ALL DAY SPAGHETTI AND MEATBALLS

All Day Spaghetti and Meatballs image

This recipe requires a full day of cooking but the effort is worth it. My mom got this recipe over 50 years ago from an Italian friend. The baking soda is the secret ingredient to making this recipe a success so don't eliminate it. When finished, it can almost be eaten with a fork. I quadruple the recipe so I have some to freeze.

Time 5h15m

Yield 2 quarts, 4 serving(s)

Number Of Ingredients 20

1 (16 ounce) can tomatoes
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
6 ounces water
1 teaspoon sugar
1 garlic clove, chopped
1 onion, chopped
1 teaspoon dried basil (don't substitute oregano as it is too strong for this sauce) or 1 tablespoon fresh basil, chopped (don't substitute oregano as it is too strong for this sauce)
1/4 cup parmesan cheese
olive oil
salt and pepper
baking soda
meatballs
1 lb ground chuck or 1 lb ground round
1 egg
1 slice bread, dipped in water, then squeezed
1 garlic clove, chopped
1 onion, chopped
1 teaspoon oregano
1/4 cup parmesan cheese

Steps:

  • Mix all meatball ingredients, roll in to balls and brown in skillet. Cool and refrigerate until 1 hour prior to serving. Olive oil may be needed to brown these if using very lean beef.
  • In the skillet, add chopped onions and cook until tender but not soft.
  • Add garlic and can of tomatoes. If using whole tomatoes, I mash them briefly in the skillet with a potato masher.
  • Cook until mixture comes to a boil.
  • Put in to a large dutch oven or sauce pan.
  • Add remaining ingredients except for baking soda, parmesan cheese, olive oil, salt and pepper.
  • Bring to a quick boil and immediately reduce the heat to medium low as this sauce will burn.
  • Add a pinch of baking soda, stir well and allow to simmer uncovered for 2 hours.
  • Taste the sauce for acidity. If acid level (or tang) is still high, add another pinch of baking soda and stir well. At this point do not taste the sauce as all you will taste is baking soda.
  • Cook two more hours.
  • Stir occasionally to prevent sticking. If needed, add a small amount of olive oil.
  • Eventually, you will start seeing the sauce getting darker around the edges of the pan. At this point you can season with salt and pepper and add the cooked meatballs.
  • Cook one additional hour.
  • One half hour prior to serving, stir in the parmesan cheese. This will thicken the sauce quickly.
  • This sauce is best served the next day.

Meatballs are a classic dish that many people love. Whether you are cooking for a large group, meal prepping for the week, or simply want an easy and tasty dish, all day meatball recipes are a great option. In this article, we will be discussing valuable tips to keep in mind when making all day meatballs.

Tip #1: Choose the Right Meat

When it comes to making meatballs, the type of meat you use is crucial. While beef is a popular option, it can be quite heavy and greasy. Pork, on the other hand, can be dry when cooked for long periods of time. A great option is to use a blend of beef and pork, which provides a great balance of flavor and texture. Additionally, you can also use ground turkey or chicken if you prefer a lighter option.

Tip #2: Don’t Overdo It with the Breadcrumbs

While breadcrumbs are a common ingredient used in meatballs, it’s important not to overdo it. Too many breadcrumbs can cause the meatballs to become dry and crumbly. Instead, use just enough breadcrumbs to bind the ingredients together. If you find that your meatballs are too dry or crumbly, you can add a bit of milk or egg to the mixture.

Tip #3: Use Fresh Herbs

Using fresh herbs can add a ton of flavor to your all day meatballs. Some great options include parsley, basil, and oregano. Simply chop up the herbs and mix them into the meatball mixture. If you don’t have fresh herbs on hand, you can also use dried herbs, but keep in mind that the flavor may be less pronounced.

Tip #4: Brown the Meatballs First

While it can be tempting to simply throw all of the ingredients into a slow cooker or Instant Pot, browning the meatballs first can add a ton of flavor. To do this, simply heat a bit of oil in a skillet and cook the meatballs until they are brown on all sides. This not only adds flavor but also helps to seal in the juices.

Tip #5: Add Some Parmesan Cheese

Adding some Parmesan cheese to your all day meatball mixture can add a delicious, savory flavor. Simply grate some Parmesan cheese and mix it into the meatball mixture before cooking. You can also sprinkle a bit on top of the meatballs before serving for an extra burst of flavor.
Conclusion
All day meatballs can be a delicious and easy dish to make for any occasion. By choosing the right meat, using fresh herbs, not overdoing it with the breadcrumbs, browning the meatballs first, and adding some Parmesan cheese, you can take your meatball game to the next level. These tips are sure to make your all day meatballs a crowd-pleaser that everyone will be asking for again and again.
