ITALIAN HERB BREAD I

This aromatic bread can be served with dinner, or the dough can be used for pizza.

Number Of Ingredients 11

2 (.25 ounce) packages active dry yeast
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons white sugar
¼ cup olive oil
1 tablespoon salt
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup grated Romano cheese
6 cups bread flour

Steps:

  • Mix yeast, warm water, and white sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups flour into the yeast mixture. Gradually mix in the next three cups of flour. Dough will be stiff.
  • Knead dough for 5 to 10 minutes, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until the dough has doubled in size.
  • Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about a 30 minutes.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove loaves from pan(s), and let cool on wire racks for at least 15 minutes before slicing.

"When I didn't have the onion soup mix called for in the original recipe, I used Italian salad dressing mix instead," writes Jill Dickinson of Aurora, Minnesota. "Now this mildly seasoned bread is my family's favorite."

1 cup plus 3 tablespoons water (70° to 80°)
4-1/2 teaspoons butter
1/2 teaspoon salt
1 envelope zesty Italian salad dressing mix
1 tablespoon sugar
3 cups bread flour
4-1/2 teaspoons nonfat dry milk powder
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

1/2 small loaf day-old Italian bread (about 1/2 pound), cut into large pieces
3 tablespoons freshly grated Parmigiano-Reggiano cheese
1/4 cup finely chopped fresh flat-leaf parsley
Pinch of freshly chopped oregano
1 clove garlic, finely chopped
3 tablespoons olive oil
Coarse salt and freshly ground black pepper

Steps:

  • Place bread in the bowl of a food processor; process until fine crumbs are formed. Transfer crumbs to a large bowl along with cheese, parsley, oregano, and garlic; stir to combine. Gradually stir in olive oil until well combined. Season with salt and pepper. Store, refrigerated, in an airtight container, up to 5 days.

4 ounces Italian bread, cubed
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed

Steps:

  • Place all ingredients in a blender or food processor; cover and process until fine crumbs form. Transfer to a 15x10x1-in. baking pan. Bake, uncovered, at 350° for 8-12 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container.

Italian Seasoned Bread image

This bread is incredible. It is by far the best non-knead bread I've ever eaten. Serve it with any homemade soup, or with chicken cacciatore.

Number Of Ingredients 9

2 cups water (or beer)
2 (1/4 ounce) packages dry yeast
2 tablespoons sugar
2 teaspoons salt
2 tablespoons butter or 2 tablespoons margarine
1/2 cup parmesan cheese, good quality
1 tablespoon parmesan cheese
1 1/2 tablespoons dried oregano or 3 tablespoons fresh oregano
4 1/2 cups flour

Steps:

  • In a quart bowl or measuring cup, put the warm water, the margarine or butter, the sugar, the salt, and a tablespoon of the flour. Stir well.
  • Add in the yeast and then set aside for five minutes.
  • In a very large bowl, mix 2 cups flour, 1/2 cup of the parmesan, and the remaining ingredients. Stir to mix.
  • Slowly stir in the yeast mixture.
  • Beat in the rest of the flour.
  • Leave the bread mix in the bowl, and cover with a damp dish towel and then plastic wrap.
  • Let rise 45 minutes, until light and bubbly.
  • Preheat the oven to 375°F.
  • Butter a two quart casserole.
  • Stir the bread mix until it collapses, and then flop it into the greased dish.
  • Sprinkle the remaining parmesan on top of the bread mix.
  • Let rise 30 minutes and then put in oven.
  • Bake 35 minutes until lightly browned.
  • Turn the bread out onto the counter.
  • Lightly thump bottom.
  • If it sounds hollow it's done.
  • Otherwise, return to casserole for a few minutes.
  • Let partially cool.
  • Serve warm with real butter.
