WEST AFRICAN PEANUT STEW

A hearty stew that's super-easy to make and great for peanut butter lovers. Can be made vegetarian or with chicken. In a pinch, feel free to use vegetable or corn oil for peanut oil, powdered ginger for fresh, water for stock, etc. Kale works well in place of collard greens.

AFRICAN SWEET POTATO PEANUT STEW

African Sweet Potato Peanut Stew image

I made this recipe after taking ideas from various places. It is a very adaptable recipe, so you can add different veggies and meats. I usually add cauliflower for extra produce and because it is neutral flavored. Some of the spice amounts can be changed; use the cayenne if you like things spicy. The types of milk listed would all be pretty authentic. You can add some cilantro or shredded chicken at the end of cooking if you want.

Categories     Yam/Sweet Potato

Time 1h10m

Yield 2 serving(s)

Number Of Ingredients 17

4 carrots
2 celery ribs
1/2 cup chopped onion (or 2T minced flakes, or more of either, if desired)
1/8 teaspoon pepper
1/8 teaspoon turmeric
1/8 teaspoon cinnamon
1 1/2 teaspoons curry powder
1/4 teaspoon clove
1 dash cardamom (or more, if desired)
1/8 teaspoon cayenne (optional)
2 garlic cloves
2 tomatoes, diced (about 8oz)
2 sweet potatoes
3 cups water (plus more, if needed)
1 cup milk (cow, goat, or coconut)
3/4 cup peanut butter
12 ounces okra (chopped, frozen)

Steps:

  • In a Dutch oven, sautée the chopped carrots, celery, and onion with the spices. Add the garlic after about 2 minutes (so they do not burn), and stir until fragrant, about 2 minutes.
  • Add the cubed sweet potatoes and tomatoes, mix for two minutes, then add the water and milk. Simmer until the sweet potatoes are soft, about 20 minutes. Use an immersion blender to puree the stew until smooth. Add the peanut butter and okra, and simmer to desired consistency (it might splatter). Add more water or milk if it is too thick.

WEST AFRICAN PEANUT STEW

West African Peanut Stew image

Peanuts are the star of this hearty plant-based stew that's inspired by the cuisine of West Africa. Featuring superfoods like sweet potatoes, collard greens, and millet, it uses the humble peanut two different ways: peanut butter to thicken the brothy base, and roasted and chopped, to provide a crunchy contrast to the tender vegetables.

WEST AFRICAN PEANUT STEW

West African Peanut Stew image

One-pot meals are staples in Gullah-Geechie households, and this dish is a special one to me. West African enslaved people were brought to the Low Country, and with them they brought their indigenous foods like collards, tomatoes, peanuts and rice. This stew has all of those ingredients, and it's delicious served on its own or over rice.

Number Of Ingredients 15

2 tablespoons peanut or canola oil
1 large fryer chicken, cut into stewing pieces

AFRICAN PEANUT STEW WITH CHICKEN MEATBALLS

Provided by Food Network Kitchen

Categories     main-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 27

1 1/2 slices hearty white bread, crumbled
1/4 cup milk
1 1/2 pounds ground chicken
1 small onion, finely diced
4 cloves garlic, minced
1 teaspoon smoked paprika
3/4 teaspoon ground cumin
1 large egg
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 large yellow onion, diced
3-inch piece fresh peeled ginger, minced
4 cloves garlic, minced
1 large jalapeno (seeds and ribs included), finely diced
2 tablespoons tomato paste
1 tablespoon ground coriander
1 1/2 teaspoons smoked paprika
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 pounds sweet potatoes, peeled and cut into large dice
One 14-ounce can diced tomatoes
4 cups low-sodium chicken stock
3/4 cup creamy peanut butter
8 ounces kale, stemmed and torn into 1-inch pieces
3/4 cup roasted peanuts
1/2 cup chopped cilantro
White rice, for serving

Steps:

  • For the meatballs: Preheat the oven to 375 degrees. Line a rimmed baking sheet with parchment paper.
  • Combine the breadcrumbs with the milk in a medium bowl until the crumbs soak up the milk, 3 to 5 minutes. Stir in the ground chicken, onion, garlic, smoked paprika, cumin, egg, 1 1/2 teaspoons salt and a few grinds of black pepper. Use a 2-tablespoon ice cream scoop to form about 20 meatballs and transfer to the prepared baking sheet. Bake until the meatballs are slightly golden on top and just cooked through, about 15 minutes; set aside.
  • For the stew: Meanwhile, heat the olive oil in a large pot over medium-high heat. Add the onions and cook, stirring occasionally, until softened, 3 to 4 minutes. Add the ginger, garlic and jalapeno and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the color looks rusty, about 1 minute. Add the coriander, smoked paprika and cayenne and 1/2 teaspoon salt and cook, stirring, about 30 seconds. Add the sweet potatoes, chicken stock, canned tomatoes and peanut butter and stir to combine. Bring to a boil, reduce to a simmer, cover and cook until the sweet potato is tender, about 30 minutes. Uncover and stir in the meatballs, kale and peanuts; cook for 10 minutes. Taste and season with salt and black pepper. Remove from the heat and stir in the cilantro. Serve with white rice.

AFRICAN SPINACH AND GROUNDNUT STEW (AKA PEANUT, KENYA/TANZANIA)

African Spinach and Groundnut Stew (Aka Peanut, Kenya/Tanzania) image

This is from "Best of Regional African Cooking". The original calls for 1/2 c. finely ground unsalted peanuts. That's too much work, so I substituted peanut butter. This is a very thick, rich vegetable side. It is not a stew like we think of stews in the US. My husband liked it, and it is the only spinach dish he will eat.

I first had this stew at a restaurant in Rochester, NY, and when I moved away, spent years recreating it! Delicious with a lovely hearty bread, or with rice cooked in the stew (about 3/4 cup brown rice added with the sweet potatoes and carrots).

WEST AFRICAN PEANUT STEW

West African Peanut Stew image

Variations of peanut (or groundnut, as they are locally called) soups and stews are eaten across West Africa. I adapted this recipe from several different cookbooks + my own preferences. Savory, spicy, filling, healthy and quick to make! Omit the chicken for a vegan version and/or feel free to add in more vegetables (yams, eggplant, or squash could be good, I think). *NOTE* If possible, try to use Recipe #13953 if you don't have berbere on hand . Cayenne is an acceptable substitute, but really doesn't do the dish justice like Berbere would. Even just adding a pinch or two of the different spices in the Berbere mix would suffice!

African peanut stew is a popular dish that originates from West Africa. It is a flavorful and hearty dish that is often served with rice or other grains. The dish is made with a variety of ingredients including peanut butter, vegetables, spices, and meat (optional). In this article, we will explore some valuable tips for making African peanut stew recipes.

Tip #1: Choose the Right Peanut Butter

The key ingredient in African peanut stew is peanut butter. When choosing the peanut butter, it is important to select one that is natural and has only peanuts listed as the ingredient. Avoid brands that contain additives or sweeteners such as sugar or corn syrup. Using natural peanut butter will ensure that the stew has a rich and authentic flavor.

Tip #2: Use Fresh Ingredients

To enhance the flavor of the stew, it is important to use fresh ingredients. Fresh vegetables such as sweet potatoes, kale, and carrots will add depth and texture to the dish. Using fresh herbs such as cilantro or parsley will add a pop of freshness to the dish. Fresh ingredients will make the dish tastier and healthier.

Tip #3: Spice it Up

The spices used in African peanut stew are what give it its unique and flavorful taste. Common spices used in the dish include cumin, coriander, curry powder, and ginger. Experiment with these spices to find the perfect balance of flavors for your taste. If you like your food spicy, add some chili peppers or hot sauce to the stew.

Tip #4: Add Protein

While African peanut stew is usually vegetarian, it can also be made with meat. Common meats used in the dish include chicken, beef, or lamb. Adding protein to the dish will make it heartier and more filling. If you are making a vegetarian version of the stew, add some tofu or tempeh for a protein boost.

Tip #5: Use Broth or Stock

To give the stew a rich and savory flavor, use broth or stock instead of water. Chicken or vegetable broth is often used in African peanut stew recipes. If you are making a vegetarian version of the stew, use vegetable broth. The broth will give the stew a more complex flavor and make it taste richer.

Tip #6: Cook Slowly

To ensure that all the flavors in the stew are fully developed, it is important to cook it slowly. This will allow the ingredients to meld together and create a delicious and satisfying dish. Simmer the stew on low heat for at least 30-45 minutes or until the vegetables are tender.

Tip #7: Serve with Rice or Grains

African peanut stew is traditionally served with rice or other grains such as quinoa or couscous. The rice or grains will soak up the flavorful broth and provide a satisfying base for the dish. For a more authentic experience, serve the stew with a side of plantains or yams.

Tip #8: Garnish with Nuts and Herbs

To add some crunch and additional flavor to the stew, garnish it with some chopped nuts and fresh herbs. Chopped peanuts or cashews will add a nutty flavor and texture to the dish. Fresh cilantro or parsley will add a pop of color and freshness to the stew.

Conclusion

African peanut stew is a delicious and hearty dish that is perfect for cold evenings or when you want something comforting and satisfying. By following these valuable tips, you can make a flavorful and authentic version of the dish that will impress your family and friends. So, get in the kitchen and start cooking!
