Four 6-ounce boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
4 tablespoons salted butter
1 tablespoon olive oil
3 cloves garlic, minced
1 cup dry white wine
2 heaping tablespoons grainy mustard
1 cup low-sodium chicken broth
1/2 cup chopped mixed fresh herbs, such as dill, parsley or chives, plus more for garnish
Garlic Spinach, recipe follows
2 tablespoons olive oil
2 garlic cloves, minced
Two 10-ounce packages baby spinach leaves
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Juice of 1/2 lemon

Steps:

  • Slice the chicken breasts in half horizontally so that you have 8 thinner chicken breast cutlets. Sprinkle both sides of each cutlet with salt and pepper.
  • Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-high heat until hot. Add half the chicken cutlets and cook until golden brown and completely cooked through, 3 to 4 minutes per side. Remove the cutlets to a plate and set aside. 2 cups whole wheat couscous, cooked

Steps:

  • Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. 1 lb spinach, coarsely chopped (washed 3 times, stems removed)
2 teaspoons poultry seasoning
1/2 cup all-purpose flour
2 large eggs, plus
1 egg yolk
4 tablespoons extra virgin olive oil
3 tablespoons unsalted butter
3 garlic cloves (1 crushed, 2 chopped)
1/2 cup dry white wine
1/4 teaspoon nutmeg, grated
flat leaf parsley, finely chopped (about a handful)
salt and black pepper
1 dash milk or 1 dash half-and-half

Steps:

  • season chicken cutlets with salt, pepper, and poultry seasoning.
  • dredge the chicken in flour.
  • in a small bowl, beat the eggs and egg yolk with milk or half-and-half.
  • heat a large skillet over medium-high heat.
  • add 2 tablespoons of EVOO and 2 tablespoons of butter to skillet.
  • when heated add the crushed garlic, fry until aromatic.
  • coat the chicken in the egg and milk mixture and fry on both sides for about 7-8 minutes.
  • transfer chicken to plate and keep warm.
  • add wine to the skillet, reduce for 1 minute.
  • add the remaining tablespoon of butter, and parsley to the pan.
  • pour sauce over chicken.
  • bring skillet back to heat and add remaining 2 tablespoons of EVOO.
  • add garlic and saute for about 1 minute.
  • add the spinach, toss to coat with the oil, keep tossing until spinach becomes wilted.

2 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
2 garlic cloves, minced or pureed

1 generous bunch spinach, stemmed and washed well in 2 changes water, or 2 6-ounce bags baby spinach, washed
2 allspice berries, lightly toasted and ground
1/2 teaspoon coriander seeds or cumin seeds, lightly toasted and ground
1/4 teaspoon ground cinnamon
Salt to taste

2 tablespoons all-purpose flour or a gluten-free flour such as rice flour or corn flour

  • Turn oven on low. Heat a wide, heavy skillet over high heat and add the oil. When oil is hot, place one or two pieces of chicken in the pan - however many will fit without crowding the pan. Cook for for 1 1/2 minutes until bottom is browned in spots. Turn over and brown on other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and keep warm in the oven. If there is more than a tablespoon of fat in the pan, pour some (but not all) of it off into a jar or bowl.
  • Turn burner heat down to medium. Add ground spices to the pan and when they begin to sizzle add spinach and salt and pepper to taste. Cook, stirring with a wooden spoon and deglazing the bottom of the pan with the liquid that comes off the spinach, until spinach wilts, 2 to 3 minutes.
