ORANGE COCONUT SCONES

Orange Coconut Scones image

These scones have a delicate orange flavor as to not dominate the coconut. If you are looking for a more prominent flavor of orange, add more freshly grated orange zest to the dough and/or be sure to use the orange glaze.

Categories     main-dish

Number Of Ingredients 8

3 1/2 cups all-purpose flour
1/4 cup sugar
3 tablespoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
Small jar honey (recommended: lavender blossom)
Medium jar 1 1/2 cups semisweet chocolate chunks
Small jar preserves

Steps:

  • In a large mason jar, using parchment paper as a funnel, carefully pour in the dry ingredients in alternating layers. Line container with tea towels and place all items inside. The recipe card should read as follows:
  • To make your cinnamon-chocolate scones, start by preheating the oven to 375 degrees. In a mixer fitted with a paddle attachment (or using a hand mixer), mix the dry ingredients. Grab a stick of butter from the refrigerator, cut it into pieces, and with the mixer running, and add the butter and mix until coarse and sandy. You should still be able to see small lumps of butter. Head back to the refrigerator and grab the milk. Measure out a cup and a quarter, then add it and mix until almost combined. Next, add the chocolate chunks and mix just to distribute them evenly through the dough. Do not overmix; there may still be some flour not mixed in.
  • Turn the dough out onto a lightly floured surface. Knead the dough 10 times to bring it together and smooth it out. Using a lightly floured rolling pin, roll out the dough 1-inch thick. Using a the biscuit cutter, cut out circles. Using a spatula, transfer to an ungreased sheet pan. Knead the scraps together just until combined, then roll out again and continue cutting out circles until all the dough is used. Bake until light golden brown, about 15 minutes. When they're all done, serve with honey and jam. YUMMY!

Eggs
Eggs are added to the dough to help bind it together and give the scones a richer flavor.
Butter
Cold unsalted butter is used in this recipe to create a flaky texture in the scones. The butter is cut into small pieces and then mixed into the flour mixture until it looks like coarse crumbs.
Orange zest and juice
Fresh orange zest and juice are added to the scone dough to give it an aromatic citrus flavor.
Shredded coconut

Aggies Orange Coconut Scones are a delicious and unique twist on the traditional British scone recipe. The combination of orange and coconut gives these scones a refreshing and tropical flavor that is perfect for any occasion. If you are planning to make Aggies Orange Coconut Scones, there are a few valuable tips that you should keep in mind to ensure the best possible results.

Tip 1: Use Fresh Ingredients

Using fresh ingredients is crucial when making Aggies Orange Coconut Scones. The orange zest adds a fresh and zesty flavor to the scones, and using fresh orange juice will enhance the orange flavor even more. The coconut flakes are another key ingredient that needs to be fresh. Using stale or old coconut flakes can result in a stale and unpleasant flavor.

Tip 2: Use Cold Butter

Using cold butter is crucial when making scones. Cold butter creates small pockets of air in the dough, which results in a light and fluffy texture. It also helps to prevent the butter from melting before the scones are baked, which can result in flat and tough scones. You should cut the butter into small cubes and place it in the freezer for 10-15 minutes before using it.

Tip 3: Don't Overmix the Dough

Overmixing the dough can result in tough and dense scones. You should mix the dry ingredients and the butter until the mixture resembles coarse crumbs. Then, you should add the wet ingredients and mix the dough just until it comes together. Be careful not to overmix the dough or knead it too much.

Tip 4: Use a Pastry Cutter

Using a pastry cutter is the best way to cut the butter into the dry ingredients. A pastry cutter creates small, uniform pieces of butter that are perfectly incorporated into the dough. It is also easier to use than a fork, and it saves time and effort.

Tip 5: Use a Parchment-lined Baking Sheet

Using a parchment-lined baking sheet helps to prevent the scones from sticking to the pan and makes the cleaning up process much easier. You should place the scones on the baking sheet, leaving enough space between them for air to circulate. This will help the scones to bake evenly and prevent them from becoming soggy.

Tip 6: Brush With Egg Wash

Brushing the scones with egg wash before baking will give them a golden brown color and a shiny appearance. To make an egg wash, whisk together an egg and a tablespoon of water. Use a pastry brush to lightly brush the surface of the scones with the egg wash.

Tip 7: Let Them Cool Before Serving

Letting the scones cool for a few minutes before serving will help them to set and prevent them from falling apart. You should transfer the scones to a wire rack and allow them to cool for 10-15 minutes. This will also make them easier to handle and to cut.

Conclusion

Aggies Orange Coconut Scones are a delicious and unique twist on the traditional scone recipe. By following these valuable tips, you can ensure that your scones have a light and fluffy texture, a golden brown color, and a refreshing and tropical flavor. With a little bit of patience and attention to detail, you can create a batch of scones that will impress your friends and family. Enjoy!
