Yield Makes one nine-inch pie

Number Of Ingredients 6

1 recipe Thin Butter Crust
6 to 8 freshly picked firm and slightly tart apples, such as Rhode Island Greenings, Gravensteins or Granny Smiths (about 3 pounds)
granulated sugar (see Note)
ground cinnamon
about 3 tablespoons sifted all-purpose flour
3 tablespoons butter, cut in small bits

Steps:

  • 1. Prepare the pie dough, divide half and roll out each half no more than 1/4 inch thick. Line a 9-inch pie pan with one. Keep lined pan and top crust chilled.
  • 2. Preheat the oven to 375 degrees. Peel and core the apples and slice them about 1/4 inch thick. Toss with sugar and cinnamon to taste and with the flour. Fill the pie with the apple slices, mounding them somewhat in the center. Dot with butter. Cover loosely with the top crust, using a little water to seal the crusts together. Crimp the edges. Using a fork or the tip of a knife, make several vents in the top crust.
  • 3. Place in the preheated oven and bake for 1 hour or until golden brown. The smell will tell you when it is ready. Serve while still warm.

½ cup vegetable oil
2 tablespoons cold milk
1 ½ teaspoons white sugar

6 Fuji apples, cored and sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Crust: In a large bowl, mix together 1 1/2 cups flour, oil, milk, 1 1/2 teaspoons sugar and salt until evenly blended. Pat mixture into a 9 inch pie pan, spreading the dough evenly over the bottom and up sides. Crimp edges of the dough around the perimeter.
  • To Make Filling: Mix together 3/4 cup sugar, 3 tablespoons flour, cinnamon, and nutmeg. Sprinkle over apples and toss to coat. Spread evenly in unbaked pie shell.
  • To Make Topping: Using a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and butter until evenly distributed and crumbly in texture. Sprinkle over apples.
  • Put pie in the oven on a cookie sheet to catch the juices that may spill over. Bake 45 minutes.

It's the 4th of July...what better way to celebrate than with an All-American dish like homemade apple pie?? There are lots of recipes out there, but I prefer this one that calls for the addition of cinnamon, nutmeg, and ginger for some added spice. Also, I like my apple pie overflowing with apples (an apple pie isn't supposed to be flat like a pumpkin or cream pie!) so this version has LOTS! The ingredients list granny smith, but I tend to use a variety, incorporating granny smith, gold delicious, and braeburn.

2 1/2 cups all-purpose flour
1 tablespoon sugar
3/4 teaspoon salt
10 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
1/3 cup chilled vegetable shortening, diced
6 tablespoons ice water
1/2 cup sugar
1/4 cup golden brown sugar
3 tablespoons all-purpose flour
1 tablespoon lemon juice
2 teaspoons grated lemon peel
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
3 1/2 lbs granny smith apples, peeled, cored, sliced into 1/4-inch thick slices
1 tablespoon milk
1 teaspoon sugar

Steps:

  • For the Crust: Blend flour, sugar and salt in a food processor.
  • Add butter and shortening and cut in, until mixture resembles coarse meal.
  • Add 6 tablespoons ice water and process until clumps form, adding more water by teaspoonfuls if dough is dry (I never need more than 6 tablespoons).
  • Gather into ball; divide into 2 pieces.
  • Flatten each into a disk. Wrap each in plastic; chill at least 2 hours. Can be made a day ahead.
  • For the filling: Position oven rack in lowest rack of oven and preheat to 400°F
  • Mix all of the filling ingredients except apples in large bowl. It should be very dry and clumpy -- not really a 'sauce' at all.
  • Add apples and coat.
  • To assemble: Flour a sheet of parchment paper; roll out 1 dough onto paper until it is a 12-inch round.
  • Transfer to 9-inch-diameter glass pie dish by flipping the paper over, then gently pressing so that the dough is along the bottom of the pie dish. There should be an overhang all the way around.
  • Add filling.
  • Roll out second dough to 13-inch round. Cut into twelve 1-inch wide strips. Arrange 6 strips across pie, leaving gaps between the filling and the lattuce along the way (that will make weaving the others easier).
  • Form lattice by arranging 6 strips across the first strips, taking care as you go. If one breaks, don't worry--just tuck the break underneath!
  • Gently fold over the edges onto the lattice, pressing with a fork to seal.
  • Brush lattice with milk, and sprinkle lightly with additional sugar.
  • Cover edges with foil and bake pie 10 minutes.
  • Without opening the oven (I know, its so hard to resist!), reduce oven temperature to 375°F
  • Continue baking until juices are thickened and crust is golden, about 1 hour 10 minutes.
  • Allow to cool for at least one hour before eating.

CHERRY PIE FILLING:
1-1/4 cups sugar
1/3 cup cornstarch
3/4 cup cherry juice
4 cups fresh or frozen pitted tart cherries, thawed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon almond extract
BLUEBERRY PIE FILLING:
4 cups fresh blueberries, divided
3/4 cup water
1 tablespoon butter
3/4 cup sugar
3 tablespoons cornstarch

  • Combine flour, sugar and salt in a food processor; pulse to combine. Add butter; pulse until crumbly. Transfer mixture to a large bowl. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough in two, making one portion slightly larger. Shape each into a rectangle; wrap and refrigerate 1 hour or overnight., For apple pie filling, in a large saucepan, combine apples, 2/3 cup apple juice, sugar, cinnamon and apple pie spice; bring to a boil over medium heat. Cool to room temperature, stirring occasionally., Preheat oven to 425°. For crust, on a lightly floured surface roll out larger portion of dough to a 17x12-inch rectangle. Transfer to a 15x10x1-inch baking pan. Press onto the bottom and up the sides of pan. Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are golden brown, about 20 minutes. Remove foil and weights; bake 6-8 minutes longer or until bottom is golden brown. Cool on a wire rack., Meanwhile, roll out remaining dough to a 15x10-inch rectangle. Using a pastry wheel and star cutouts of varying sizes, cut out stars and stripes for decorative topping of flag pie. Bake at 400° until golden brown, about 15 minutes for stripes and 8 minutes for stars. I guess Apple Pie has always been one of my most favorite pies! I can still remember my mom, in her little kitchen, peeling the apples and rolling out her delicious, flaky crust. She never had a recipe written down, but I think I got it right...this one tastes just like hers.

crust for 2 9" pies (use for top and bottom)
1 c sugar
1/3 c flour
1 tsp nutmeg
2 tsp cinnamon
dash of salt
8 c thinly sliced, pared apples (my family loves mcintosh)
3 Tbsp butter

Steps:

  • 1. Heat oven to 425'F. Stir together sugar, flour, nutmeg, cinnamon and salt; mix with the apples until all are coated.
  • 2. Turn into pastry-lined pie pan; dot with butter. Cover with top crust, which has slits cut into it, or use a fork to make holes in the top. (This allows steam to escape.) Seal the edges and using your fingers, make a flute all around. Place onto a baking tray, to catch any spills.
  • 3. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
  • 4. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits in crust. If the top starts to get too browned, cover it with foil too

1/2 tsp ground cinnamon
1 tsp vanilla extract
1 tsp lemon juice
2 tsp cornstarch
6 oz brie cheese, sliced
4 slice pound cake
reserved apple pie filling juice
2 Tbsp orange blossom honey

Steps:

  • 1. In a saucepan, combine apples, brown sugar, cinnamon, vanilla, lemon juice, and cornstarch. Cook over medium heat until thick and bubbly. Remove and cool.
  • 2. Place 3 slices of brie onto each slice of cake. Place 2-3 TBSP drained apple pie filling on bottom cake. Place on sandwich top. Brush sandwich with melted butter. Grill at 325 degrees for 2-4 minutes. Flip and repeat. If bread is browning too quickly, reduce heat. Grill until cheese melts.
  • 3. In a small bowl, stir together apple pie filling juice and honey. Drizzle on plate and serve on the side.

1 Tbsp flour
1 tsp grated lemon peel
1/2 tsp cinnamon
1/4 tsp nutmeg
6 medium tart apples, peeled and sliced
2 pie crusts - 1 for bottom and 1 for top
1 beaten egg
1 tsp sugar

Steps:

  • 1. Preheat oven to 425 degrees
  • 2. In a large bowl combine brown and white sugar, flour, lemon peel, cinnamon and nutmeg. Mix well. Add apples to bowl and stir until well coated, stir in raisins.
  • 3. Spoon into prepared pie shell and dot with butter and sprinkle with about 1 tbsp. lemon juice or to taste depending on the tartness of your apples.
  • 4. Top with remaining crust and slit the top with a knife. Now brush with 1 beaten egg and sprinkle with 1 teaspoon of sugar. Bake until pie is golden brown about 35-40 minutes. Cool 30 minutes. 425 degrees

3 cups Granny Smith apples, peeled & sliced evenly
1-tablespoon fresh squeezed lemon juice
1/4 cup light brown sugar
1/4 cup sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons butter
1 tablespoon + 1 teaspoon cornstarch
Egg Wash:
1 Large egg. slightly Beaten
1 Tablespoon milk
2 Tablespoons sugar

Steps:

  • Pie Crust: In a food processor, add flour and salt. Pulse to mix. Add cold butter and Crisco, which has been cut into small pieces. Pulse 6 to 8 times until mixture resembles coarse meal with some small pea-size butter lumps. Drizzle 4 tablespoons ice water evenly over and pulse 3-4 times more until dough holds together. Add more water, 1 tablespoon at a time until dough holds together. Form into 2 balls, then flatten each into a disk. Wrap disks separately in plastic wrap and at least 1 hour. Divide dough into 2 pieces. On a lightly floured surface with a lightly floured rolling pin roll out one piece of dough into a 10-inch round (about 1/8 inch thick). Fit a 10-inch pie plate with one piece of dough. Reserve 2nd piece of dough for top crust. Refrigerate while preparing filling Apple Filling: 1. In a large bowl, combine apples, lemon juice, sugars, cinnamon, nutmeg & salt & toss to mix. Allow apples to sit a minimum of 30 minutes & up to 3 hours. 2. Place apples in colander over a bowl to capture the apple juices. Get at least 1/2 cup of juice. Place apples back in bowl & Toss apples with cornstarch. Set aside. 3. Place apple juice in small saucepan & over medium-high heat, add butter & boil down until syrupy. Do not stir. Preheat oven to 425 degrees. 4. Pour syrupy juices over apples, tossing gently. Place in pie shell. 5. Roll out top crust. Using a template for a large leaf, cut out enough leaf shapes from the remaining dough & place over apples forming a top crust. With remaining dough, cut a an apple shape and place on center of top crust. 6. Mix beaten egg with milk & brush top of pie with egg wash. Sprinkle with sugar. 7. Bake for 45 to 55 minutes or until the juice bubble through the slashes. Remove from oven & cool at least 4 hours before cutting. If Pie browns too quickly, cover with foil.

1 1/4 cups all-purpose flour, plus more for rolling
1/2 teaspoon fine sea salt
1/4 cup solid vegetable shortening, preferably Crisco, chilled and cut into pieces
4 tablespoons (1/2 stick) unsalted butter, chilled and cut into pieces
3 to 8 tablespoons ice water

Steps:

  • In the work bowl of a food processor fitted with the metal blade, combine the flour and salt, then add the vegetable shortening and butter. Process until the mixture resembles coarse meal, 8 to 10 seconds.
  • With the processor on pulse, add enough of the ice water, 1 tablespoon at a time, until the dough holds together without being sticky or crumbly. Shape the dough into a disk and wrap in plastic wrap. Chill until firm and the moisture has distributed evenly, about 30 minutes.
  • Flour a clean work surface and a rolling pin. (If making a double crust pie or 2 pie shells, work with one disk at a time, keeping the second disk chilled.) Place a dough disk in the center of the floured surface. Starting in the center of the dough, roll to, but not over, the upper edge of the dough. Return to the center, and roll down to, but not over, the lower edge. Lift the dough, give it a quarter turn, and lay it on the work surface. Continue rolling, repeating the quarter turns, until you have a disk about 1/8 inch thick.
  • Ease the pastry into a 9-inch pie plate. Trim 1 inch larger than the diameter of the pie plate; fold the overhanging pastry under itself along the rim of the plate. For a simple decorative edge, press the tines of a fork around the folded pastry. To make a fluted edge, using both your finger and thumb, pinch and crimp the folded dough. Chill until firm, about 30 minutes.
