1/2 lime, juiced (about 1 tablespoon)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons canola oil
2 boneless skinless chicken breasts, about 8 ounces each
1 ripe Haas avocado, diced
1/2 small red onion, thinly sliced
1/3 cup fresh cilantro, coarsely chopped
1 teaspoon kosher salt

1/2 lime, juiced (about 1 tablespoon)
1 tablespoon extra-virgin olive oil
Three 6-inch blue or white corn tortillas

Steps:

  • Meanwhile, for the salad: Put the avocado, onions, cilantro, salt, pepper, lime juice and olive oil in a medium bowl. Fold the ingredients with a rubber spatula, gently breaking up the avocado in the process.

1/2 cup red chile flakes
6 cloves garlic, minced
4 tablespoons minced fresh oregano
1 3/4 cups water

1 cup diced tomato

5 green chiles, very finely minced (remove seed and ribs for a milder salsa)
1 cup gently packed cilantro, roughly chop
2 large cloves garlic, minced

8 skinless chicken drumsticks (cut into thirds) or 3 -4 skinless chicken breasts (cut into thirds)
1/3 cup low sodium soy sauce
1/3 cup apple cider vinegar
1/4 cup white wine
1 cup chicken stock or 1 cup broth
2 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon dried oregano
