I made this yesterday from the recipe on the All-Bran packet. I just love this banana bread! It has a great taste and is low fat and high fibre! Perfect for morning tea or a snack. I like mine with just a little jam or peanut butter spread and served warm.

1 cup all-bran cereal
3/4 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
1/4 cup 1% low-fat milk or 1/2 teaspoon powdered dry milk
1/2 cup caster sugar
1 egg
2 tablespoons water
1 cup mashed banana (approx 2 bananas)

Steps:

  • Preheat oven to 180 degree C.
  • Combine dry ingredients and add egg, water, milk and banana.
  • Mix until well combined.
  • Spoon into a greased loaf tin.
  • Bake in oven for 30-45 minutes or until cooked when tested.
  • Note- the original recipe says to cook for 45 minutes but mine was done at 30 minutes, so I suggest testing at 30 minutes so it dosn't overcook.

2 pieces Bananas (overripe)
1 cup All-Bran
1 cup flour
1/3 cup sugar
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 pieces eggs
1/4 cup butter / margarine
1 teaspoon Vanilla
1/2 cup walnuts

Steps:

  • Preheat oven to 350
  • Soften butter / margarine
  • Beat eggs and vanilla together
  • Mash bananas and mix in All-Bran, eggs, and vanilla. Set aside 5 minutes for cereal to soften.
  • Sift or stir flour, baking powder, baking soda, salt, and sugar in a bowl and set aside
  • Grease loaf pan
  • Add half of banana cereal mixture to flour & sugar. After stirring in add the other half and stir to thoroughly mix and moisten
  • Pour melted butter over mixture and stir in thoroughly
  • Stir in chopped walnuts
  • Transfer to loaf pan and bake for 45 minutes at 350

1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup vegetable oil
1/2 cup sugar
1 egg
1 1/2 cups mashed ripe bananas
1 cup All-Bran® Original
1 teaspoon vanilla extract
1/2 cup chopped nuts

Steps:

  • 1. Stir together flour, baking powder, soda and salt. Set aside.2. In large mixing bowl, beat together oil and sugar. Add egg. Beat well. Stir in bananas, KELLOGG'S ALL-BRAN cereal, vanilla and nuts. Add flour mixture, stirring only until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray and lined with waxed paper in the bottom.3. Bake at 350°F about 1 hour or until wooden pick inserted in center comes out clean. Let cool in pan 10 minutes. Remove from pan and cool completely on wire rack.
