CHIPOTLE AGAVE CHICKEN WINGS

Steps:
- In a large bowl or baking dish, add all the ingredients for the wing marinade and mix to combine. Add the chicken wings and mix well to make sure all of the wings are coated. Cover tightly with plastic wrap and refrigerate for a couple of hours or overnight.
- Peheat oven to 450 degrees F. Place a cooling rack onto a lined (with aluminum foil) rimmed backing sheet and brush the cooling rack with vegetable oil. Remove the wings from the marinade and place them directly onto the cooling rack. Bake for 40 to 45 minutes, flipping once after 25 minutes, until crisp and browned on all sides.
- While the wings are baking, place a small saucepan over medium heat and add all of the ingredients for the wing sauce; and bring to a simmer. Whisk to emulsify and combine. Turn off the heat and set aside.
- In a small bowl, combine the dipping sauce ingredients; stir well and set aside.
- Once the wings are ready, place them in a large bowl. Whisk the agave wing sauce once more ; then pour over the wings and toss well so that all the wings are coated. Serve with the crema dipping sauce on the side.

- Coat chicken with agave set aside. Combine buttermilk baking mix, mustard, paprika, salt and pepper in a shallow dish dredge chicken in mixture. Heat 1/2 inch oil to 375°F in a 12-inch skillet over medium heat. Carefully place chicken in hot oil and cook about 5 minutes or until underside of chicken is golden turn chicken pieces and cook about 5 minutes, turning as needed. Reduce heat to low and cook 15 to 20 minutes more or until juices run clear. Remove chicken drain on paper towels.TIP: Chicken can be browned in hot oil, placed on baking sheet and baked at 350°F for 25 to 35 minutes or until chicken juices run clear.

Step 1: Marinate the chicken
Start by marinating the chicken in buttermilk for at least 2 hours, or overnight for best results. This will help tenderize the meat while adding flavor and moisture. The longer the chicken marinates, the more tender and flavorful it will be.Step 2: Prepare the dry mixture
In a large bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. This will be used to coat the chicken before frying.Step 3: Heat the oil
Heat enough vegetable oil in a deep frying pan to reach a depth of 1 inch. Heat the oil over medium heat until it reaches a temperature of 350°F.Step 4: Coat the chicken in the dry mixture
