GROWN UP "FRANKS AND BEANS"

Grown Up

Provided by Giada De Laurentiis

Categories     main-dish

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

3 tablespoons olive oil
1 pound spicy Italian sausage (about 5 links)
8 ounces bacon, sliced into 1/3-inch pieces
2 cloves garlic, minced
1 medium onion, small diced
2 cups grape tomatoes, halved
1/2 teaspoon smoked paprika
Salt
1/4 teaspoon freshly ground black pepper
3 cups low-sodium chicken broth
Two 15.5-ounce cans cannellini beans, drained and rinsed
4 sprigs fresh thyme, leaves removed and chopped
2 sprigs fresh rosemary, leaves removed and chopped
1 cup ditalini pasta or elbow macaroni

Steps:

  • Heat a 10-inch straight-sided skillet over medium-high heat. Add the olive oil and continue to heat. Pierce each sausage link twice with the tip of a pairing knife. Add the sausages to the hot pan and brown evenly on all sides, 6 to 8 minutes. Remove the sausages to a plate to cool slightly. When cool enough to handle, slice each link on the bias into 1/2-inch pieces. Set aside.
  • Reduce the heat to medium. To the hot skillet, add the bacon. Cook until it is brown and crisp. Add the garlic and onions and cook, stirring regularly, until the onions begin to soften, about 3 minutes. Add the tomatoes and cook, stirring occasionally, until the tomatoes begin to blister and break down, about 10 minutes. Add the paprika, 1/2 teaspoon salt and the pepper and cook for another 2 minutes. Add the chicken broth, drained beans, thyme and rosemary and allow the mixture to return to a simmer. Nestle the sausages back in and add any juice that may have collected on the plate. Allow the mixture to cook until the sausages are cooked through, about 10 minutes.
  • Meanwhile, in a pot of rapidly boiling salted water, cook the pasta for 8 minutes. Drain and immediately pour the cooked pasta into the bean mixture to finish cooking, about another 3 minutes.

JAMAICAN RED BEANS OVER RICE

Jamaican Red Beans over Rice image

This is a yummy recipe that can be used as either a side dish or a great vegetarian main dish! And with the warm weather finally here I've been experimenting with Island recipes, Jamaican being some of my favorite "flavors". My fiancee' went wild over this with Grilled Jerk Chicken made from the authentic Jamaican Jerk Sauce recipe. I hope you enjoy it as much as we did. (p.s. I've done this the long way and the short-cut method and while the taste is slightly different both are VERY good) Work time includes soaking of beans.

Time 6h20m

Yield 10 serving(s)

Number Of Ingredients 13

1 1/2 cups dried kidney beans (light or dark)
2 teaspoons salt
1 garlic clove, crushed
1/2 cup unsweetened coconut milk
2 scallions, chopped
2 tablespoons vegetable oil
2 sprigs fresh thyme
1 1/2 teaspoons ground allspice
1 whole jalapeno pepper
1 bell pepper, chopped
2 medium yams, peeled and diced
4 cups cooked long-grain rice
salt and black pepper

Steps:

  • In a large pot, heat about 8-10 cups of water to boiling (enough water to cover beans by about 1 inch). Add dry beans and boil 2 to 3 minutes. Remove pot from heat, cover and let stand about 4 hours or overnight. Drain the beans thoroughly and rise.
  • Add enough fresh water to just cover beans, add garlic and salt, stir. Simmer about 30 minutes until they begin to get tender (not cooked through). Save 3 cups liquid, discard remaining liquid and garlic clove.
  • In the pot sautee yams, allspice, scallions and peppers in oil until the scallions begin to soften. (2-3 minutes)
  • Return the beans and add the reserved liquid to the pot with the coconut milk and simmer about another 10-20 minutes stirring occasionally until the beans are soft and yams are cooked thoroughly. Serve over cooked rice in individual bowls.
  • Shortcut method: drain and risne two (2) 12oz. cans of light or dark kidney beans. Skip to sautéing the vegetables and spices (add garlic to the sautee' pot) When they are soft add the drained/rinsed beans and about 1-1/2 cups of water and continue with recipe from there.

WEEKDAY BLACK BEANS AND RICE

Weekday Black Beans and Rice image

My family loves this recipe and it's so easy to throw together after work. It's pretty spicy, how spicy depends on the andouille sausage that you use, mine was quite hot and so the resulting dish was spicy hot, but good. I reduced the amount of red pepper flakes to appease my family's preference. This will make your house smell as if you've been cooking, rather than out working, all day! I found this in the Chicago Tribune, the author, Donna Pierce, re-worked her Grandma's recipe to make it after-work friendly.

What is "After Work Franks n Beans over Rice Recipes"?

After a long day of work, sometimes you just want a quick and easy meal that is also satisfying and delicious. "After work franks n beans over rice recipes" are a popular choice for people who are short on time but still want to create a hearty, flavorful meal. These recipes typically consist of hot dogs (or "franks") and canned baked beans that are simmered together on the stove or in the oven, then served over a bed of rice. The dish is often seasoned with spices like onion powder or paprika, and can also incorporate additional ingredients like diced onions, sliced peppers, or grated cheese.

The History of Franks n Beans

The combination of hot dogs and baked beans has a long history in American cuisine. The dish is often associated with cookouts, camping trips, and other outdoor activities, as it is easy to make over a campfire or grill. Some historians believe that franks n beans may have originated during the Civil War, when soldiers cooked hot dogs and beans together in their mess kits. Others contend that the dish became popular during the Great Depression, when canned baked beans and hot dogs were inexpensive and readily available. Regardless of its origins, franks n beans has become a classic comfort food that is beloved by many Americans.

The Benefits of Franks n Beans over Rice

While franks n beans on their own can be a satisfying meal, serving them over rice has several benefits. First, rice provides a neutral base that can help balance out the strong flavors of the hot dogs and beans. Additionally, rice is a versatile grain that can be prepared in many different ways. Whether you opt for white rice, brown rice, or a blend of different types, you can customize your franks n beans dish to suit your preferences. Finally, pairing franks n beans with rice can make the meal more filling and satisfying. Rice is a complex carbohydrate that takes longer to digest than simple carbohydrates like sugar. This means that it can help you feel full and energized for longer periods of time.
Healthy Modifications of Franks n Beans over Rice Recipes
While franks n beans over rice is a tasty and convenient meal, it can also be high in calories and sodium. If you are looking to make this dish a bit healthier, there are several modifications you can make. First, consider using turkey or chicken hot dogs instead of traditional beef hot dogs. These options are leaner and contain less fat and calories. You can also choose to make your own baked beans from scratch instead of using canned varieties. Homemade baked beans are often lower in sodium and can be customized to your taste preferences. Finally, consider adding more vegetables to your franks n beans recipe. Adding diced onions, peppers, or mushrooms can not only boost the nutritional content of the dish, but also add more flavor and texture.
Conclusion
After work franks n beans over rice recipes are a quick and easy meal that can be customized to suit your preferences. With a bit of experimentation and modification, you can create a delicious and satisfying meal that is also healthy and nutritious. So the next time you are short on time but still want a hearty meal, consider giving franks n beans over rice a try. Your taste buds (and your stomach) will thank you!
