ONE-PAN PASTA

One-Pan Pasta image

It's one of our most popular recipes and for good reason. This is our original one-pot pasta recipe, inspired by a dish one of our food editors ate in Puglia, Italy. All the ingredients cook together in a straight-sided skillet, you don't even need to boil water first-and it's on the table in just 20 minutes.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 20m

Number Of Ingredients 10

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large
1 onion, thinly sliced (about 2 cups)

1/2 teaspoon red-pepper flakes
2 sprigs basil, plus torn leaves for garnish
2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese, for serving

Steps:

  • Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
  • Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.

SAUCY PASTA ALL-IN-ONE POT

Saucy Pasta All-In-One Pot image

Not sure where I received this recipe, but it's perfect for a quick weeknight supper. For some reason, I always have a jar of spaghetti sauce in the fridge that I need to use the remainder of or throw away. Sometimes I add a bit of Italian seasoning for extra flavor. This dish cooks in one pot, so there is minimal clean up. Also, it's much healthier than Hamburger Helper.

Tips for Making Perfect All-in-One Pot Saucy Pasta Recipes

Making all-in-one pot saucy pasta recipes can be a quick and easy way to create a delicious meal with minimal cleanup. However, it's easy to make mistakes that can lead to a pot of mushy and unpleasant pasta. Here are some tips to help you make the perfect saucy pasta recipe.
1. Choose The Right Pasta
The type of pasta that you choose can make a big difference in your finished dish. Long, thin noodles, such as spaghetti or linguine, work well in saucy pasta recipes because they can easily soak up the sauce. Short, tubular pasta such as penne, rigatoni or fusilli can also work, but they might require an extra cup of water to cook properly. For a gluten-free option, try using brown rice or quinoa pasta.
2. Plan Your Ingredients Carefully
When planning your all-in-one pot saucy pasta recipe, it's important to choose ingredients that cook at about the same rate. If you add ingredients that require different cooking times, some may overcook or become mushy, while others may be undercooked. For example, broccoli cooks quickly, while carrots take longer. Try to choose ingredients that take around the same time to cook.
3. Add the Pasta at the Right Time
When adding the pasta to your all-in-one pot saucy pasta recipe, it's important to add it at the right time. Adding it too soon can result in mushy pasta, while adding it too late can result in undercooked pasta. Most recipes call for adding the pasta after the other ingredients have cooked for a few minutes.
4. Use Enough Liquid
One of the biggest mistakes people make when making an all-in-one pot saucy pasta recipe is not using enough liquid. The pasta needs to be able to absorb enough liquid to cook properly, so don't be afraid to add extra water or broth if necessary. Remember that the liquid will reduce as it simmers, so you may need to add more liquid as you cook.
5. Be Careful with Acidic Ingredients
Acidic ingredients such as tomatoes, lemon juice, and vinegar can affect the texture of pasta, making it mushy. If you're using acidic ingredients, be sure to add them towards the end of the cooking time to prevent overcooking.
6. Stir Frequently
Stirring your all-in-one pot saucy pasta recipe frequently can help prevent the pasta from sticking together or to the bottom of the pot. Use a wooden spoon or spatula to gently stir the ingredients together.
7. Finish with Cheese and Herbs
To finish off your all-in-one pot saucy pasta recipe, add some grated cheese and fresh herbs. Parmesan cheese is a classic choice, but you can also use mozzarella, feta, or goat cheese. Fresh herbs such as basil, parsley, and cilantro can add a pop of flavor and color to your finished dish.
8. Let It Rest
After your all-in-one pot saucy pasta recipe is done, let it rest for a few minutes before serving. This will allow the pasta to absorb any extra liquid and help the flavors meld together.
Conclusion
All-in-one pot saucy pasta recipes are a great way to create a quick and easy meal with minimal cleanup. By choosing the right pasta, planning your ingredients carefully, adding the pasta at the right time, using enough liquid, being careful with acidic ingredients, stirring frequently, finishing with cheese and herbs, and letting it rest, you can create a delicious and satisfying meal that everyone will love.
