2 cups beef broth
5 tablespoons chili powder, divided
salt and ground black pepper to taste
2 tablespoons vegetable oil
2 small onions, diced
1 medium yellow bell pepper, diced
1 tablespoon ground cumin
½ teaspoon cayenne pepper
1 teaspoon salt, divided
6 cloves garlic, minced
2 pounds ground beef
1 (28 ounce) can diced tomatoes
1 (28 ounce) can tomato puree

Steps:

  • Rinse beans and discard any bad ones.
  • Combine beans, broth, 1 tablespoon chili powder, salt, and pepper in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • While the pressure is releasing, heat oil in a large skillet over medium heat. Add onions, bell pepper, cumin, cayenne, and 1/2 teaspoon salt; saute until soft, about 5 minutes. Add garlic and saute until fragrant, about 30 seconds. Add beef and cook and stir until browned and crumbly, 5 to 7 minutes.
  • Unlock and remove the lid of the pressure cooker. Add beef mixture to the beans, along with diced tomatoes, tomato puree, and remaining 1/2 teaspoon salt. Close and lock the lid. Select high pressure again and set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.

After my five roommates and I have this for dinner I am still left with about 30 to 40 individual servings in the freezer. This chili freezes perfectly. I make this up once every 6 months and the last bag tastes just as good as the day I made it! Before sharing this recipe I had to think long and hard because it truly is my most prized and coveted recipe. It took me years of playing around and it's just near perfect. If you win at the county fair all I ask for is honorable mention, a picture of the ribbon, a postcard from your town, and maybe your favorite pie recipe! Be sure to load it up with cheddar, sour cream, bread and nacho chips!! Also great for chili dogs!! ***Response to Reviews: I understand some people want the taste of cumin in their chili - I don't like cumin & think it has no place in chili - not in my chili anyway. As to the "no chili" flavour review, I completely understand if it is the cumin you are missing. Maybe you should have considered that before trying this recipe then writing a bad review of it.   • I usually omit the meat from one pot and make a vegetarian batch at the same time. It's good for your vegan friends and as lighter fare for lunch!

  • 1. Slice your wieners across ways. Season your meat as you normally would, divide meat into number of equal portions for the number of burgers you plan to cook.
  • 2. Now the tricky part. I thought these cow patties would good together just like normal, wrong!! They apparently have an adverse reaction to the wieners. They don't particularly want to hold together. Not wanting to add an egg, I did manage to manipulate one burger together, and added more wieners to it once I got it shaped.
  • 3. The other ones, I cut each burger portion in half, made a patty, added the wieners on top, then made another patty and covered the first one. Hence, the wieners were inside like you would put cheese inside two patties. If you use this method, be sure to seal the edges all the way around.
