool, then refrigerate about 2 hours. Do not cut with a knife. Break into pieces and enjoy.

1 lb. butter
2 c. sugar
1 c. sliced almonds
1 large bag Nestles semi-sweet chocolate morsels

Steps:

  • Combine butter, sugar and 1/2 c. almonds in a heavy, large sauce pan. Heat slowly to boiling point. Boil gently until mixture reaches the hard-crack stage (305 degrees on a candy themometer) stirring constantly. Pour on to a large, buttered pan (a pizza pan is good.) Sprinkle with the chocolate bits and the remaining nuts. Spread the morsels gently to help the chocolate melt. Cool completely. Break or cut in to desired sized pieces. Store in an airtight container.

1/2 c whole blanched almonds, chopped
1 c butter
1/2 c sugar
3 Tbsp light corn syrup
3 Tbsp water
8 oz semisweet chocolate squares

Steps:

  • 1. Place chopped almonds on a cookie sheet; toast in 375 oven for 10 minutes, or until lightly golden.
  • 2. Combine butter, sugar, corn syrup and water in a medium-size heavy saucepan.
  • 3. Cook over medium heat, stirring constantly, to 300 degrees on candy thermometer (a teaspoonful of syrup will separate into brittle threads when dropped in cold water).
  • 4. Remove from heat; stir in 1 cup of the toasted almonds.
  • 5. Pour into a buttered 13x9x2 inch pan, spreading quickly and evenly; cool.
  • 6. Turn out onto wax paper.
  • 7. Melt chocolate squares in the top of a double boiler over hot water; remove from heat.
  • 8. Spread half the melted chocolate over top of candy; sprinkle with 1/4 cup nuts; let set for about 20 minutes; turn candy over and spread with remaining chocolate and sprinkle with remaining nuts.
  • 9. Let stand until set.
  • 10. Break into pieces.
  • 11. Makes l pound.

1/3 cup light corn syrup
1/4 cup water
1 cup butter, cut into pieces
2 cups blanched slivered almonds, lightly toasted and finely chopped
2 ounces unsweetened chocolate, chopped
2 ounces semisweet chocolate, chopped
1 teaspoon vegetable shortening

Steps:

  • Lightly grease 15-1/2 x 10 1/2-inch jelly-roll pan.
  • In heavy 2-quart saucepan, combine sugar, corn syrup, and water; cook over medium heat, stirring occasionally, until sugar has dissolved and syrup is bubbling.
  • Stir in butter.
  • Set candy thermometer in place and continue cooking, stirring frequently, until temperature reaches 300° to 310° (hard crack stage), about 20 minutes.
  • (Once temperature reaches 220° things move quickly, so watch very carefully!) Remove from heat.
  • Reserving 1/3 cup almonds, stir remaining 1 2/3 cups almonds into hot syrup.
  • Immediately pour hot mixture into prepared pan; working quickly, with two forks, spread mixture evenly.
  • Cool candy completely in pan on wire rack.
  • Meanwhile, in heave 1-quart saucepan, melt unsweetened and semisweet chocolates and shortening over low heat, stirring, until smooth.
  • Remove from heat; cool slightly.
  • Lift out candy, in one piece, and place on cutting board.
  • With narrow metal spatula, spread warm chocolate evenly over candy; sprinkle with reserved 1/3 cup almonds, gently pressing them into chocolate.
  • Let stand until chocolate has set, about 1 hour.
  • Use sharp knife to help break hardened candy into pieces.
  • Layer between waxed paper in an airtight container.
