Almond Butter and Banana Pancakes image

Pancakes made of bananas and almond butter?? Enough said. The protein here comes from the eggs, which also give these sweet, nutty pancakes a light, crepe-like texture.

1/2 cup smooth almond butter
4 large eggs
1 teaspoon ground cinnamon
1 tablespoon coconut oil

ALMOND FLOUR BANANA PANCAKES

Almond Flour Banana Pancakes image

Moist, low-carb pancakes with the wonderful taste of ripe, fresh bananas. This was originally published on a website whose copyright has expired in 2010 called Weelicious.com for Yo Baby yogurt contestants. They selected this recipe as the winner, as written by Mara Stephens. I did change the sweetener she used from Agave to Splenda as I am trying to keep sugar to a minimum. I am posting here to take advantage of the nutrition calculations this site offers.

For those that prefer a sweet meal to start their day, these banana and almond pancakes are the perfect healthy option. We've developed this recipe for Fertility Road magazine, so not only is it delicious and nutritious but it's also a fantastic way of eating yourself pregnant too. Eggs are such a great source of protein and iron (which are both really important nutrients for fertility). In addition they are also a fantastic source of vitamin D. Women who struggle with fertility often suffer from a deficiency in vitamin D. Almonds are a rich source of vitamin E. They also help improve insulin resistance, which has been shown to increase fertility levels in women. The toppings on this recipe also play an important part in improving fertility. One serving per day of full fat dairy can improve fertility rates and Greek yoghurt is a delicious and calcium-rich option to increase your chances of conception. It is also rich in vitamin D and contains two times as much protein as regular yoghurt. Berries are loaded with vitamin C and folate, and are full of natural antioxidants and anti-inflammatory nutrients, which help boost both female and male fertility. So if you're looking to enhance your chance of conception, this delicious, healthy breakfast recipe could just do the trick.

Almond banana pancakes are a delicious and healthy breakfast option. They are packed with protein, fiber, and essential nutrients that will keep you feeling full and energized throughout the day. With a few simple ingredients and some helpful tips, anyone can create these tasty pancakes at home. In this article, we will discuss some valuable tips on how to make almond banana pancakes recipes that are sure to impress your family and friends.

Tips for Preparing Almond Banana Pancakes:

1. Gather Your Ingredients:
Before you begin making your almond banana pancakes, make sure you have all of the necessary ingredients on hand. You'll need almond flour, baking powder, salt, cinnamon, mashed ripe bananas, eggs, vanilla extract, almond milk, and a little bit of honey to sweeten the batter. It's important to measure out the ingredients accurately to ensure that the pancakes turn out perfect.
2. Mashed Ripe Bananas:
One of the key ingredients in this recipe is mashed ripe bananas. Make sure that the bananas are fully ripe with brown spots on the peel. The riper the bananas, the sweeter they will be, and the more flavor they will add to the pancakes. To mash the bananas, you can use a fork, a potato masher, or a blender.
3. Combine Dry and Wet Ingredients Separately:
It's important to combine the dry and wet ingredients separately before mixing them together. This will prevent lumps from forming in the batter and ensure that the pancakes are evenly cooked. In a medium bowl, whisk together the almond flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together the mashed bananas, eggs, vanilla extract, almond milk, and honey.
4. Mix the Batter Gently:
When it's time to mix the dry and wet ingredients together, it's important to do so gently. Overmixing the batter can cause gluten to develop in the almond flour, resulting in tough and dense pancakes. Use a rubber spatula to fold the dry ingredients into the wet ingredients until just combined.
5. Let the Batter Rest:
Letting the batter rest for a few minutes before cooking the pancakes can improve the texture of the finished product. This will give the almond flour time to soak up the wet ingredients and create a fluffier batter. Letting the batter rest for at least 5 minutes before cooking will make a noticeable difference in the texture of the pancakes.
6. Use a Non-Stick Skillet or Griddle:
To prevent the pancakes from sticking to the pan, use a non-stick skillet or griddle. If you don't have a non-stick surface, you can use a little bit of coconut oil or butter to grease the pan before cooking the pancakes. Make sure the pan is heated to medium heat before adding the batter.
7. Flip the Pancakes Carefully:
When it's time to flip the pancakes, do so carefully with a spatula. Almond flour pancakes can be a bit more delicate than traditional pancakes, so take your time and be gentle. Wait until the edges of the pancakes are firm and the surface of the batter is bubbly before attempting to flip.
8. Keep the Pancakes Warm:
After cooking each pancake, keep them warm by placing them on a plate in a low oven or warming drawer. This will allow you to serve all of the pancakes at once, and they will stay fresh and warm.
9. Serve with Toppings:
Almond banana pancakes are delicious on their own, but can be even more enjoyable when served with toppings such as fresh fruit, maple syrup, whipped cream, or almond butter. Be creative with your toppings and experiment with different combinations to find your favorite flavor pairings.

Conclusion:

Making almond banana pancakes is a great way to start your day with a healthy and delicious breakfast option. Making sure that you're using ripe bananas, combining dry and wet ingredients separately, mixing the batter gently, letting it rest for a few minutes, using a non-stick skillet or griddle, flipping the pancakes carefully, keeping them warm, and serving them with toppings are all valuable tips for achieving perfect almond banana pancakes every time.
