DAD'S LEFTOVER TURKEY POT PIE
Turkey pot pie like you have never tasted before. It won't last long.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the peas and carrots, green beans, and celery into a saucepan; cover with water, bring to a boil, and simmer over medium-low heat until the celery is tender, about 8 minutes. Drain the vegetables in a colander set in the sink, and set aside.
- Melt the butter in a saucepan over medium heat, and cook the onion until translucent, about 5 minutes. Stir in 2/3 cup of flour, salt, black pepper, celery seed, onion powder, and Italian seasoning; slowly whisk in the chicken broth and milk until the mixture comes to a simmer and thickens. Remove from heat; stir the cooked vegetables and turkey meat into the filling until well combined.
- Fit 2 pie crusts into the bottom of 2 9-inch pie dishes. Spoon half the filling into each pie crust, then top each pie with another crust. Pinch and roll the top and bottom crusts together at the edge of each pie to seal, and cut several small slits into the top of the pies with a sharp knife to release steam.
- Bake in the preheated oven until the crusts are golden brown and the filling is bubbly, 30 to 35 minutes. If the crusts are browning too quickly, cover the pies with aluminum foil after about 15 minutes. Cool for 10 minutes before serving.

THANKSGIVING LEFTOVER PIE
This was a big hit in the Test Kitchen! We used peas, but most any veggie would be delicious. We really liked the creaminess of the filling. This recipe to reinvent leftovers is sure to become a much-awaited Thanksgiving dish.

- 1. Preheat oven to 400 degrees. Coat 12 inch pie dish with cooking spray.
- 2. Heat butter in a large skillet over medium heat. Add onion, celery, rosemary, salt & pepper and saute until onion and celery begin to brown. Sprinkle flour over mixture and cook about 3 minutes, stirring frequently.
- 3. Stir in broth gradually making sure to scrape the bottom of pan. Cook for about 5 mins until mixture starts to thicken.
- 4. Add veggies and turkey meat and mix well. Remove rosemary sprig.
- 5. Pour into prepared glass dish and let cool about 10 mins. Spread potatoes over top. Cook for 20 mins until potatoes begin to brown. For a crispy potato "crust," put under broiler for 2 mins longer.
- 6. I like to serve with leftover cranberry sauce and stuffing. Yum!
TURKEY SHEPHERD'S PIE WITH TWO-POTATO TOPPING (OR CHICKEN)
This is the ultimate Thanksgiving/Christmas dinner leftover recipe. The recipe keeps in mind that the ingredients being used are from separate dishes that are *already* seasoned. If you are making either of the potatoes from scratch for the recipe, go ahead and season them as if you were making that dish to serve as a side. The same with the gravy, if it is not homemade roasted turkey gravy, add some more seasoning to it. Of course you do not have to have leftovers to make this, but it is a good way to use up the turkey, mashed potatoes, sweet potatoes and gravy without the dish tasting like leftovers. I have also made it with chicken with excellent results. This is a real family pleaser and our 4 year old actually asks for this for dinner a lot. The original recipe was adapted from Chef Jimmy Bradley of the Red Cat in New York City. It can also be prepared in individual 1 1/2-cup ramekins; check them for doneness after 20 minutes. WINE: A bighearted Chardonnay will echo the texture of the smooth gravy and the soft mashed potato topping. Look for a reasonably priced, fruity wine, such as Australia's 1999 Rosemount or the 1999 Lindemans Bin 65.

- Melt 2 tablespoons of butter in a large skillet and add onion, celery, carrot and garlic. Cook over low heat until softened, about 12 minutes. Stir in turkey or chicken and cook until heated through. Add the gravy and orange juice to the mixture and cook until bubbling. Remove from the heat, stir in the parsley and sage and season with salt and pepper. Transfer the filling to a round, oval or 9-by-12-inch baking dish and let cool.
- Preheat the oven to 400°. In a bowl, mix both potatoes together and add chives. Season with salt and pepper and beat in the egg. Spread the potatoes over the filling and brush the top with the melted butter.
- Bake in the upper third of the oven for about 30 minutes, or until the topping is lightly browned and the filling is bubbling. Let the pie stand for about 10 minutes before serving.

- Heat oven to 425.
- Prepare pie crust for a two-crust pie.
- In a medium saucepan, melt margarine over medium heat.
- Add onion; cook two minutes or until tender.
- Stir in flour, salt and pepper until well blended.

Just the way my mom told it to me and it is sooo good . If I make it with chicken I use 2 or 3 chicken brests( the frozen boneless kind ) and boil them in the broth first.

- 1. Put butter in a large sauce pan and melt ,Add the onions and cook till they are tender over medium heat Add the flour and salt and pepper and the chicken broth . Use a whisk to mix together ,work quickly so you won't have lumps in your gravy mixture.It will start to thickin in a few minutes . Now whisk in the milk . Stir till it boils and thinkins up .
- 2. Now add the Turkey and the mixed vegatables stir and set aside.
- 3. While your filling is cooling a bit Fit your bottom crust in the pie pan (it should come to the top edge of the pan and if possible hang over a bit )Pour in the filling .Moistin the top edge of shell. Whether it holds it all will depend on your pie pan size. open top crust unroll and lay it on top of the filling . Seal edge by pressing with the tines of a fork. Cut off the extra crust at edge of pan .
- 4. Put a few slits on pie to to let out the steam . Put in the oven and bake about 30 or 40 minutes till it browns a little and bubbles a lot.
