3 small mixed bell peppers (sliced)
1 small yellow onion (sliced)
1 tablespoon vegetable oil (divided)
1 tablespoon fajita seasoning (divided)
4 tortillas
pico de gallo
1 avocado (sliced)
lime crema

Steps:

  • Preheat the air fryer to 375°F (190°F) for 5 minutes.
  • Meanwhile, season the vegetables. Toss with half of the oil and half of the fajita seasoning. Add the vegetables to the Air Fryer basket and Air fry for 3 minutes.
  • As the vegetables are being air fried, season the shrimp with the rest of the oil and fajita seasoning.
  • When the 3 minutes are up, with a spatula move the vegetables to one side of the air fryer basket, and add the shrimp to the other half.
  • Air fry for 6 minutes at 375°F (190°F) flipping halfway through. Mix everything together and serve.
  • Assemble the fajitas over tortillas, and top with your favorite toppings (pico de gallo, guacamole or avocado slices, and lime crema).

1 lb raw shrimp, peeled and deveined
1/2 c olive oil
1/2 c lime juice
1 Tbsp cumin
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp chili powder
1 medium green bell pepper
1 medium red bell pepper
1 large white onion
2 jalapeno peppers

Steps:

  • 1. Add shrimp, seasonings, oil, and lime juice to Ziploc bag. Marinate in the fridge for at least 2 hours
  • 2. Cut up all veggies into strips. Remove seeds from jalapenos if you want less spicy. Add a little oil and all seasonings to veggies.
  • 3. Line your air fryer basket with foil to hold in the juices and promote steam. Add just the veggies which are oiled and seasoned and cook last 370 for 8 min.
  • 4. Open the air fryer and add marinated shrimp without excess juice on top of veggies. Cook for another 7 minutes at 370.
