1 recipe Thin Butter Crust
6 to 8 freshly picked firm and slightly tart apples, such as Rhode Island Greenings, Gravensteins or Granny Smiths (about 3 pounds)
granulated sugar (see Note)
ground cinnamon
about 3 tablespoons sifted all-purpose flour

ALL-AMERICAN APPLE PIE

All-American Apple Pie image

It's the 4th of July...what better way to celebrate than with an All-American dish like homemade apple pie?? There are lots of recipes out there, but I prefer this one that calls for the addition of cinnamon, nutmeg, and ginger for some added spice. Also, I like my apple pie overflowing with apples (an apple pie isn't supposed to be flat like a pumpkin or cream pie!) so this version has LOTS! The ingredients list granny smith, but I tend to use a variety, incorporating granny smith, gold delicious, and braeburn.

Time 4h20m

Yield 1 pie, 10 serving(s)

Number Of Ingredients 17

2 1/2 cups all-purpose flour
1 tablespoon sugar
3/4 teaspoon salt
10 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
1/3 cup chilled vegetable shortening, diced
6 tablespoons ice water
1/2 cup sugar
1/4 cup golden brown sugar
3 tablespoons all-purpose flour
1 tablespoon lemon juice
2 teaspoons grated lemon peel
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
3 1/2 lbs granny smith apples, peeled, cored, sliced into 1/4-inch thick slices
1 tablespoon milk
1 teaspoon sugar

Steps:

  • For the Crust: Blend flour, sugar and salt in a food processor.
  • Add butter and shortening and cut in, until mixture resembles coarse meal.
  • Add 6 tablespoons ice water and process until clumps form, adding more water by teaspoonfuls if dough is dry (I never need more than 6 tablespoons).
  • Gather into ball; divide into 2 pieces.
  • Flatten each into a disk. Wrap each in plastic; chill at least 2 hours. Can be made a day ahead.
  • For the filling: Position oven rack in lowest rack of oven and preheat to 400°F
  • Mix all of the filling ingredients except apples in large bowl. It should be very dry and clumpy -- not really a 'sauce' at all.
  • Add apples and coat.
  • To assemble: Flour a sheet of parchment paper; roll out 1 dough onto paper until it is a 12-inch round.
  • Transfer to 9-inch-diameter glass pie dish by flipping the paper over, then gently pressing so that the dough is along the bottom of the pie dish. There should be an overhang all the way around.
  • Add filling.
  • Roll out second dough to 13-inch round. Cut into twelve 1-inch wide strips. Arrange 6 strips across pie, leaving gaps between the filling and the lattuce along the way (that will make weaving the others easier).
  • Form lattice by arranging 6 strips across the first strips, taking care as you go. If one breaks, don't worry--just tuck the break underneath!
  • Gently fold over the edges onto the lattice, pressing with a fork to seal.
  • Brush lattice with milk, and sprinkle lightly with additional sugar.
  • Cover edges with foil and bake pie 10 minutes.
  • Without opening the oven (I know, its so hard to resist!), reduce oven temperature to 375°F
  • Continue baking until juices are thickened and crust is golden, about 1 hour 10 minutes.
  • Allow to cool for at least one hour before eating.

GRAMMY'S ALL-AMERICAN APPLE PIE

Grammy's All-American Apple Pie image

I guess Apple Pie has always been one of my most favorite pies! I can still remember my mom, in her little kitchen, peeling the apples and rolling out her delicious, flaky crust. She never had a recipe written down, but I think I got it right...this one tastes just like hers.

Provided by Angela (Grammy) Derby

Categories     Pies

Number Of Ingredients 8

crust for 2 9" pies (use for top and bottom)
1 c sugar
1/3 c flour
1 tsp nutmeg
2 tsp cinnamon
dash of salt
8 c thinly sliced, pared apples (my family loves mcintosh)
3 Tbsp butter

Steps:

  • 1. Heat oven to 425'F. Stir together sugar, flour, nutmeg, cinnamon and salt; mix with the apples until all are coated.
  • 2. Turn into pastry-lined pie pan; dot with butter. Cover with top crust, which has slits cut into it, or use a fork to make holes in the top. (This allows steam to escape.) Seal the edges and using your fingers, make a flute all around. Place onto a baking tray, to catch any spills.
  • 3. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
  • 4. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits in crust. If the top starts to get too browned, cover it with foil too

Valuable Tips for Making All-American Apple Pie Recipes

Apple pie is a favorite American dessert that has been enjoyed for centuries. Apple pie recipes are a staple during the fall and holiday seasons, and many people have their special recipes that they use every year. If you are new to making apple pie or want to improve your skills, here are some valuable tips for making an all-American apple pie.
Choose the Right Apples
The first step to making a delicious apple pie is to choose the right types of apples. Apples have different textures and levels of sweetness, so you want to select types that will hold their shape when baked and complement the other flavors in the recipe. Some popular apple varieties for pie include Granny Smith, Honeycrisp, Braeburn, and Pink Lady.
Prep Your Apples
Once you have chosen your apples, you need to prep them for the pie. Some people prefer to peel their apples, while others leave the skin on. If you decide to peel your apples, use a vegetable peeler, and remove as little flesh as possible to avoid waste. After you have peeled your apples, remove the core and seeds. You can do this with a sharp knife or an apple corer. Then, slice the apples into even pieces. This will help them cook evenly in the pie.
Add Flavorings
Apple pie can be made with just apples, sugar, and cinnamon, but adding other spices and flavorings can take your pie to the next level. Some popular spices used in apple pie include nutmeg, allspice, and ginger. You can also add lemon or orange zest to add a hint of citrus flavor. If you like your pie on the sweeter side, you can add brown sugar or honey. Just be careful not to add too much sweetness, or it will overpower the apple flavor.
Use a Store-Bought Crust or Make Your Own
The crust is an essential part of any pie, and you have two options when making an apple pie. You can either use a store-bought crust or make your own. If you are short on time or do not have experience making pie crusts, a store-bought crust is a great option. Just make sure to purchase one that is made with quality ingredients and does not have any artificial flavors or preservatives. If you want to make your own crust, there are many recipes available online. The key to a flaky and delicious crust is using cold butter or shortening and handling the dough as little as possible.
Prevent a Soggy Bottom
One of the biggest issues people run into when making apple pie is a soggy bottom crust. To prevent this, you need to blind bake your crust before adding the filling. Blind baking means baking the crust without any filling in it. To do this, preheat your oven to 375 degrees F. Line your crust with parchment paper and fill it with pie weights or dried beans. Bake for 15-20 minutes until the crust is lightly golden.
Avoid Overfilling the Pie
When adding the filling to your pie crust, be careful not to overfill it. If the filling is too high, it can spill over and make a mess in your oven. A good rule of thumb is to fill the crust about ¾ of the way full. You can always add extra filling to any leftover dough or use it to make mini pies.
Add a Crumb Topping
Traditional apple pies have a top crust that is either latticed or solid. But if you want to mix things up, you can add a crumb topping. A crumb topping is made with flour, brown sugar, butter, and sometimes oats or nuts. It adds a sweet and crunchy layer to the top of your pie and is a delicious alternative to a traditional top crust.
Brush the Crust with an Egg Wash
To give your pie a beautiful golden brown color, brush the crust with an egg wash. An egg wash is made with an egg and a little bit of milk or water. Before baking your pie, beat the egg and milk or water together and brush it onto the crust. This will create a shiny finish and help the crust brown evenly.
Bake at the Right Temperature
To bake an apple pie properly, you need to do it at the right temperature. Most apple pie recipes call for baking at 375 degrees F for 45-50 minutes. However, ovens can vary in temperature, so it is important to keep an eye on your pie while it is baking. If the crust starts to brown too quickly, cover it with foil.
Let it Cool Before Serving
After your apple pie is done baking, resist the temptation to cut into it right away. Let it cool for at least an hour before slicing. This allows the filling to set and prevents it from spilling out when you cut into it. Serve warm with a scoop of vanilla ice cream for the perfect fall dessert. In conclusion, using these valuable tips will help you make a delicious all-American apple pie. Choose the right apples, prep them properly, add flavorings, and use a store-bought crust or make one from scratch. Blind bake the crust, avoid overfilling the pie, add a crumb topping, and brush the crust with an egg wash. Bake at the right temperature, and let it cool before serving. With these tips, you are sure to impress your friends and family with your apple pie baking skills.
