ALL-AMERICAN APPLE PIE
It's the 4th of July...what better way to celebrate than with an All-American dish like homemade apple pie?? There are lots of recipes out there, but I prefer this one that calls for the addition of cinnamon, nutmeg, and ginger for some added spice. Also, I like my apple pie overflowing with apples (an apple pie isn't supposed to be flat like a pumpkin or cream pie!) so this version has LOTS! The ingredients list granny smith, but I tend to use a variety, incorporating granny smith, gold delicious, and braeburn.

Steps:
- For the Crust: Blend flour, sugar and salt in a food processor.
- Add butter and shortening and cut in, until mixture resembles coarse meal.
- Add 6 tablespoons ice water and process until clumps form, adding more water by teaspoonfuls if dough is dry (I never need more than 6 tablespoons).
- Gather into ball; divide into 2 pieces.
- Flatten each into a disk. Wrap each in plastic; chill at least 2 hours. Can be made a day ahead.
- For the filling: Position oven rack in lowest rack of oven and preheat to 400°F
- Mix all of the filling ingredients except apples in large bowl. It should be very dry and clumpy -- not really a 'sauce' at all.
- Add apples and coat.
- To assemble: Flour a sheet of parchment paper; roll out 1 dough onto paper until it is a 12-inch round.
- Transfer to 9-inch-diameter glass pie dish by flipping the paper over, then gently pressing so that the dough is along the bottom of the pie dish. There should be an overhang all the way around.
- Add filling.
- Roll out second dough to 13-inch round. Cut into twelve 1-inch wide strips. Arrange 6 strips across pie, leaving gaps between the filling and the lattuce along the way (that will make weaving the others easier).
- Form lattice by arranging 6 strips across the first strips, taking care as you go. If one breaks, don't worry--just tuck the break underneath!
- Gently fold over the edges onto the lattice, pressing with a fork to seal.
- Brush lattice with milk, and sprinkle lightly with additional sugar.
- Cover edges with foil and bake pie 10 minutes.
- Without opening the oven (I know, its so hard to resist!), reduce oven temperature to 375°F
- Continue baking until juices are thickened and crust is golden, about 1 hour 10 minutes.
- Allow to cool for at least one hour before eating.

GRAMMY'S ALL-AMERICAN APPLE PIE
I guess Apple Pie has always been one of my most favorite pies! I can still remember my mom, in her little kitchen, peeling the apples and rolling out her delicious, flaky crust. She never had a recipe written down, but I think I got it right...this one tastes just like hers.

In a grilled cheese challenge, my husband and I dared to create "dessert" sandwiches. This particular sandwich is the all-American twist on the apple pie. Instead of bread, we use frozen poundcake (thawed), add homemade apple pie filling, and brie cheese.

ALL-AMERICAN PIE CRUST
When I was her apprentice, Nathalie Dupree spent hours on my baking and pastry education, patiently showing me again and again how to create perfect pie crusts, homemade breads, puff pastry, and rolls, until I had the techniques down cold. She crafted this recipe for beginners: it's an easy crust for novices because it's made in the food processor and because of the combination of butter and shortening. Shortening does not melt as readily as butter does and makes for a more forgiving dough. As Nathalie knew, a beginner's first taste of sweet success in the pastry kitchen can be inspirational. For a double-crust pie, simply double the amounts and divide the dough before rolling out.
Yield makes one 9-inch pie crust
Number Of Ingredients 5
Steps:
- In the work bowl of a food processor fitted with the metal blade, combine the flour and salt, then add the vegetable shortening and butter. Process until the mixture resembles coarse meal, 8 to 10 seconds.
- With the processor on pulse, add enough of the ice water, 1 tablespoon at a time, until the dough holds together without being sticky or crumbly. Shape the dough into a disk and wrap in plastic wrap. Chill until firm and the moisture has distributed evenly, about 30 minutes.
- Flour a clean work surface and a rolling pin. (If making a double crust pie or 2 pie shells, work with one disk at a time, keeping the second disk chilled.) Place a dough disk in the center of the floured surface. Starting in the center of the dough, roll to, but not over, the upper edge of the dough. Return to the center, and roll down to, but not over, the lower edge. Lift the dough, give it a quarter turn, and lay it on the work surface. Continue rolling, repeating the quarter turns, until you have a disk about 1/8 inch thick.
- Ease the pastry into a 9-inch pie plate. Trim 1 inch larger than the diameter of the pie plate; fold the overhanging pastry under itself along the rim of the plate. For a simple decorative edge, press the tines of a fork around the folded pastry. To make a fluted edge, using both your finger and thumb, pinch and crimp the folded dough. Chill until firm, about 30 minutes.
- To blind bake, see directions on page 64.

All American pie recipes are rooted in the country's culinary history and have a special place in American culture.
The History of American Pie
The first pie recipes in America were brought by European settlers. Early pies were mostly fruit-filled, with apple pie quickly becoming a favorite. As the country grew and evolved, so did the varieties of pie. From pecan to pumpkin to sweet potato to key lime, each region and season had its signature flavor.
The Role of Pie in American Culture
Pie has always been associated with American culture, symbolizing a warm, nurturing home life. The dessert has been featured in American literature, such as Mark Twain's "The Adventures of Huckleberry Finn," in which the main character shares his love of pie. In pop culture, the phrase "American as apple pie" has been used to describe all things quintessentially American.
The Anatomy of an All American Pie
An all American pie can be sweet or savory, but all have a few essential components:
- The crust: Traditionally made from flour, fat, water, and salt, the crust acts as a shell for the filling.
- The filling: The star of the show, the filling can be made from a variety of ingredients such as fresh fruit, cooked meats, or custards.
- The topping: Depending on the recipe, pies may have a topping made from sugar, streusel, or whipped cream.
The Best Ingredients for an All American Pie
To make the perfect pie, it's important to start with high-quality ingredients. Fresh, seasonal fruit is ideal for fruit pies. Apples, blueberries, strawberries, and peaches are all popular choices. For savory pies, meats such as beef, chicken, and pork can be incorporated to create a hearty main dish. High-quality dairy products are also essential for custard or cream pies.
The Most Popular All American Pie Recipes
Some of the most popular all American pie recipes include:
- Apple pie: Made with thinly sliced apples, cinnamon, sugar, and butter, this classic pie is a favorite.
- Pumpkin pie: A hallmark of the fall season, pumpkin pie is made with pureed pumpkin, sugar, and spices such as cinnamon, nutmeg, and ginger.
- Pecan pie: This beloved Southern pie is made with a filling of pecans, corn syrup, and brown sugar.
- Key lime pie: A tangy and sweet pie made with fresh lime juice and sweetened condensed milk, with a graham cracker crust.
- Chicken pot pie: A savory pie filled with tender chicken, vegetables, and a creamy sauce, all encased in a buttery crust.
Tips for Making the Perfect All American Pie
Making the perfect pie can be challenging, but with a few tips and tricks, anyone can create a mouthwatering dessert:
- Keep ingredients and equipment cold: Cold butter, water, and tools such as your mixing bowl and rolling pin will help create a flaky crust.
- Use a mix of flours: A combination of all-purpose flour and pastry flour will give the crust structure and tenderness.
- Pre-bake the crust for custard pies: To prevent the bottom from becoming soggy, partially bake the crust before adding the filling.
- Make sure the filling is thick enough: A runny filling can lead to a soggy crust. Use enough flour, cornstarch, or tapioca to thicken the filling.
Whether you prefer sweet or savory, all American pie recipes are a delicious slice of Americana. With a little practice and patience, anyone can make a pie that is sure to become a family favorite.
