Rye rolls are a staple in many cultures worldwide, and accordion rye rolls, in particular, provide a unique twist to the classic recipe. These delicious rolls are characterized by a folded design that resembles an accordion, hence their name. Making accordion rye rolls isn't a difficult undertaking as long as you have the right ingredients, tools, and some helpful tips. In this guide, we'll provide you with some valuable tips to help you make the perfect accordion rye rolls.

Choose the right ingredients

The key to a successful accordion rye roll recipe lies in the ingredients you use. Rye flour is the primary ingredient in these rolls, so you must choose the right type of rye flour. The most recommended type is organic, unbleached rye flour as it does not contain chemicals that can affect the taste and texture of your rolls. You should also ensure that your other ingredients, such as yeast and salt, are fresh and have not expired.
Tip: Always check the expiration date of your ingredients before using them to avoid affecting the final outcome of your accordion rye rolls.

Use a stand mixer

Kneading the dough for accordion rye rolls can be tiresome and time-consuming when done manually. Using a stand mixer with a dough-hook attachment makes the process much easier and faster. A stand mixer also ensures that the dough is evenly mixed and not overworked.
Tip: Use a stand mixer with a dough-hook attachment to save time and ensure even mixing of your dough.

Allow time for the dough to rise

Accordion rye rolls require time and patience for dough to rise. Overworking the dough or not giving it enough time to rise can affect the final outcome of your rolls. It's best to let the dough rest and rise for an hour in a warm place, covered with cling wrap.
Tip: Allow your dough to rise in a warm place, covered with cling wrap, for at least an hour to ensure it's well-risen.

Roll the dough Multiple times

Rolling the dough in layers and making a book-fold helps create the accordion effect in your rye rolls. When rolling the dough, ensure that you sprinkle flour on your working surface to prevent it from sticking. Use a rolling pin to roll it into a thin sheet and shape it into a rectangle. Then, fold the dough into thirds, like a letter, and repeat the process three more times.
Tip: Roll and fold the dough multiple times to create the accordion design in your rye rolls.

Use a sharp knife to score the rolls

Before baking your accordion rye rolls, use a sharp knife to score the dough. This helps the dough expand while baking, and it also adds a decorative touch to your rolls. You can score the rolls in various designs, such as diagonal lines, oval shapes or diamond shapes.
Tip: Use a sharp knife to score the rolls, and don't press too hard, so you don't damage the dough.

Baking the rolls

Baking accordion rye rolls at the right temperature and for the correct amount of time is crucial in ensuring they come out perfectly. Preheat your oven to 200°C and bake the rolls for 20-25 minutes. Add some water to the baking tray to create steam while baking, and this gives the rolls a crispy crust.
Tip: Bake your accordion rye rolls at 200°C for 20-25 minutes, add some water to the baking tray and use a baking stone for even baking.

Cooling the rolls

After baking, allow your accordion rye rolls to cool on a wire rack. Cooling the rolls helps the excess moisture evaporate, giving the rolls a crispy crust. Ensure that they have cooled down before slicing them.
Tip: Allow your accordion rye rolls to cool on a wire rack before slicing them to avoid crushing them.

Conclusion

In summary, making perfect accordion rye rolls requires you to use the right ingredients, use a stand mixer, allow time for the dough to rise, roll the dough multiple times, use a sharp knife to score the rolls, bake the rolls at the correct temperature and for the right amount of time, and allow the rolls to cool before slicing. Follow these tips to make the perfect accordion rye rolls – crispy on the outside and soft on the inside.
