Steps:
- Preheat the oven to 300 degrees F.
- Season the tomato slices on a baking sheet with 1 teaspoon of the olive oil and some salt and pepper. Place a basil leaf on top of each slice and bake until the tomatoes are wilted, about 10 minutes.
- Heat a large nonstick pan, add the remaining 1 teaspoon olive oil and place 2 ring molds in the pan. Crack the eggs into the molds, reduce the heat to low and cover. Cook over low heat until the whites have cooked through, about 4 minutes. Season with salt and pepper and top with chives.
- Spread the mayonnaise on each slice of toast. Divide the bacon, lettuce and tomato between the bread slices. Place an egg on top of each sandwich and serve.
BLT EGG SANDWICH
Steps:
- Heat a medium nonstick skillet over medium heat. Add the bacon and cook, 5 to 6 minutes, turning halfway until crisp. When cooked, set aside on a paper towel and wipe some of the fat, leaving a little to cook the egg. Crack the egg, cover and cook until the yolk is set.
- Meanwhile, toast the bread. Assemble the sandwich by putting the mayo on the bottom, then the egg, then the lettuce, bacon and tomatoes. Cut in half and eat right away.

Steps:
- Cook bacon in a skillet to desired crispyness.
- Spray outside of sandwich thins with cooking soray.
- Place sandwich thins in air fryer and cook for 1-2 minutes or until slightly crisp.
- Cook eggs in clean skillet using a paper towel to transfer some of the bacon grease from the bacon skillet to the egg skillet.
- Separate the tops of the sandwich thins and place the cheese on the bottoms, then the bacon, then the egg, place the top next to the assembled bottom in the air fryer basket.
- Cook in the air fryer until cheese melts.
- Remove from the basket and top with tomatoes and lettuce.
- Spread mayo on the inside of the tops put them onto the bottom assembly and serve.

- Preheat an air fryer to 350 degrees F (175 degrees C).
- Center a mason jar lid, upside down, on a 5-inch square of aluminum foil. Fold the foil up and around the lid to act as a round mold. Spray the foil with nonstick spray and crack egg into the center. Season with salt and pepper.
- Place egg mold and frozen sausage patty next to each other in the air fryer basket; cook for 4 minutes. Flip sausage patty over, add English muffin halves, and cook 4 minutes more.
- Place one English muffin half on a sheet of parchment paper. Add cheese, sausage patty, and egg. Top with remaining English muffin half. Wrap and go.
