1/2 c whole milk
2 slice white bread
1 1/2 lb ground beef
2 eggs
1 small onion, peeled
1 1/2 tsp salt
1/2 tsp pepper
1 tsp dry mustard
1 can(s) (12 oz.) whole tomatoes

Steps:

  • 1. Place the milk and the bread in a large mixing bowl. Let stand until the bread has absorbed all the milk.
  • 2. With two forks, break the bread into crumbs. Beat the ground beef into the crumbs until well mixed.
  • 3. Make a hollow in the center of the meat and break the eggs into it. Beat the eggs a little; then grate the onion into the eggs. Add salt, pepper, and mustard. Beat the eggs into the beef.
  • 4. Shape into a round cake shape and place in the slow cooker. Drain the tomatoes and place them on the meat.
  • 5. Cover and cook on low for 5 to 7 hours.
  • 6. Before serving, uncover the pot; turn the heat to high and bubble away some of the sauce. It should be thick, not thin.

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

1 lb hamburger
2 large eggs
1/2 c diced onion
16 oz salsa, chunky
15 club crackers, crushed
3 Tbsp miracle whip (must be this)
1 c ketchup
1 Tbsp garlic (crushed)
1 Tbsp black pepper

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Spray loaf pan with cooking spray
  • 3. In large bowl mix meat, eggs, onions, crushed crackers, Miracle Whip, pepper, garlic, and half of the jar of chunky salsa (your choice of hotness). Mix well and place in loaf pan
  • 4. In small bowl mix ketchup and remaining salsa and spoon half of this mixture over the meatloaf.
  • 5. Cover with foil and bake for 1 hour and 15 minutes.
  • 6. Take out of the oven and carefully uncover, drain off excess grease and top with remaining salsa mixture and put back in oven uncovered for remaining 15 minutes.
