Fibre, anyone? This is very easy and good, too. Sometimes I lose track of the point and replace the raisins with chocolate chips.

Steps:
- Mix together all the dry ingredients.
- Stir in the buttermilk and let stand in a warm place for 1/2 hour before scraping into an oiled loaf pan.
- Preheat the oven to 350°F.
- Bake for 30 to 40 minutes, until a toothpick comes out clean when inserted in the middle.

PUMPKIN BRAN BREAD

Steps:
- Preheat oven to 325°F. Butter two 9x5x3-inch loaf pans. Dust pans with flour. Combine first 8 ingredients in medium bowl; stir to blend well. Whisk eggs, sugar and buttermilk in large bowl. Add dry ingredients; stir to combine. Add pumpkin and oil; stir until blended. Divide batter between prepared pans.
- Bake until tester inserted into center of each loaf comes out clean, about 1 hour 20 minutes. Let loaves cool 10 minutes. Cut around pan sides to loosen loaves, if necessary. Turn out loaves onto racks; cool completely. (Can be made ahead. Wrap tightly and store at room temperature 1 day or freeze up to 1 month.)

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

- 1. Stir together flour, sugar, baking powder, soda and salt. Set aside.2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and buttermilk. Let stand about 2 minutes or until cereal softens. Add egg and shortening. Beat well. Add flour mixture, stirring only until combined. Spread evenly in 8 x 8 x 2-inch baking pan coated with cooking spray.3. Bake at 425°F about 25 minutes or until wooden pick inserted near center comes out clean. Cut into squares and serve immediately.
