Time 2h

Number Of Ingredients 18

1 cup all purpose flour (, spooned and leveled)
2/3 cup cocoa powder (, I used dutch processed)
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegetable oil
1 and 1/4 cup granulated sugar
3 large eggs (, room temperature)
2 teaspoons vanilla
3 tablespoons sour cream (, room temperature (or plain yogurt))
2/3 cup buttermilk (, room temperature*)
1 and 1/4 cups unsalted butter (, softened to room temperature)
4-5 cups powdered sugar (, sifted)
1/4 teaspoon salt (, to taste)
1/4 cup whipping cream/heavy cream**
1/2 - 2 teaspoons mint extract
green food coloring
mini chocolate chips for decorating

Steps:

  • Preheat the oven to 350F degrees and line 2 12-cavity muffin tins with cupcake liners. The recipe will make about 18-20 cupcakes total.
  • First - whisk together the dry ingredients (flour, cocoa, baking soda, baking powder and salt) in a large bowl.
  • In a separate large bowl beat together the oil, sugar, eggs, vanilla and sour cream using a stand or hand-held electric mixer until combined and no sugar lumps remain. With the mixer on low speed add in about half of the flour mixture followed by half of the buttermilk until combined. Turn off the mixer and scrape down the sides of the bowl as needed. Repeat with the second half of the flour mixture and buttermilk until smooth.
  • Spoon the batter into the prepared muffin pan - you should end up with 18-20 cupcakes total. Bake for 15-17 minutes until an inserted toothpick comes out clean. Allow to cool fully before frosting.
  • While the cupcakes are cooling, make the frosting. Using a stand or hand-held electric mixer beat the butter on medium speed until the color has lighted and the butter is fluffy. Turn down the mixer to low and add in about 1/2 to 1 cup of icing sugar at a time. After almost combined, turn the mixer to high speed and beat for 5-10 seconds. Repeat with the rest of the icing sugar. Once almost all of the icing sugar has been added, beat in the whipping cream 1 tablespoon at a time until the desired consistency is reached. Then add in the mint extract about 1/2 teaspoon at a time along with the green food coloring until the desired color and level of minty-ness is reached.
  • Frost the cupcakes using a piping bag or with the flat-edge of a knife. Sprinkle with mini chocolate chips for decoration.

Number Of Ingredients 16

1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup milk
1/2 cup unsweetened cocoa powder
3/4 cup granulated sugar
3/4 cup vegetable oil
1 large egg
1 teaspoon pure vanilla extract
1/3 cup chopped mint chocolates (such as Andes)
1 1/2 sticks (12 tablespoons) unsalted butter, melted
1 cup unsweetened cocoa powder
3 cups confectioners' sugar
1 1/2 cups marshmallow cream
1/4 cup milk
Nonpareils and/or coarse sugar, for topping

Steps:

  • Make the cupcakes: Preheat the oven to 350 degrees F and line a 12-cup muffin pan with nonstick liners. Whisk the flour, baking soda and salt in a medium bowl and set aside. Valuable Tips When Making After Dinner Mint Chocolate Cupcakes Recipes

After dinner mint chocolate cupcakes are an indulgent dessert that people of all ages love. The rich chocolate cupcakes with a hint of the refreshing mint flavor are great for any occasion, from birthday parties to dinner parties. However, making these cupcakes can be a bit challenging if you don't have the right tips and tricks. In this article, we will discuss some valuable tips that you can use when making after dinner mint chocolate cupcakes recipes.
Tip #1 Use High-Quality Ingredients
When it comes to making after dinner mint chocolate cupcakes, using high-quality ingredients is critical. The quality of your ingredients can make or break the taste of your cupcakes. Use fresh and high-quality cocoa powder, chocolate chips, butter, and sugar to ensure the best flavor. Also, make sure to use a high-quality mint extract or peppermint oil for the mint flavor.
Tip #2 Get the Right Cupcake Liners
The cupcake liners you use can also affect the final outcome of your after dinner mint chocolate cupcakes. Use high-quality, non-stick liners to prevent your cupcakes from sticking to the liners. Also, make sure that the liners fit well in your muffin tin to prevent the cupcakes from spreading out while baking, resulting in misshapen cupcakes.
Tip #3 Use Room Temperature Ingredients
Using room temperature ingredients is another valuable tip when making after dinner mint chocolate cupcakes. Room temperature ingredients, such as butter and eggs, mix together more easily and result in a smoother batter. If you use cold butter, it will take longer to cream with sugar, and this may result in a lumpy batter. Additionally, if you use cold eggs, they may not mix properly with the other ingredients, making it difficult to achieve a smooth batter.
Tip #4 Make Sure Your Oven Is at the Right Temperature
To achieve perfect after dinner mint chocolate cupcakes, make sure that your oven is preheated to the right temperature. If your oven is too hot or too cold, your cupcakes may not rise properly, and they may become dry or burnt. Use an oven thermometer to ensure that your oven is at the right temperature before you start baking.
Tip #5 Don't Overfill Your Cupcake Liners
Overfilling your cupcake liners is a common mistake that many people make when baking after dinner mint chocolate cupcakes. When you overfill your liners, the batter spills over the edges, making it hard to remove the cupcakes from the liners. Additionally, the cupcakes may become unevenly cooked, resulting in an unappealing look. Fill your liners 2/3 to 3/4 full to ensure that your cupcakes are evenly cooked and easy to remove from the liners.
Tip #6 Use a Scoop for Even Cupcake Sizes
Using a scoop to measure your cupcake batter ensures that you have even-sized cupcakes. This is especially important if you plan to decorate your cupcakes, as the decorations will look better on cupcakes that are the same size. Also, using a scoop will save you time when filling your liners, and you will have less mess to clean up.
Tip #7 Let Your Cupcakes Cool Completely Before Decorating
Once your after dinner mint chocolate cupcakes are baked, let them cool completely before decorating them. If you decorate your cupcakes while they are still warm, the frosting will melt, ruining your decorating efforts. Additionally, if you store your cupcakes before they have completely cooled, moisture may accumulate on the frosting, making it look unappealing.
Tip #8 Store Your Cupcakes Properly
To keep your after dinner mint chocolate cupcakes fresh, store them in an airtight container at room temperature. This will prevent them from becoming stale and will keep them fresh for up to three days. If you want to keep your cupcakes fresh for longer, store them in the refrigerator for up to seven days. However, when you store your cupcakes in the fridge, make sure that they are in an airtight container and away from any strong-smelling food items.
Conclusion
After dinner mint chocolate cupcakes are a crowd-pleasing dessert that is perfect for any occasion. By following the tips we have discussed in this article, you can ensure that your cupcakes turn out perfectly every time. Use high-quality ingredients, the right cupcake liners, and room temperature ingredients to create a smooth batter. Make sure your oven is at the right temperature, don't overfill your cupcake liners, and use a scoop for even cupcake sizes. Let your cupcakes cool before decorating them, and store them properly to keep them fresh. By following these tips, you can make yummy after dinner mint chocolate cupcakes that your family and friends will love.
