Time 9h15m

Yield 6 servings

Number Of Ingredients 16

1/4 cup sugar
Kosher salt and freshly ground black pepper
Two 12-ounce bottles amber beer, chilled
1 head garlic, split crosswise
2 fresh bay leaves
2 teaspoons whole black peppercorns
Two 4-pound chickens, cut into 8 pieces each
Vegetable oil, for brushing
1 cup mayonnaise
1/4 cup white wine vinegar
2 tablespoons drained prepared horseradish
2 teaspoons sugar
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Hot pepper sauce, such as Tabasco, for seasoning

Steps:

  • For the chicken: In a pot large enough to hold the chicken, combine the sugar, 1/4 cup salt and 2 cups cold water. Stir until the salt and sugar dissolve. Pour in the beer and add the garlic, bay leaves and peppercorns. Submerge the chicken in the brine. Cover and refrigerate at least 8 hours and up to overnight.
  • For the Alabama white barbecue sauce: Meanwhile, whisk together the mayonnaise, vinegar, horseradish, sugar and Worcestershire in a medium bowl until smooth. Season with 1 teaspoon salt, hot sauce to taste and a liberal grinding of black pepper. Cover and refrigerate until you're ready to cook the chicken. (Can be made a day ahead, along with the chicken brine.)
  • Prepare a grill for medium indirect grilling. Drain and rinse the chicken and pat very dry. Season the chicken lightly with salt and more liberally with black pepper. Brush lightly with vegetable oil.
  • Brush the grill grates with vegetable oil and lay the chicken, bone-side down, on the indirect heat side of the grill. Cover and cook until the skin is golden and the chicken is about three-quarters cooked (130 to 135 degrees F on an instant read thermometer), 20 to 25 minutes. Flip the chicken pieces so they are skin-side down and continue indirect grilling until the chicken is cooked through and reads 165 degrees F on an instant-read thermometer, about 15 minutes more.
  • Brush the chicken all over with some of the Alabama white barbecue sauce and move the chicken, skin-side down, to the direct heat side of the grill. Grill just until the skin crisps, about 3 minutes, moving as necessary to keep it from burning. Let rest for 5 minutes before serving.
  • Serve the remaining Alabama white sauce on the side for dipping.

Categories     main-dish

Time 40m

Yield 6 burgers

Number Of Ingredients 16

3/4 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon lemon juice
2 tablespoons white sugar
2 teaspoons freshly ground black pepper
12 slices thick cut hickory smoked bacon
2 pounds ground pork
1 tablespoon smoked paprika
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
Vegetable oil, for grill rack
6 thick slices smoked Gouda (recommended: Boar's Head)
6 kaiser rolls, split
2 1/2 cups shredded green cabbage

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • In a small mixing bowl combine the mayonnaise, apple cider vinegar, lemon juice, sugar, and black pepper. Mix until well combined and refrigerate until serving.
  • Heat a large fireproof nonstick skillet on the grill. Add the bacon and cook over medium-high heat until the bacon is crispy, about 5 minutes, flipping once. Drain on paper towels. Reserve the rendered bacon fat from the skillet.
  • Combine the pork, smoked paprika, chili powder, cayenne, salt, and pepper in a large bowl. Add 1 1/2 tablespoons of the rendered bacon fat from the skillet. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into 6 equal portions and form the portions into patties to fit the size of the rolls.
  • Brush the grill rack with oil. Arrange the patties on the rack, cover, and cook, turning once just until done, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, top the burgers with equal amounts of smoked Gouda and put the rolls, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble the burgers, spread a generous amount of Alabama White Barbecue Sauce on the cut sides of the rolls. On each roll bottom, put some shredded cabbage, a cheese-topped patty, and 2 slices of bacon. Cover with the roll tops and serve.

Alabama Barbecue Sauce Recipes: A Deep Dive When it comes to barbecue sauce, every region of the United States has its own unique twist on the classic condiment. The sauces of Alabama, however, stand out among the rest for their tangy, creamy and slightly sweet flavor profiles. In this article, we take a deep dive into the world of Alabama barbecue sauce recipes, exploring their history, ingredients, and distinct flavor combinations. History of Alabama Barbecue Sauce Recipes Alabama-style barbecue sauce owes its roots to the state's deep southern heritage and its love for all things smoked and grilled. Much like other barbecue styles, Alabama barbecue sauce was born out of necessity in the absence of other flavoring agents. Early versions of Alabama-style barbecue sauce were simple blends of mustard, vinegar, and pepper flakes. However, over time, the recipe evolved to include mayonnaise, horseradish, and other ingredients that create the now famous tangy creaminess of Alabama barbecue sauce. Today, Alabama-style barbecue sauce is generally served with pulled pork, chicken, and beef brisket but can be used with almost any grilled, smoked, or roasted meat. Ingredients in Alabama Barbecue Sauce Recipes The ingredients in Alabama barbecue sauce recipes make them stand out among other regional styles. The primary difference is the inclusion of mayonnaise in the sauce, which gives it a creamy texture and flavor. Apart from mayonnaise, other key ingredients that define Alabama barbecue sauce are: 1. Vinegar: Every good barbecue sauce needs a tangy component, and Alabama barbecue sauce recipes call for white wine vinegar or apple cider vinegar. The vinegar helps cut through the richness of the mayonnaise and other ingredients while adding acidity and flavor. 2. Brown Sugar: While Alabama barbecue sauce is mainly tangy, the addition of brown sugar gives it a slightly sweet flavor. This balancing act makes the sauce a perfect complement to smoked meat. 3. Mustard: Yellow mustard is another critical ingredient in Alabama barbecue sauce that adds a distinct natural acidity and a great depth of flavor to the sauce. 4. Horseradish: This pungent root adds its heat to the sauce, which pairs perfectly with a smoke-flavored meat. Horseradish adds a fresh note to the sauce, and its piquant flavor helps balance out the sweetness of the brown sugar. 5. Black Pepper: Just a little amount of black pepper goes a long way in Alabama-style barbecue sauce. It lends a sharp, slightly spicy kick that enhances the flavors of the other ingredients. Flavor Profile of Alabama Barbecue Sauce Recipes Alabama-style barbecue sauce is distinctive because of its tangy, creamy, and slightly sweet flavor profile. The tang comes from the vinegar, while the creaminess is thanks to the mayonnaise. The brown sugar adds a touch of sweetness while the mustard, horseradish, and black pepper give it a subtle kick. Another standout characteristic of Alabama barbecue sauce is its texture. The sauce is relatively thick and creamy, creating a luxurious and velvety consistency. How to Use Alabama Barbecue Sauce Recipes While Alabama-style barbecue sauce is primarily used to complement pulled pork or chicken, it can be used for other meat as well. Here are some ideas for using this tangy and creamy sauce: 1. As a Dipping Sauce: Pour the sauce into a bowl and enjoy it as a dip for chicken wings, roasted vegetables, or grilled shrimp. 2. As a Salad Dressing: With its smooth and velvety texture, Alabama-style barbecue sauce makes a delicious salad dressing. Mix it with fresh greens, cucumbers, and cherry tomatoes for a refreshing side dish. 3. As a Burger Sauce: Spread the sauce on your burger bun before adding your cooked beef patty. The sauce's tangy and creamy taste will add a new dimension to your burger. Conclusion Alabama-style barbecue sauce may not be the most common barbecue sauce variety in the United States, but its creamy, tangy, and slightly sweet combination of flavors makes it a prized condiment for smoked and grilled meats. The unique blend of ingredients in this famous sauce makes it a flavorful addition to any barbecue spread. So, why not give these Alabama barbecue sauce recipes a try and experience for yourself the taste of the deep south's delightfully creamy barbecue sauce?

Valuable Tips for Making Alabama Barbecue Sauce Recipes

Barbecue sauce is an integral part of any barbeque experience, and Alabama barbecue sauce is a regional variation that you cannot afford to miss. From its tangy, slightly sweet flavor to its versatility, Alabama sauce is perfect for chicken, pork or other grilled meats. Here are some valuable tips to keep in mind when making Alabama barbecue sauce recipes:
1. Ingredients matter:
The key components of an Alabama BBQ sauce include mayonnaise, vinegar, and mustard. But it is the choice of specific ingredients and its quantity that can make all the difference. For instance, Duke's mayonnaise is known to be the go-to ingredient in Alabama BBQ sauce recipes. Similarly, using apple cider vinegar in the right amount, can add the right amount of tanginess to your sauce. When you use quality ingredients, you can ensure that your sauce will taste and have the desired consistency.
2. Balance the flavors:
Balancing flavors is important in any recipe, and it is essential in Alabama barbecue sauce recipes. The heat can come from different sources like cayenne pepper, chili flakes, or hot sauce. You need to strike the right balance between the sweet, tangy, and spicy flavors so that none of it dominates the other. For this, you should not only have a good understanding of the individual flavors, but also the quantities that need to be added for a perfect balance.
3. Experiment with herbs and spices:
While the traditional Alabama BBQ sauce recipe includes basic ingredients, adding herbs and spices can take your sauce to the next level. Some popular additions include garlic powder, onion powder, dill weed, and smoked paprika. These herbs and spices can not only enhance the flavor of the sauce but also add depth and complexity to it.
4. Adjust the consistency:
The consistency of the Alabama barbecue sauce can vary according to how you like it. Some people like it thicker, while others prefer it to be thinner. It all depends on your preference and the meat that you are serving it with. If you add too much vinegar or mustard, then it can thin out the sauce, whereas adding mayo can thicken it. You can also keep your sauce simple with just four ingredients.
5. Marinate before using:
Marinating meats before cooking can elevate their flavor, and this is especially true when using Alabama barbecue sauce. Instead of using the sauce as a finishing touch, you can marinate the meat in it beforehand. This will not only give the meat a deeper flavor but also tenderize it. For this, you can make a double batch of the sauce and set some aside for marinating.
6. Use it beyond just BBQ:
Finally, Alabama barbecue sauce is not just for grilling meat. It can also be used as a dip, dressing or marinade. You can use it on roasted vegetables, as a sandwich spread, or even as a salad dressing. Just take creative liberties, and you will discover new ways to use it, beyond the traditional barbecue. In conclusion, Alabama BBQ sauce is not that difficult to make. By keeping these tips in mind, you can create a delicious and unique sauce that will add the right amount of flavor to your grilled meats. Remember, the sauce is just one component of a good barbecue, and a perfect balance of everything, including the temperature, cooking time, and seasoning, will make your meat taste great. So, give it a try, and who knows, you might find your new favorite recipe!
