  • For almond cake:
  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottoms with parchment paper; dust pans with flour. Whisk flour, baking powder, and salt in bowl. Using heavy-duty mixer, blend brown sugar and butter in large bowl. Beat in almond paste 1 piece at a time, then beat until smooth. Add eggs 1 at a time, beating well after each addition. Spread remaining ganache over; sprinkle with 1/4 cup praline. Top with third cake layer. Spread frosting over top and sides of cake. DO AHEAD Cake can be made 1 day ahead; cover with cake dome and chill. Store remaining praline airtight at room temperature.
  • For chocolate bark:
  • Line baking sheet with foil. Melt chocolate in small bowl set over saucepan of simmering water. Stir until smooth. Remove from over water. Drizzle all but 1 tablespoon chocolate over foil in thick (about 1-inch-wide) zigzag lines (chocolate will pool in spots). Sprinkle 3 tablespoons praline over chocolate; chill bark until firm, about 1 hour.
  • Press praline around bottom 2 inches of cake; sprinkle more atop. Peel foil off bark; break into pieces. Press edges into frosting atop cake. Remelt 1 tablespoon chocolate over simmering water, stirring often. Using spoon, drizzle chocolate over cake. DO AHEAD Chill up to 4 hours. Serve cold or at room temperature.

CHOCOLATE ALMOND BARK

Chocolate Almond Bark image

This is a great recipe for the holidays and to give as a gift because it is relatively easy to make. Use your favorite bittersweet chocolate for this one since the chocolate is what really makes this great. I don't remember where this recipe came from but you can mix it up by using a different type of nut or even using more or less chocolate.

Provided by Chef Mean Green

Categories     Dessert

Time 25m

Yield 5 large pieces of bark, 2 serving(s)

Number Of Ingredients 2

1 cup bittersweet chocolate, finely chopped
3/4 cup cashews or 3/4 cup brazil nut

Steps:

  • Finely chop your chocolate so that it melts evenly and quickly.
  • Add your chocolate to a double broiler until the chocolate is warm and melty. You don't want to get the chocolate too warm and it is not necessary for this recipe.
  • Once the chocolate is melted, mix in your almonds.
  • Stir well to ensure the almonds are completely coated.
  • Once well coated place the chocolate mixture to a baking sheet covered with wax paper.
  • Spread the mixture out evenly to cool.
  • It takes about two hours or so to completely cool enough to break the bark.

Yield Makes about 36 pieces

Number Of Ingredients 8

3 cups (10 ounces) sliced almonds
1 stick (1/2 cup) unsalted butter, softened
1 1/2 cups sugar
1/3 cup water
1 tablespoon fresh lemon juice
1/2 teaspoon vanilla
1/4 teaspoon salt
6 ounces fine-quality bittersweet chocolate (not unsweetened)

Steps:

  • Preheat oven to 350°F. and oil a large baking sheet.
  • In a large baking pan spread almonds evenly and toast in middle of oven, stirring nuts halfway through toasting, until golden, about 10 minutes. In a 3-quart heavy saucepan bring butter, sugar, water, lemon juice, vanilla, and salt to a boil over moderate heat, stirring with a wooden spoon. Boil mixture, without stirring, swirling pan occasionally, until deep golden, about 12 minutes.
  • Remove pan from heat and stir in two thirds almonds. Immediately pour toffee onto baking sheet and with an offset spatula spread in a thin layer. Carefully transfer baking sheet (it will be very hot) to a rack and cool toffee.

Pour chocolate over cooled toffee and evenly spread with offset spatula. Sprinkle toffee with remaining almonds. Chill toffee, uncovered, until firm, about 1 hour.

Almond bark is a versatile ingredient that can be used in a wide variety of recipes. Its creamy texture and sweet almond flavor make it a popular choice for desserts and snacks, and it can be used in both sweet and savory dishes. Almond bark is a type of candy coating that is made from sugar, cocoa butter, and almond flavoring. It is similar to white chocolate, but it contains no actual chocolate.

Uses of Almond Bark

Almond bark is a popular ingredient in many sweet treats, including cakes, cookies, brownies, and candy. It can be melted down and used to make chocolate-covered pretzels, strawberries, and other fruits. Whether you are an experienced cook or a novice in the kitchen, these tips will help you create delicious almond bark recipes that your family and friends will love.

Choosing the Right Chocolate

The quality of your almond bark largely depends on the quality of the chocolate you choose. When selecting chocolate, look for a high-quality brand that does not contain any artificial additives or flavors. You can use either dark or white chocolate for your almond bark recipe, depending on your personal preferences.
Dark Chocolate
Dark chocolate contains more cocoa and less sugar than milk or white chocolate, which makes it a healthier choice. It also has a stronger, richer flavor that complements the nuttiness of the almonds. If you choose to use dark chocolate for your almond bark recipe, look for a brand that contains at least 70% cocoa.
White Chocolate
White chocolate is made from cocoa butter, sugar, and milk, and does not contain cocoa solids. It has a creamy, vanilla flavor that pairs well with almonds. When selecting white chocolate, make sure you choose a high-quality brand that contains real cocoa butter.

Preparing the Almonds

The almonds you use for your almond bark recipe should be roasted and salted. You can roast them yourself by spreading them out in a single layer on a baking sheet and baking them at 350 degrees Fahrenheit for 10-15 minutes, or until they are golden brown. Be sure to stir them occasionally to ensure they cook evenly.
Salted Almonds
Using salted almonds in your almond bark recipe helps to balance out the sweetness of the chocolate. However, be careful not to use too many, as they can overwhelm the other flavors. A good rule of thumb is to use approximately 1 cup of salted almonds for every 12 ounces of chocolate.

Melting the Chocolate

Melting the chocolate for your almond bark recipe can be tricky, as chocolate is notoriously difficult to work with. However, if you follow these tips, you should be able to achieve perfectly melted chocolate every time.
Double Boiler Method
The double boiler method is the most popular way to melt chocolate for almond bark recipes. To do this, fill a saucepan with 1-2 inches of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, making sure that the bottom of the bowl does not touch the water. Add the chocolate to the bowl, and stir occasionally until it is completely melted.
Microwave Method
If you prefer to use a microwave to melt your chocolate, be sure to use a microwave-safe bowl and heat the chocolate in 30-second intervals. Stir the chocolate after each interval to ensure that it melts evenly.
