ACAPULCO DELIGHT

2 pounds ground beef
1 envelope (1-1/4 ounces) taco seasoning
3/4 cup water
1 bottle (15 ounces) mild green taco sauce
9 flour tortillas (6 inches)
2 cups shredded cheddar cheese
1 can (16 ounces) refried beans
2 cups sour cream
4 green onions, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
Optional: Chopped tomatoes and chopped avocados

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Add taco sauce; simmer until slightly thickened, 5-10 minutes., Cover the bottom of a 13x9-in. baking dish with 3 tortillas, tearing them into pieces as necessary. Layer half the meat mixture over tortillas; sprinkle with half the cheese. Layer with 3 more tortillas; spread with refried beans. Cover with sour cream; sprinkle with green onions and olives. Layer remaining tortillas over top; cover with remaining meat mixture and cheese. Bake until heated through, 25-30 minutes. Let stand a few minutes before serving. If desired, serve with chopped tomatoes and avocados.

1 large onion
2 cups long grain rice
2 ounces lard or 2 ounces chicken fat
2 cups chicken broth
1 cup tomato juice
1 cup diced tomato
1 tablespoon parsley, chopped
1 teaspoon garlic, minced
1 dash ground cumin
1 teaspoon salt
1 dash white pepper

Steps:

  • Sauté onion and rice in lard until browned, 6 to 10 minutes, stirring constantly.
  • Turn into baking dish.
  • In large saucepan, combine broth, tomato juice, tomatoes, parsley, garlic, cumin and salt and pepper and bring to boil.
  • Add broth to rice.
  • Cover and bake at 350 degrees F for 20 to 30 minutes or until rice is fluffy.
  • Use fork to fluff rice.

2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 tablespoon chili powder, divided
salt and pepper to taste
1 tablespoon olive oil
1 cup chopped green bell pepper
½ cup chopped onion

1 large tomato, cut into chunks
10 drops hot pepper sauce

Steps:

  • Season chicken with 1/2 tablespoon chili powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.
  • In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon chili powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more.

4 (6 ounce) grouper fillets
⅓ cup tequila
½ cup orange liqueur
¾ cup fresh lime juice
1 teaspoon salt
3 large cloves garlic, peeled
4 tablespoons olive oil
3 medium tomatoes, diced
1 medium onion, chopped
1 small jalapeno, seeded and minced
4 tablespoons chopped fresh cilantro
1 pinch white sugar
salt to taste
1 tablespoon olive oil
ground black pepper to taste

Steps:

  • Place fish in a shallow baking dish. In a bowl, stir together the tequila, orange liqueur, lime juice, 1 teaspoon salt, garlic, and olive oil. Pour mixture over fillets, and rub into fish. Cover, and refrigerate for 1/2 hour, turning the fillets once.
  • Preheat the grill for high heat.
  • In a medium bowl, toss together the tomatoes, onion, jalapeno, cilantro, and sugar. Season to taste with salt. Set salsa aside.
  • Remove fillets from marinade, and pat dry. Brush the fillets with oil, and sprinkle with ground black pepper. In a small saucepan, boil remaining marinade for several minutes. Remove from heat, and strain out garlic cloves. Set aside to cool.
  • Grill fish for 4 minutes per side, or until fish is easily flaked with a fork. Transfer fillets to a serving dish. Transfer the fish to a serving plate. Spoon salsa over the fish, and drizzle with the cooked marinade to serve.

6 corn tortillas

1 1/2 cups crabmeat
6 tablespoons minced onions
shredded monterey jack cheese
pitted black olives
avocado, slices
sliced peeled tomatoes

Steps:

  • For Cilantro Cream Sauce:
  • Puree garlic with salt.
  • Combine sour cream, onion, cilantro and sugar.
  • Add garlic mixture and stir gently to blend well.
  • For Enchiladas:
  • Heat tortillas, 1 at a time, in oil until soft.
  • Place 1/4 cup crab meat in center of each tortilla, then sprinkle with 1 tablespoon onion.
  • Spread a little Salsa Con Tomatillos on top.
  • Roll enchiladas, and place, seam-side down, in shallow baking dish.
  • Cover with remaining Salsa Con Tomatillos. Sprinkle generously with cheese.
  • Bake at 400 degrees F about 10 minutes, or until hot and cheese melts.
  • Serve with dollop of Sour Cream Sauce, and garnish with olives, avocado and tomato slices.

2 cups canned unsalted chicken broth, defatted
2 tablespoons pickling spice
1 pound boneless skinless chicken breast halves, well trimmed
1 onion, halved, thinly sliced
1/3 cup rice wine vinegar
3 large garlic cloves, minced
1 tablespoon olive oil
2 teaspoons ground cumin
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
2 tablespoons minced jalapeño chili with seeds
1/4 cup fresh cilantro leaves
Baked (no oil) tortilla chips

Steps:

  • Boil broth and pickling spice in heavy large saucepan 10 minutes. Strain and return liquid to saucepan. Add chicken, onion, vinegar, garlic, oil and cumin to pan. Simmer over very low heat until chicken is just cooked through, about 10 minutes. Transfer chicken and onions to shallow dish. Top with bell peppers and minced chili.
  • Boil cooking liquid until reduced to 2/3 cup, about 10 minutes. Pour liquid over chicken and let cool 30 minutes.
  • Add cilantro to chicken mixture. Cover and refrigerate until well chilled, turning chicken occasionally, about 4 hours.(Can be prepared 1 day ahead.)
  • Slice chicken and transfer to plates. Top with marinated vegetables and some of the juices. Pass tortilla chips to use as 'pushers'.

3 cups chopped cooked chicken (I use roasted chicken well seasoned with salt and pepper)
1 (10 1/2 ounce) can cream of chicken soup
1 (8 ounce) carton sour cream
1 (4 1/2 ounce) jar sliced mushrooms, drained
1 (4 ounce) can chopped green chilies, drained
1/2 teaspoon oregano
1/4 teaspoon salt
1/8 teaspoon pepper (I use 1/4 t.)
10 (7 inch) flour tortillas
1 (10 1/2 ounce) cream of chicken soup
1 cup shredded sharp cheddar cheese
1/3 cup milk

Steps:

  • In a large saucepan, cook onion in butter until tender.
  • Stir in chicken, soup, sour cream, mushrooms, green chiles, oregano, salt, and pepper.
  • Spoon approx 1/2 cup chicken mixture in center of each tortilla; roll up and place seam side down in a lightly greased 13x9x2 inch baking dish.
  • Combine topping ingredients.
  • Spoon over tortillas.

14 1/2 ounce can diced tomatoes
1 medium onion, cut up
2 garlic cloves
4 tablespoons snipped cilantro
1/2 teaspoon sugar
3 chipotle peppers in adobo sauce from the can
8 cups chicken broth
1 1/2 pounds chicken breast cut up
GARNISH:
Monterey Jack cheese, shredded
Avocados, cut up
Tortilla chips
Red Onion, diced
Cilantro, shredded
Spanish rice

Steps:

  • In blender combine undrained tomatoes, onion, garlic, cilantro, and sugar. Cover and blend till nearly smooth. Put mixture into a large pot with chicken broth, chicken and chipotle peppers. Add a couple of teaspoons of the adobo sauce from the chipotle pepper can. Bring to boiling; cover and simmer for 20 minutes. Put crunched tortilla chips in a bowl with cheese and avocados. Ladle soup over; top with cilantro and red onions. Serve with Spanish rice on the side.

CEVICHE FROM ACAPULCO

Excellent meal for the summer, since there is no cooking involved and it is cool. Any thick, firm white fish can be used. The citrus juice cooks the fish. You can also add shrimp or scallops and substitute for part of the fish. This is adapted from "A Treasury of Great Recipes" by Mary and Vincent Price. Cooking time is the marinating time in the refrigerator. Letting it sit in the vegetable mixture overnight is not included. Posted for ZWT5.

2 cups lemon juice or 2 cups lime juice, your choice

1 teaspoon Tabasco sauce

  • Cut the fish into 1 inch cubes. Marinate in 2 cups lemon or lime juice in the refrigerator for 6 hours.
  • In a bowl, mix 2 cups chopped onion, 1/2 cup tomato puree, 1/2 cup tomato juice, 1 tbsp salt, 16 chopped green olives, 2 tbsp Worcestershire sauce, 1 tsp Tabasco, 2 chopped jalapenos, 3 chopped peeled and seeded tomatoes, and 2 tbsp cilantro or parsley.
  • After 6 hours, remove the fish from the refrigerator. Pour off 1 cup of the lemon or lime juice and add the above sauce to the fish and remaining juice. Mix well and let stand in the refrigerator overnight.
  • Garnish with avocado if desired.

This is so easy, so delicious, and did I mention easy? Mom and I had been toying with the enchilada recipes I've found here on Zaar that sparked our interest. I had been browsing the back of can labels (always on the lookout for recipes to try) and the "Acapulco" jumped out at me. I came home, made some adjustments to my old recipe, and this is what it turned out to be...a culinary vacation to Acapulco.

1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 1/2 cups cooked chicken, shredded (canned chicken is fine)
2 cups shredded Mexican blend cheese
2 -3 tablespoons old el paso taco seasoning mix
1/4 cup sour cream
1 (19 ounce) can green enchilada sauce (check the ethnic aisle for some really killer sauce, two small ones will work fine)
8 large flour tortillas

Steps:

  • Preheat the oven to 400 degrees.
  • In a medium bowl, combine the chicken soup, chicken meat, 1 cup cheese, 2 tablespoons enchilada sauce, the sour cream, and the taco seasoning (more or less of this to taste).
  • Spray the bottom and sides of a 9x13 pan and spoon enough sauce from the can to cover the bottom with a thin layer.
  • Heat each tortilla in the microwave until soft enough to fold easily. Fill each tortilla and roll burrito-style. Place in the pan.
  • Pour all the remaining sauce on the top and sprinkle with the remaining one cup of cheese. Place in the oven to melt the cheese for approximately 20-30 minutes.

1/2 cup onion (chopped)
1 tablespoon olive oil
2 (5 ounce) cans tuna (drained, we like solid white albacore)
1 egg (beaten)
1/4 cup milk
3 ounces tortilla chips
1 1/2 cups monterey jack cheese (shredded)
1/2 cup sour cream
1 (16 ounce) can stewed tomatoes
1 1/2 teaspoons chili powder
salt and pepper
parsley, and black olives for garnish

Steps:

  • Saute onions in oil, cook until transparent.
  • In a large bowl combine drained tuna,onions, tomatoes, chili powder, salt, pepper, eggs and milk, blend.
  • Place half of the chips in the botttom of a 2 quart dish, top with half of the cheese, then half the tuna mixture, repeat layers.
  • Spread sour cream on top, cook 25-30 minutes in a preheated 350 degree oven until hot and bubbly.
  • Garnish with parsley and olives.

500 g skinless chicken breast fillets (4x125g)
2 tablespoons taco seasoning
3 tablespoons tomato paste
1/2 cup onion
1/8 teaspoon chili powder
1/2 cup green capsicum (diced)
1/2 cup tomatoes (diced)
1/2 large avocado (diced)
1/2 cup tasty cheese (reduced fat, grated)

Steps:

  • Preheat oven to 180C.
  • Flatten chicken breast with rolling pin.
  • Place chicken on cooking tray coated with oil.
  • In a small bowl combine taco seasoning and tomato paste. Spread an even amount over each chicken fillet.
  • In another bowl place onion, chilli powder, capsicum, tomato and avocado and combine.
  • Spread this mixture over each chicken fillet and top with cheese.

3 tablespoons butter
3 tablespoons flour
2 (10 3/4 ounce) cans cream of chicken soup
16 ounces sour cream
1 (4 ounce) can green chilies, diced
1/2 teaspoon onion salt
1/4 teaspoon pepper
2 cups swiss cheese, shredded

Steps:

  • Place chicken in a greased 9x13" casserole dish.
  • Melt butter in skillet. Add flour & cook until golden brown.
  • Stir in soup, sour cream, chilies, onion salt & pepper. Simmer for 10 minutes, stirring frequently.
  • Pour sauce over chicken in casserole. Bake at 400 degrees for 15 minutes.
  • Cover with foil, reduce heat to 350 degrees and bake for 1 hour.
  • Uncover & sprinkle cheese over top. Bake uncovered for 15 minutes more or until cheese is melted.

I have no memory of where I found the original recipe, but over the years I've modified it to suit my family's preferences. It is so good and a fun twist on traditional enchiladas. It's easy too! You can easily lighten it by using low fat versions of many of the ingredients, and it is still delicious. A well-drained and rinsed...

3 c cooked and shredded chicken
12 flour tortillas
1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
8 oz sour cream
1 - 4 oz. can(s) diced green chiles, undrained
2 c shredded monterrey jack cheese
1/2 c diced onions
1-2 clove minced garlic or 1/2 tsp. garlic powder
chicken stock/broth as needed to thin sauce
chopped fresh cilantro to taste
1 can(s) drained and rinsed black beans, optional
salt, pepper to taste; crushed red peppers to taste, optional

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9" x 13" non-stick baking dish with your favorite cooking spray.
  • 2. In a large bowl combine the chicken, the soups, sour cream, chiles, onion and garlic. Add salt and pepper to taste. (I add 1/2 tsp. crushed red pepper flakes too.) Fold in 1 cup of the cheese. Stir in enough broth to loosen the sauce, but be careful to avoid making it too soupy. The tortillas will absorb a lot of liquid though. Add the beans if desired.
  • 3. At this point you can either roll the enchiladas traditionally with about 1/4 cup sauce in each, or place a layer of 6 tortillas in the dish. Top with half of the sauce, then another layer of 6 tortillas, then the remaining sauce. If you choose to roll them, pour all of the remaining sauce over the enchiladas. Cover with foil.
  • 4. Bake for 30 minutes or until bubbly. Remove from oven and sprinkle with remaining cheese. Do not replace the foil. Return to oven and bake until cheese melts. Avoid over-baking as the tortillas can get tough. These are even better the next day!
