ALMOND CHICKEN AND RICE CASSEROLE

Almond Chicken and Rice Casserole image

This is a recipe that has been in my family for many years. It is counted as a favorite with my husband and kids. Very quick and easy prep.

Provided by Rooster_814

Categories     One Dish Meal

Time 1h40m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 cups long grain rice
2 (10 1/2 ounce) cans cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
4 -5 boneless skinless chicken breasts
3 -4 tablespoons butter
1/2 cup milk
parmesan cheese
sliced almonds
parsley

Steps:

  • Melt butter and add soups and milk. Reserve 1 C soup mixture. Add rice to remaining soup mixture. Pour into 9x13 baking dish. Cut chicken breasts into thirds and place on top of rice and soup. Pour remaining cup of soup over all. Sprinkle with parmesan cheese, parsley and almonds on top. Bake covered at 350 degrees for about 1 1/2 hours. Check after one hour and stir rice.
  • **Sometimes I like to make this with lower fat content. When I do I decrease the amount of rice by 1/2 C, eliminate 1 can of cream of chicken soup and add in the place 1 1/2 C chicken broth and leave out the butter and almonds. It is still very creamy and very tasty. I also use lowfat cream soups.

Valuable Tips When Making "Almond Chicken Casserole Recipes"

Almond chicken casserole is a nutritious and delicious meal that you can make for your family and friends. The good thing about this dish is that it is easy to prepare, and you can make it in advance, so you have more time to enjoy with your loved ones. Here are some valuable tips to help you make the most delicious almond chicken casserole:
1. Use Quality Ingredients
When making almond chicken casserole, it's crucial to use high-quality ingredients to get the best flavor and texture. Use fresh chicken breasts and almonds, and make sure the vegetables are firm and ripe. You can also use homemade stock instead of store-bought stock to enhance the flavor of the dish.
2. Cook the Chicken Properly
Cook the chicken breasts thoroughly to ensure it's safe to eat. Overcooking the chicken can result in a dry, tough texture. Use a meat thermometer to check the internal temperature of the chicken. The ideal temperature for cooked chicken is 165°F. If you are using leftover chicken, warm it up in the microwave first to ensure it's hot all the way through.
3. Choose the Right Vegetables
When selecting vegetables to use in your almond chicken casserole, choose ones that complement the dish's flavors. Vegetables such as carrots, peas, broccoli, and onions work well in this dish. You can also use canned vegetables if you don't have access to fresh ones. Drain the canned vegetables thoroughly before you use them.
4. Add Flavorful Spices
Almond chicken casserole can be quite bland without the right spices. Add some salt, pepper, paprika, garlic powder, and onion powder to enhance the dish's flavor. You can also add thyme, oregano, or rosemary for more depth.
5. Use Cream of Mushroom Soup
Cream of mushroom soup is a great ingredient to use in almond chicken casserole as it adds a creamy texture and a rich flavor. You can use other cream soups such as cream of celery soup or cream of chicken soup if you don't like the mushroom flavor.
6. Use Almond Slices or Whole Almonds
When making almond chicken casserole, you can use either almond slices or whole almonds. Almond slices are easier to sprinkle over the top of the dish and make it look more aesthetically pleasing. Whole almonds, on the other hand, can add more texture and crunch to the dish.
7. Use a Large Casserole Dish
When making almond chicken casserole, make sure you use a large casserole dish to fit all the ingredients. A deep 9x13-inch casserole dish is the perfect size to fit all the ingredients in without overflowing. If you don't have a large casserole dish, make two smaller ones instead.
8. Add Cheese for Extra Flavor
Cheese is a great ingredient to add to almond chicken casserole as it can add more flavor and a gooey texture. Use shredded cheddar, mozzarella, or Parmesan cheese on top of the dish, and bake it until the cheese is melted and bubbly.
9. Let It Rest before Serving
Once you've finished making the almond chicken casserole, let it rest for at least 10 minutes before serving. This will allow the dish to cool down and settle, making it easier to cut into portions. It will also allow the flavors to meld together better.
10. Store Leftovers Correctly
If you have any leftover almond chicken casserole, store it in an airtight container and refrigerate it. It will stay fresh for up to three days. When you're ready to eat it, reheat it in the microwave or in the oven until it's hot all the way through. In conclusion, almond chicken casserole is a delicious and nutritious dish that you can make for your family and friends. With these valuable tips, you can make the most flavorful and delicious almond chicken casserole ever. Try these tips the next time you make this dish, and you'll be amazed at how much better it tastes!
