I had this years ago at Bunco and fell in like with it! I have made it many times and always get asked for the recipe! Perfect for potlucks, You won't find it duplicated on the buffet! You could use Stevia in place of the sugar. It originally called for 1 1/2 cups sugar but I cut it back to 1 cup.

Number Of Ingredients 8

1 1 whole lemon large
4 eggs
1 stick butter melted
1 c sugar
1 tsp pure vanilla
1 pinch salt if desired
1 unbaked pie crust
whipped cream of your choice (aerosol can or fresh)

Steps:

  • 1. Heat oven to 350
  • 2. Fully wash and cut whole lemon into smallish chunks (leave the rind on it). remove seeds and ends
  • 3. Place in food processor or large blender - lemon chunks, butter sugar, vanilla, salt and eggs. Blend until smooth and creamy
  • 4. Pour into pie crust and place in oven
  • 5. If top is becoming too brown, cover loosely with foil and continue baking. COOL and serve with whipped cream.

Number Of Ingredients 6

1 large lemon
4 eggs
1 stick melted butter
1 teaspoon pure vanilla
1 1/2 cups sugar
1 unbaked piecrust

Steps:

  • Pre-heat oven to 350 degrees Fahrenheit. Cut lemon in small chunks leaving rind on. Remove seeds. In a blender or food processor, blend together lemon chunks, eggs, butter, vanilla and sugar until mixture is smooth and creamy. (It should be fairly runny.) Pour into unbaked piecrust. Bake at 350 degrees for about 40 minutes. If crust becomes too brown, cover gently with foil and finish baking. Serve with a dollop of fresh whipped cream.
