CHOCOLATE-COVERED ALMOND TOFFEE BARS

Chocolate-covered Almond Toffee Bars image

Provided by Food Network

Categories     dessert

Time 3h25m

Yield 1 (2-pound) block, 10 by 13 inches

Number Of Ingredients 8

10 ounces whole unblanched almonds
1 1/4 cups sugar
1/3 cup light corn syrup
1/3 cup water or rum
8 ounces (2 sticks) unsalted butter, cut into small pieces
1 teaspoon salt
1/2 teaspoon baking soda
8 ounces bittersweet chocolate, cut into small pieces

Steps:

  • Position rack in center of oven and preheat oven to 375 degrees F.
  • Spread nuts on a baking tray and bake until toasted, 10 to 15 minutes, turning nuts after 7 to 8 minutes to ensure even toasting. Cool and chop coarsely. You should have about 2 cups. Set aside. Clean baking tray and coat with vegetable oil or vegetable oil spray. Spray both sides of the offset spatula with vegetable oil spray. Set aside.
  • Make the toffee: Place sugar in a small deep saucepan. Add the corn syrup and water or rum and, over medium heat, bring to a boil. Let boil until large bubbles form on the surface, 3 to 4 minutes. Cover with foil and boil 5 minutes longer.
  • Add the pieces of butter and continue cooking, uncovered, over medium heat until temperature reaches 300 degrees F on a candy thermometer, about 30 minutes. (The candy thermometer has a clip on the side that can be slid up or down. If desired, you can fit the thermometer on the side of the pan, making sure that it rests in the mixture, not on the bottom of the pan, so that the reading is accurate.) Remove from heat and immediately add the salt, baking soda, and 1 cup of chopped nuts. Stir with a wooden spoon until well combined.
  • Pour the toffee mixture on the oiled baking tray and, using the offset spatula, spread the mixture out, making a block about 10 by 13 inches. The toffee will thicken very quickly, so work as fast as you can. When cool, blot some of the oil or vegetable spray with a clean towel.
  • While the toffee mixture is cooling, melt the chocolate in a medium heatproof bowl placed over simmering water. When almost melted, turn off heat and let the chocolate continue to melt, stirring occasionally. Keep warm.
  • When you can lift up the block of toffee, transfer it to a flat work surface or to a clean baking tray. Pour the melted chocolate over the toffee, spreading to cover the entire surface and, before the chocolate cools, sprinkle with the remaining chopped nuts. If the chocolate takes a long time to harden, refrigerate for about 10 minutes to set the chocolate.
  • Return the block of toffee to the work surface and break up into pieces approximately 1 to 1 1/2 inches wide. Then cut into smaller pieces, as desired. Use as needed.

ALMOND BARS

Almond Bars image

I have been baking these cookies for about 15 years now; I get so many requests for them during the holidays I can hardly keep up with the demand! I like to make the rolls bigger than the recommended 12x3-inch; this way I get bigger cookies, but you can do whatever you like. Make sure to use plenty of almonds to top them off.

Provided by Food Network

Categories     dessert

Time 40m

Yield 24

Number Of Ingredients 11

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter or margarine, room temperature
1 cup sugar
1 egg
1/2 teaspoon almond extract
Milk, for brushing
1/2 cup sliced almonds, coarsely chopped (or as many as you need)
1 cup confectioners' sugar, sifted
3 to 4 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees F.
  • In medium bowl combine flour, baking powder and salt. In a mixer beat together the butter and sugar until fluffy. Add egg and almond extract and beat well. Slowly add flour mixture and beat until combined, scraping down the sides of the bowl as necessary. Turn the dough onto a clean work surface, and, with a sharp knife, divide the dough into 4 even pieces. Roll each piece into a 12 by 3-inch roll (or whatever size you like).
  • Place 2 rolls on an ungreased cookie sheet, 4 inches apart. Repeat with remaining rolls. Brush rolls with milk and sprinkle with almonds. Bake until edges are lightly browned, about 12 to 14 minutes, rotating the pans halfway through cooking. While cookies are still warm cut them crosswise at a diagonal into 1-inch strips. Cool on a wire rack.
  • For the glaze:
  • In a small bowl, mix the sugar and milk until smooth. Drizzle over almond cookies. Let sit until glaze is set, about 15 minutes.

Time 45m

Number Of Ingredients 10

MOUND'S
MIX 1ST 3 ITEMS TOGETHER, MIX WELL
1 lb bag sweetened coconut
1 lb- box powdered sugar
1 can(s) (Eagle brand) 14 oz size sweetened condensed milk, (do not use evaporated milk)
3 C almonds
DIPPING CHOCOLATE:
1 bag chocolate chips or chocolate almond bark
IF CHOC/BARK IS TOO THICK TO DIP CANDY
see note below: parrafin wax as needed, approx. 1/2 block wax to 1 1/2 lb chocolate (add to chocolate little at a time in small chunks ) this keeps your chocolate thin when dipping

Steps:

  • 1. Mix powder sugar and Sweetened CONDENSED MILK together. (DO NOT USE EVAPORATED MILK) Blend well. Next add coconut, stirring till well blended. (Mixture will be thick.)
  • 2. With buttered hands, form into logs to cut into 1/1/2" long pieces or roll into balls to shape for Mounds. Candy MUST CHILL until chocolate is melted and ready to dip chocolates. (Chilling candy makes for easier dipping.) Optional: see Almond Joy below; top with almond on each.
  • 3. Melt chocolate chips or almond bark, on med-low heat in double boiler. Make sure this choc is THIN, to coat the candy. NOTE: If chocolate or bark gets too thick to dip candy, add a little paraffin wax to the chocolate to thin to needed consistency. Use only a little at a time. Melt into chocolate (approx 1 TBS) you can always add more as needed.
  • 4. Dip each chilled Mound candy into chocolate with toothpick or small slotted spoon. Place on parchment or wax paper lined baking sheet to set... chill til set and remove from refrigerator.
  • 5. FOR ALMOND JOY; Press one or two almonds slightly into top of the mounds, before dipping into chocolate.

GINGER AND ALMOND BARS

Ginger and Almond Bars image

Gluten-free bar cookies with an almond meal base and a candied ginger, sliced almond, and honey topping.

Provided by Patricia Wells

Categories     HarperCollins     Dessert     Almond     Ginger     Cookies     Bake     Wheat/Gluten-Free     Honey

Yield Makes 16 bars

Number Of Ingredients 17

Base:
3 tablespoons (45 g) unsalted butter
1 3/4 cups (165 g) almond meal (also called almond flour or almond powder)
2 tablespoons peeled and grated fresh ginger
3 tablespoons mild honey, such as clover
1 large egg, free-range and organic, lightly beaten
1/2 teaspoon fine sea salt
1 teaspoon pure vanilla extract
Topping:
4 tablespoons (60 g) unsalted butter
1 cup (80 g) sliced almonds
1/3 cup (45 g) minced candied ginger
1/3 cup (80 ml) mild honey, such as clover
1/4 teaspoon fine sea salt
1 teaspoon pure vanilla extract
Special Equipment
A 9-1/2-inch (24 cm) square baking pan; baking parchment; a 2-quart (2 l) saucepan; a baking rack.

Steps:

  • Center a rack in the oven. Preheat the oven to 400°F (200°C). Line the pan with baking parchment, letting the parchment hang over the sides. (This will make it easier to remove the dessert once baked.)
  • Prepare the base:
  • In the saucepan, melt the butter. Add the almond meal, fresh ginger, honey, egg, salt, and vanilla. Stir until well combined. The mixture should be thick and sticky.
  • Turn the mixture out into the prepared pan. To help make a level and even base, place a piece of plastic wrap on top of the base. Using a flat-bottomed glass (or your fingers), smooth out the base by pressing gently to evenly cover the bottom of the pan. Remove and discard the plastic wrap. Bake until the base is slightly firm, 12 to 15 minutes.
  • Meanwhile, prepare the topping:
  • In the same saucepan, melt the butter over low heat. Add the almonds, candied ginger, honey, salt, and vanilla. Stir just until the ingredients are incorporated.
  • When the base is baked, spread the topping evenly over the base and bake until the topping is dark and sizzling, 12 to 15 minutes. Do not underbake.
  • Transfer the pan to the baking rack to cool. When the dessert is completely cool, remove it from the pan using the overhanging parchment as handles and cut it into 16 even squares.
  • Do Ahead
  • Store in an airtight container at room temperature for up to 1 week.
  • Variation:
  • Chestnut Honey Squares: For the base, replace 1 cup (90g) almond meal with 3/4 cup (120 g) unbleached, all-purpose flour and use a strong honey, such as chestnut, in place of the mild honey. For the topping, replace the candied ginger with organic candied orange or lemon peel, cut into tiny cubes.

Time 3h30m

Yield Makes 2 dozen

Number Of Ingredients 9

Nonstick cooking spray
1 cup smooth almond butter
1/3 cup honey
1 stick unsalted butter
2 cups rolled old-fashioned oats
1/2 cup chopped toasted almonds
6 ounces bittersweet chocolate, chopped (about 1 1/4 cups)
3/4 cup raisins
1/2 teaspoon coarse salt

Steps:

  • Coat an 8-inch square baking pan with cooking spray. Line with parchment, leaving 2 inches of overhang on 2 sides. • Pour mixture into prepared pan. Refrigerate until chocolate hardens, at least 3 hours and up to 1 day. Run a knife around edges, then use parchment to remove from pan and transfer to a cutting board. Cut into 24 bars, 3 across one side and 8 down other. Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 45m

Yield Makes 16 to 18

Number Of Ingredients 10

1/2 cup (1 stick) unsalted butter, room temperature, plus more for baking dish
1 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup packed light-brown sugar
1/4 cup granulated sugar
1 large egg yolk
3/4 cup sliced almonds
1/2 cup fruit jam, such as cherry, plum, or raspberry

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking dish. In a bowl, whisk together flour, cinnamon, salt, and baking powder.
  • In a mixing bowl, cream butter and sugars on high speed until light and fluffy; beat in egg yolk. Reduce speed to low; gradually mix in flour mixture. Stir in almonds.
  • In a small bowl, whisk jam to loosen. (Stirring the jam with a fork or a whisk will enable it to spread smoothly over the dough.) Gently press half of dough into bottom of prepared dish. With the back of a spoon, gently spread jam over dough, leaving a 1/4-inch border so the jam doesn't stick to the sides of the pan. Sprinkle remaining dough over top all the way to the edges; press gently to form top layer.
  • Bake until top is golden, 25 to 30 minutes; cool completely in dish. Cut into bars with a serrated knife.

Choose the Right Almonds The key to making delicious almond bars recipes is using the best quality almonds. We recommend choosing raw, unsalted almonds that are fresh and not rancid. You can buy almonds from your local health food store, grocery store, or online. Make sure to check the expiration date before purchasing them. 2. Toast the Almonds Toasting almonds before using them in your almond bars recipe will enhance their flavor and add a nice crunch. You can toast almonds in the oven or on the stovetop. To toast almonds in the oven, preheat your oven to 350°F (180°C). Spread the almonds on a baking sheet and bake for 8-10 minutes or until lightly golden. To toast almonds on the stovetop, heat a dry skillet over medium heat. Add the almonds and cook, stirring occasionally, for 3-4 minutes or until lightly golden. 3. Use High-Quality Ingredients To make the best almond bars, it’s important to use high-quality ingredients. Choose organic, non-GMO ingredients whenever possible. Use raw honey instead of processed sugar and natural nut butter instead of peanut butter that contains added sugar and hydrogenated oils. You can also add healthy ingredients like chia seeds, flaxseeds, and coconut oil to your almond bars recipe. 4. Be Careful with Sweeteners While adding sweeteners to your almond bars recipe can make them delicious, be careful not to overdo it. Too much sugar can overpower the natural flavor of almonds and make your bars too sweet. Instead of using processed sugar, use natural sweeteners like raw honey or maple syrup. You can also add fruit like dates, dried figs, or raisins to your almond bars recipe to add sweetness. 5. Experiment with Flavors Almond bars are versatile and can be customized to your liking. Experiment with different flavors and ingredients to create your perfect bar. You can add spices like cinnamon or nutmeg to your recipe to add warmth and depth of flavor. You can also add chocolate chips or chopped dried fruit to your bars for added texture and sweetness. 6. Use a Food Processor To make the process of making almond bars easier, it’s important to use a food processor. A food processor will help you chop the almonds, combine the ingredients, and process them into a dough-like mixture. It will also make it easier to spread the mixture evenly in the pan. If you don’t have a food processor, you can use a blender or a nut grinder. 7. Chill the Bars Once you’ve made your almond bars, it’s important to chill them in the refrigerator for at least an hour. This will help them set and make them easier to cut into bars. You can also freeze them for up to three months for a quick and easy snack. Just wrap them in plastic wrap and store them in an airtight container. 8. Cut Bars into Evenly Sized Pieces To make your almond bars look professional, it’s important to cut them into evenly sized pieces. Use a sharp knife to cut the bars into rectangular or square pieces. You can also use a cookie cutter to cut them into fun shapes. Make sure to wipe the knife or cutter clean between each cut to ensure clean edges. In conclusion, almond bars are a nutritious and delicious snack that can be customized to your liking. Follow these valuable tips when making your almond bars recipe to ensure they come out perfectly every time. Choose high-quality ingredients, experiment with flavors, and be careful with sweeteners.
