My DBIL was born in Norway. He will only eat Cucumber Salad that is made the Norwegian way which has with sugar added. It sort of gives it a sweet/sour flavor and is very good! I've eaten it many times at my sister's home. Posted for ZWT 2010. Cooking time is refrigeration time.

PICKLED CUCUMBER SALAD (AGURKESALAT)
This recipe is a stable in the Nordic kitchen and can be eaten with any cuts of meat or chicken. UPDATE- I should mention that Danes serve the cucumbers in a bowl on the table with the liquid, each person serve themselves and fork out the cucumbers - meaning that the cucumbers are supposed to be eaten without the pickling liquid.

GRANDMA VARGA'S HUNGARIAN CUCUMBER SALAD (UBORKASALATA)
This is the best cucumber salad I have ever had. This is my grandmothers recipe, (she was from Nagyszentmiklos) and this is a perfect companion dish for chicken paprikas, although I could make a meal out of it. This will quickly become your favorite way to eat cucumbers!

Steps:
- Slice cucumbers very thinly, preferably using a mandolin.
- Take a colander, put in a small layer of cucumbers, then sprinkle with a small amount of the salt.
- Continue this method until all the salt and cucumbers are used up.
- Cover the cucumbers with a plate inside the colander, and put a very heavy weight on top.
- Make sure the colander is in a large bowl, because the cucumbers will lose alot of water.
- Let them sit for 1 hour.
- In the meantime, chop the dill and finely mince the garlic, put aside.
- After 1 hour, take a handful of cucumbers, and squeeze out as much juice as you can, and continue until they are all done.
- Rinse thoroughly with water, drain well.
- After the cucumbers are done, return to the colander, and weight down one more time for about 15 minutes.
- You do not have to squeeze out the juice again with your hands Combine all ingredients in a large bowl, except the paprika.
- After mixing thoroughly, put in a nice serving dish, and sprinkle with the paprika.
- Chill for at least 2 hours.
- Enjoy.
- Nutritional information shows a high amount of sodium, but the vast majority is pressed out by your hands. The main function of the kosher salt is to purge the moisture out of the cucumbers.

The basic ingredients for agurlce salat are cucumbers, vinegar, and spices. The cucumbers were peeled and sliced into thin rounds, and then placed in a dish with vinegar and spices. The spices used in medieval cucumber salad recipes varied depending on the region and personal tastes, but commonly included salt, black pepper, and mustard seed. Agurlućə Salat or Medieval Cucumber Salad is a traditional Azerbaijani dish, originated from the medieval ancient city of Agurlućə. This salad is made by soaking cucumbers in vinegar or lemon juice, as well as adding herbs and spices to give it a delicious aroma and taste. Here are some valuable tips that you may find useful when making Agurlućə Salat or Medieval Cucumber Salad, which can be helpful to ensure that your salad is the best and most authentic.
1. Choose the Right Cucumbers
The texture and water content of cucumbers can vary, which can impact the overall taste and texture of Agurlućə Salat. Selecting the right cucumber varieties is crucial in ensuring the success of your salad. Ideally, you'd want to choose cucumbers that are firm, crisp, and have a thin skin, so they absorb the vinegar or lemon juice easily. Persian and English cucumbers are best for making Agurlućə Salat, but if you're unable to find these varieties, regular cucumbers can be used too.
2. Soaking the Cucumbers
Agurlućə Salat is made by soaking cucumbers in vinegar or lemon juice, which makes a great base for the salad's flavor. The longer the cucumbers soak, the more tangy and flavorful they will become. However, don't soak the cucumbers for too long, because they will become too sour and mushy. The ideal soaking time for cucumbers is between 20 minutes to an hour.
3. Season the Salad with Herbs
Adding herbs to Agurlućə Salat is essential to give it a unique and appetizing taste. Dill, mint, and basil are the most commonly used herbs for this salad. Adding chopped fresh herbs can bring out the cucumber's flavor and give the dish a bright and fresh taste. You can also use dried herbs if you don't have fresh ones, but be sure not to use too much as the flavor of dried herbs can be overpowering.
4. Add Red Onions
Red onions are a popular ingredient in Agurlućə Salat, as their tangy and slightly sweet flavor complements the cucumbers and herbs perfectly. A small amount of red onions can add an extra dimension of flavor to the salad. Be sure to slice them thin, so they can be evenly distributed throughout the salad.
5. Use Fresh Lemon Juice or Vinegar
The main ingredient in Agurlućə Salat's dressing is either vinegar or fresh lemon juice. Both of these ingredients can add tanginess and zest to the salad, and are great for breaking down the cucumber's texture. Be sure to use fresh lemon juice or good-quality vinegar for the best flavor.
6. Chill the Salad
One of the best things about Agurlućə Salat is that it's delicious when it's cold. To make sure that your salad is perfectly chilled, place it in the refrigerator for at least 30 minutes before serving. If you live in a hot and humid climate, keep the salad in a cooler or icebox until serving.
7. Serve with Flatbread
Agurlućə Salat is often served with flatbread, which can be used to scoop up the salad and enjoy it as a wrap or sandwich. Flatbreads such as lavash, pita, or naan are common choices for serving with Agurlućə Salat. If you prefer a gluten-free option, serve the salad with crispy lettuce cups instead.
In conclusion, Agurlućə Salat or Medieval Cucumber Salad is a simple but delicious dish that can be served as an appetizer or light side dish. By following these tips, you can create a perfect Agurlućə Salat that's full of flavor and texture. Remember to choose the right cucumbers, soak them correctly, use fresh herbs and lemon juice or vinegar, chill the salad, and serve it with flatbread for an authentic experience.
