1/2 teaspoon Kosher salt
1/4 teaspoon coarse ground black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Pound chicken flat until about 1/2" thick.
  • Place chicken into a greased 11"x7" baking dish.
  • Spread the sour cream over the chicken.

I call it Alice's Baked Chicken in her memory, even though I don't know where she got this wonderful recipe. I always serve this with a tossed salad and bread or rolls.

3 lbs chicken breasts, bone or boneless
1 (8 ounce) package of shredded monterey jack cheese
1 (10 1/2 ounce) can cream of chicken soup or 1 (10 1/2 ounce) can cream of mushroom soup, undiluted
1 (8 ounce) package Pepperidge Farm Herb Stuffing
1 cup melted butter or 1 cup margarine

Steps:

  • Grease a 9" X 13" baking pan.
  • Lay chicken breast in the pan, combine cheese and soup mixture and spread over the top of the chicken.
  • Sprinkle the Pepperidge Farm Herb Stuffing on top and then pour the melted butter or margarine over the top.
  • Cover tightly with foil and bake in a 350 degree oven for 45 minutes to 1 hour.

12 ounces sour cream
¼ cup grated Parmesan cheese
⅓ cup white wine
¼ cup chicken broth
1 pinch salt
1 dash lemon pepper

Steps:

  • Simmer chicken breasts in water to cover until almost tender. Drain, and reserve broth.
  • In a microwave-safe dish, mix together sour cream, parmesan cheese, white wine, chicken broth, salt and lemon pepper.
  • Cut chicken into bite size pieces, and put in sauce mixture. Cover. Microwave on High for about 10 to 15 minutes, then on Low for another 5 minutes. Make sure it doesn't burn. When sauce starts to thicken and chicken is tender, it is done!

1/2 cup butter (melted)
2 small onions (chopped)
16 ounces seasoned stuffing mix
8 skinless chicken breasts
1 pint sour cream
