BUTTERY ALMOND COOKIES

Buttery Almond Cookies image

Made with high-fat, cultured butter, these melt-in-your-mouth almond cookies are like the most tender shortbread you've ever eaten. A simple confectioners' sugar icing and a sliced almond topping make them especially pretty, but you can skip the garnish for something sleeker and simpler. Or use them to make sandwich cookies, filling them with the likes of lemon curd, raspberry jam or melted chocolate.

Time 1h

Yield About 4 dozen cookies

Number Of Ingredients 15

1 1/2 cups/190 grams all-purpose flour, plus more for rolling the dough
1/3 cup/38 grams almond flour
1/4 cup/30 grams cornstarch
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt
1 cup/227 grams salted cultured butter, at room temperature (see Tip)
2/3 cup/130 grams granulated sugar
1 large egg yolk
1/4 teaspoon almond extract
1 cup confectioners' sugar
1/4 cup/56 grams salted cultured butter, melted
1 to 2 tablespoons buttermilk or whole milk, plus more as needed
1/4 teaspoon vanilla extract
1/8 teaspoon almond extract
Toasted sliced almonds, for topping

Steps:

  • In a large bowl, stir together flours, cornstarch, baking powder and salt.
  • In an electric mixer fitted with the paddle attachment, beat together butter and granulated sugar until lightened in color and fluffy, 3 to 4 minutes. Beat in egg yolk and almond extract until combined, about 20 seconds. With the mixer running on low, add flour mixture, beating until just incorporated. Do not overmix.
  • Divide dough into two balls. On a floured surface, roll each ball into a 1 1/2-inch-thick log. (If the dough is too soft to work with, chill it for 20 to 30 minutes before forming it into logs.) Wrap logs tightly in parchment paper or plastic wrap, and refrigerate until very firm, at least 2 hours or overnight.
  • When you are ready to bake the cookies, heat oven to 325 degrees. Line 2 baking sheets with parchment.
  • Use large, sharp knife to cut each log into 1/4-inch-thick rounds. Place cookies 1 inch apart on prepared baking sheets.
  • Bake until cookie edges and bottoms are golden brown, about 15 to 22 minutes. Cool 5 minutes on baking sheets, then transfer to a wire rack to cool completely.
  • Make the icing: In a large bowl, whisk together confectioners' sugar, melted butter, 1 tablespoon buttermilk, vanilla and almond extracts. If the icing isn't thin enough to drizzle, add more buttermilk. It should be a little thicker than heavy cream.
  • Using a fork, drizzle icing all over the cooled cookies, then top with almond slices if you like. Let the icing set for at least 1 hour, then store at room temperature in an airtight container. The cookies will keep for at least 3 days.

Almond butter shortbread cookies mandelmusslor is a Swedish dish that can be enjoyed at any time of the day. These cookies have a unique flavor and texture due to the use of almond flour and almond butter. In this article, we will provide some valuable tips to keep in mind while making almond butter shortbread cookies mandelmusslor. Ingredients: The ingredients for almond butter shortbread cookies mandelmusslor are readily available in grocery stores. However, the quality of ingredients can impact the final product. Here are some tips to consider when selecting ingredients: 1. Almond Flour: Use high-quality almond flour that is finely ground. The finer the flour, the smoother the cookie dough will be, and the final product will be more refined. 2. Almond Butter: Use unsweetened and unsalted almond butter without any added oils. The high fat content and natural oils in the almond butter contribute to the moist and chewy texture of the cookies. 3. Butter: Use unsalted and room temperature butter. This will ensure that the butter is easily incorporated into the dough. 4. Sugar: Use granulated sugar instead of powdered sugar, as the latter can make the cookies too sweet and interfere with the texture. 5. Vanilla extract: Vanilla extract enhances the flavor of the cookies. Use pure vanilla extract instead of imitation vanilla. 6. Salt: Salt is an essential ingredient in baking. However, since almond butter is naturally salty, reduce the amount of salt in the recipe. 7. Egg yolks: Use room temperature egg yolks for the recipe. Cold eggs can cause the dough to be lumpy and difficult to work with. Tips for Making Almond Butter Shortbread Cookies Mandelmusslor: 1. Chill the dough: After making the cookie dough, refrigerate it for at least an hour. This will allow the dough to firm up, making it easier to roll out and cut. 2. Use the right tools: Use a rolling pin and cookie cutters to shape the cookies. A pastry scraper or spatula can be used to transfer the cookies to a baking sheet. 3. Use parchment paper: Use parchment paper to line the baking sheet. This prevents the cookies from sticking and ensures even baking. 4. Use a timer: It is essential to keep an eye on the cookies while they bake. Set a timer to ensure that they do not overcook or burn. 5. Allow them to cool: Once the cookies are done, allow them to cool for a few minutes before removing them from the baking sheet. This will give them time to firm up and prevent them from breaking. 6. Store them correctly: Almond butter shortbread cookies mandelmusslor can be stored in an airtight container for up to a week. To keep them fresh, add a slice of bread to the container. This will help to absorb moisture and keep the cookies from becoming stale. Conclusion: Almond butter shortbread cookies mandelmusslor is a delicious Swedish dish that can be made easily with a few simple ingredients. By keeping these valuable tips in mind, you can achieve perfect cookies every time. Remember to use high-quality ingredients, chill the dough, use the right tools, and store them correctly. With these tips, you can explore and enjoy the unique flavor and texture of these cookies.
