For the chicken:
1 4-pound fryer chicken, cut into 10 pieces (2 breasts cut in half, 2 wings, 2 legs, 2 thighs)
1 teaspoon kosher salt
1 teaspoon ground black pepper

Cooked fried chicken can be stored in the fridge for 5 days and reheated in a 300°F oven for 8 to 10 minutes.

AIR FRYER FRIED CHICKEN

Air Fryer Fried Chicken image

Making fried chicken in an air fryer is a revelation. You can achieve a crispy crust and juicy interior without all the steps of deep-frying. A soak in seasoned buttermilk adds extra flavor-as little as 1 hour will make a difference, but overnight is even better. Because of the capacity of a standard air fryer, we cook the chicken in batches. You can rewarm the first batch in a 250-degree oven for 10 minutes if you'd like to serve it all hot at once.

Time 3h15m

Yield 4 to 6 servings

Number Of Ingredients 10

3 cups buttermilk
6 garlic cloves, crushed and peeled
Kosher salt and freshly ground black pepper
6 bone-in, skin-on chicken thighs (about 2 pounds)
6 chicken drumsticks (about 2 pounds)
2 cups all-purpose flour
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Olive oil cooking spray

Steps:

  • Combine the buttermilk, garlic, 1 tablespoon salt and 2 teaspoons pepper in a large resealable plastic bag or container. Add the chicken pieces, seal and refrigerate at least 1 hour and up to overnight, turning the bag once or twice.
  • When you are ready to cook the chicken, combine the flour, paprika, garlic powder, onion powder, 1 tablespoon salt and 1 teaspoon pepper in a shallow bowl or dish. Stir well with a fork to combine. Drizzle 2 to 3 tablespoons of the buttermilk mixture from the bag over the flour and toss well to create small lumps throughout.
  • Remove the chicken from the marinade. Spray the basket of a 3.5-quart air fryer with olive oil cooking spray and preheat to 360 degrees F.
  • Dredge 3 thighs and 3 drumsticks in the flour mixture, shaking off the excess. Place the pieces in the preheated air-fryer basket, skin-side up without touching. Spray the chicken generously with the cooking spray and air fry until the chicken is cooked through and the crust is crisp and deep golden, about 27 minutes. Check on the chicken halfway through to spray any spots that still look floury with more cooking spray and flip the drumsticks only.
  • When the chicken is done, remove it from the air fryer and season lightly with salt. Repeat the dredging and air-frying process with the remaining chicken. if you like, rewarm the first batch in an oven at 250 degrees F for 10 minutes before serving.

AIR FRYER ESSENTIALS: AWESOME FRIED CHICKEN

Air Fryer Essentials: Awesome Fried Chicken image

Made this up the other day. And, tried a new kind of marinade (new to me), with a tasty mingling of flour and spices. The end result came out juicy, with an awesome crispy exterior. The buttermilk and hot sauce marinade gave it a perfect "Southern" tang, with just a hint of vinegary heat. So yummy. So, you ready... Let's...

Time 45m

Number Of Ingredients 15

PLAN/PURCHASE
chicken breasts or thighs, bone-in, skin-on
1/2 c buttermilk
2 - 3` Tbsp hot sauce, i prefer frank's
1 - 2 dash(es) tabasco sauce (optional)
COATING ITEMS
3/4 c flour, all-purpose variety
2 tsp lemon/pepper seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp parsley flakes
1/2 tsp dried oregano
1 pinch cayenne pepper
ADDITIONAL ITEMS
oil for spraying

Steps:

  • 1. PREP/PREPARE
  • 2. You will need an air fryer or a convection oven to make this recipe. In addition, an oil bottle, for spraying, would be good to have. In fact, it would be really good to have.
  • 3. I took three bone-in, skin-on chicken breasts, and put them in three marinades. The first I cooked up after 2 hours, the second after 24 hours, and the third, after 48 hours. The 2-hour marinade was okay but lacked much flavor. The 24- and 48-hour marinades came out tasting the same... lots of good buttermilk flavor with just a hint of heat. Conclusion: In terms of time, 24 hours is the sweet spot for the marinade.
  • 4. Gather your ingredients (mise en place).
  • 5. Place the chicken in Ziploc bag, or non-reactive dish, along with the buttermilk, and hot sauce (optional tabasco).
  • 6. Cover and place in the fridge for 24 hours, or as long as you can afford.
  • 7. Preheat your air fryer to 350f (175c).
  • 8. After the allotted time mix the coating ingredients in a shallow dish, remove a chicken piece from the marinade, and thoroughly coat with the flour/spice mixture. Repeat for as many pieces you can comfortably place into the basket of your air fryer.
  • 9. Chef's Note: Do not overlap or crowd the basket. Each piece needs a bit of space.
  • 10. Place into the preheated air fryer, and use the following method: 1. Cook for fifteen minutes. 2. Open the basket and spray the chicken with a light oil, until you do not see any dry spots. 3. Continue to cook for fifteen minutes. 4. Open the fryer and take the chicken's temperature. -- Chicken is fully cooked at 165f (75c). 5. Continue to cook, checking every few minutes, until the chicken is about 5 - 7 degrees from being done. 6. Crank the heat up to 400f (205), for about 3 - 4 minutes. This will crisp up the skin. 7. Remove from air fryer, and allow to rest, before serving.
  • 11. PLATE/PRESENT
  • 12. Carve, and serve with sides of your choice. Enjoy.
  • 13. Keep the faith, and keep cooking.

AIR-FRIED CHICKEN

Air-fried chicken image

Use an air fryer to make these easy chicken thighs, and add the seasoning or sauce of your choice. It's an easy way to cook chicken when you're busy

Provided by Anna Glover

Time 50m

Number Of Ingredients 4

4 large or 8 small chicken thighs, skin on
1 tbsp sunflower or olive oil
1 tbsp plain flour
seasoning of choice (use salt and pepper, or ½-1 tsp of either smoky BBQ, ras-el-hanout, garlic granules, celery salt or garam masala)

Steps:

  • Toss the chicken thighs in the oil, making sure they are all well-coated.
  • Mix the flour with the seasoning, then toss with the chicken thighs - it will be a very light coating, but you can double the flour and seasoning if you prefer a thicker coating.
  • Arrange the chicken in one layer on the tray of an air fryer without a paddle, and program to cook for 35 mins. Check the thighs are cooked by pulling the flesh on the underside of one away from the bone - it should come away easily and there should be no pink remaining. Cook for another 5-10 mins if needed. The skin should have bubbled and crisped up, and any excess fat from the chicken will have dripped into the base of the fryer (you can discard this). Don't leave the chicken in the fryer, or the steam will make the skin soft again.

1.1 Season Your Chicken
The essence of good fried chicken is in its seasoning. There are a variety of ways to season your chicken depending on your taste preferences. Some popular seasonings include salt, pepper, garlic, onion powder, cayenne pepper, smoked paprika, and celery salt. Mix these seasonings with flour to create a delicious coating that will highlight the flavors of your chicken.
1.2 Marinate Your Chicken
Marinating your chicken adds more flavor and ensures your chicken stays moist. Here are several ways to marinate your chicken: - Use buttermilk: Submerge your chicken directly in a buttermilk mixture overnight to create a moist and crispy skin. - Use brine: Soaking your chicken overnight in a brine of water, salt, and sugar can help your chicken maintain its moisture. - Use dijon mustard and honey: Mixing dijon mustard and honey as a marinade works wonders on chicken.

2. Preparing the Air Fryer

The air fryer is the magical appliance that allows you to enjoy fried chicken without the use of oil. However, to make sure your air fryer works correctly, you need to prepare it correctly.
2.1 Preheat the Air Fryer
To get the best results, it is a good idea to preheat your air fryer before cooking. Preheating allows your air fryer to reach the right temperature before you add your chicken, which maximizes the crispiness of your chicken. Set your air fryer to the appropriate temperature, which typically ranges from 350°F to 400°F, depending on the recipe.
2.2 Line the Air Fryer with Parchment Paper
Lining your air fryer with parchment paper will prevent your chicken from sticking to the bottom of your basket. It can also help prevent any unwanted smells from lingering after cooking.
2.3 Use a Light Coating of Cooking Spray on the Chicken
Using a light coating of cooking spray on your chicken will help it cook evenly and create a crispier texture.

3. Cooking the Chicken in the Air Fryer

3.2 Flip Your Chicken at the Midway Point
Flipping your chicken halfway through cooking is crucial in ensuring your chicken cooks evenly. Use a pair of tongs to flip your chicken over gently. Doing so will allow your chicken to develop a uniform golden brown color on both sides.
3.3 Use a Thermometer to Test Doneness
The best way to confirm doneness in your fried chicken is by using a meat thermometer. Insert the thermometer into the thickest part of your chicken to get a proper reading. The chicken should register 165°F for safe consumption.

4. Serving Your Fried Chicken

After cooking your chicken, it is time to enjoy the fruits of your labor.
4.1 Let Your Chicken Rest Before Serving
It is crucial to let your chicken rest for five minutes after cooking before serving. Allowing the chicken to rest after cooking helps lock in its juices and ensures it remains moist.
