WASABI AHI TUNA TARTARE

Wasabi Ahi Tuna Tartare image

An easy sushi inspired tuna appetizer for two. I use 100% cold pressed unrefined peanut oil because it retains a strong peanut aroma and taste. The furikake does all the heavy lifting in this recipe.

SEARED AHI TUNA AND AVOCADO TARTARE

Seared Ahi Tuna and Avocado Tartare image

Michael Shrader of Nine Restaurant Group in Palm Springs, Florida, writes: "Both sides of my family cooked a lot when I was growing up, so I've had plenty of inspiration to draw on as a chef. From my mother's Sicilian heritage, I learned about homemade pasta, braised meats, and biscotti-before they became fashionable. My dad is part German, and he was known for his talents working the grill. On my days off from the restaurant, I cook for my wife at home. We tend to eat light, and I cook with foods that are in season since I've never been one for complicated dishes. It's just not my style. I'd rather have sliced tomatoes with a good olive oil or pasta with vegetables than something fussy." A sophisticated, fresh, and spicy dip for tortilla chips or baguette rounds.

SEARED AHI TUNA TARTARE WITH AVOCADO

Seared Ahi Tuna Tartare With Avocado image

From epicurious.com. I have to say, I had to muster up all of my willpower not to eat this all in one sitting. This is a lot like ceviche, without the long wait for the lime juice to "cook" the fish. If you're preparing this far ahead of time, you may want to add the avocado at the last minute (it will discolor if it sits for too long). I hope you like it!

Provided by á-8003

Number Of Ingredients 11

6 ounces sushi-grade tuna
Scallions
2 avocados
1 clove garlic, grated or minced
1 teaspoon grated ginger
Lime juice
1/2 teaspoon sesame oil
Salt
Pepper
1 teaspoon honey
Dash soy sauce

Steps:

  • Dice the tuna into small cubes. Chop the scallions. Scoop out the inside of the avocado and dice into small pieces, drizzle with a bit of lime juice to keep from browning. Mix the scallions, tuna and avocado in a bowl. To make the sauce (again, this should be tailored to your taste because all of the flavors are very strong), combine soy sauce, honey, sesame oil, grated ginger and garlic, salt and pepper to taste. Mix together gently the sauce and the ingredients, do not over mix as the tuna and avocado are very delicate.

Valuable Tips for Making Ahi Tartare Recipes

Ahi tartare is a popular appetizer that is perfect for any occasion. It is a dish that requires precision and skill to make, but once mastered, it can elevate any meal. Here are some valuable tips for making ahi tartare recipes.

1. Use High-Quality Ahi Tuna

The key to making a great ahi tartare is using high-quality ahi tuna. Look for fresh, sushi-grade ahi tuna at your local fish market or grocery store. The tuna should be bright red with a firm texture and a fresh, ocean-like smell. Avoid any tuna that looks dull or has a strong odor.

2. Keep Your Tools and Ingredients Cold

Cold ingredients and tools are essential for making ahi tartare recipes. The tuna needs to be kept as cold as possible so that it stays firm and doesn't break down. Tools like knives and bowls should also be refrigerated or placed in ice water before use. Keeping everything cold will help maintain the freshness and quality of the tuna.

3. Cut the Tuna Into Small, Uniform Pieces

The presentation of the ahi tartare is critical, and the size and shape of the tuna pieces play a big role. Cut the tuna into small, uniform pieces, about 1/4 inch to 1/2 inch cubes. This will ensure that each bite is balanced and easy to eat. Try to be as precise as possible when cutting the tuna, and aim for consistency in size and shape.

4. Add Flavor and Texture with Seasonings and Mix-Ins

While the freshness of the tuna is the star of the show in ahi tartare, adding some complimentary flavors and textures can take it to the next level. Some popular additions include diced avocado, cucumber, and mango, as well as chopped cilantro and jalapeno. These mix-ins can add a nice contrast to the tender tuna and make each bite more flavorful.

5. Use Acid to Brighten the Flavor

Ahi tartare can be a rich dish, and a bit of acid can help balance it out. Adding some lime or lemon juice can brighten the flavor and make it more refreshing. Be careful not to use too much acid, as it can overpower the delicate flavor of the tuna.

6. Let the Ahi Tartare Rest Before Serving

After preparing the ahi tartare, let it rest in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld together and the tuna to absorb the other ingredients. It will also make it easier to shape and serve the tartare if it has had a chance to chill and firm up in the fridge.

7. Serve with the Right Accompaniments

The presentation of ahi tartare is just as important as its flavor. Serve it on a plate or bowl with some decorative touches, like a lemon wedge or a sprinkle of chopped herbs. Some popular accompaniments include wonton chips or toasted pita bread, which can provide a nice crunch and a sturdy base for the tartare. A light drizzle of soy sauce or a wasabi mayo can also complement the flavors well.

Conclusion

With these valuable tips, making ahi tartare recipes can become a staple in your kitchen. It's a dish that showcases the beauty and freshness of the sea, and with the right techniques and ingredients, it can be a crowd-pleaser at any gathering. Enjoy!
