THE BEST CHEWY CHOCOLATE CHIP COOKIES RECIPE BY TASTY

The Best Chewy Chocolate Chip Cookies Recipe by Tasty image

There are a few secrets to the best classic, chewy chocolate chip cookies. Number one: Don't use chips; instead, opt for a mix of milk or semisweet and dark chocolate chunks. The second is to let the dough rest overnight or longer for a more complex, toffee-like flavor. Lastly, use an ice cream scooper to get even-sized cookies every time. And that's it! With these little tweaks, the result is a cookie that's textured on the outside, and soft and gooey on the inside. Absolutely perfect!

Time 1h5m

Yield 12 cookies

Number Of Ingredients 10

½ cup granulated sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup unsalted butter, melted
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
4 oz milk or semi-sweet chocolate chunks
4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown.
  • Cool completely before serving.
  • Enjoy!

We skipped the white sugar and went all in with dark brown sugar, which gives our cookies the ideal chewiness and perfect level of sweetness. Time 1h15m

Yield 3 1/2 dozen

Number Of Ingredients 9

2 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons fine salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/2 sticks unsalted butter, softened
1 3/4 cups packed dark brown sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract or vanilla bean paste
One 12-ounce bag semisweet chocolate chips (about 2 cups)

Steps:

  • Sift the flour, salt, baking powder and baking soda into a large bowl.
  • Beat the butter and brown sugar in a large bowl with an electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. (Use the paddle attachment for a stand mixer.) Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the dry ingredients and beat until combined. Stir in the chocolate chips by hand.
  • Press plastic wrap directly onto the surface of the dough and refrigerate at least 1 hour or preferably overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Use a 1-ounce ice cream scoop to scoop half the dough onto the prepared baking sheets, spacing about 2 inches apart. Chill the remaining dough while you bake the first batch.
  • Bake at 375 degrees until the cookies are golden around the edges but still soft in the middle, 12 to 15 minutes. Let the cookies cool for 10 minutes on the baking sheets, then transfer them to a wire rack to cool completely. Cool the baking sheets completely, then line with parchment paper and repeat the scooping and baking process with the remaining dough.

A Sweet Treat That Never Gets Old

Chocolate chip cookies are one of the most beloved desserts of all time. There's just something about the buttery, sugary dough mixed with chunks of rich chocolate that makes them irresistible. But with so many recipes out there, it can be tough to know which one to use. In this article, we'll explore what makes for absolutely the best chocolate chip cookies recipes.

Top-Quality Ingredients

The first step in creating the perfect chocolate chip cookie is to use top-quality ingredients. This means using real butter, high-quality chocolate, and fresh ingredients. Avoid using shortening, which can make your cookies greasy, and stick to unsalted butter instead. Additionally, make sure your flour and baking powder are fresh and not expired.

Perfect Texture

The perfect chocolate chip cookie should have a soft and chewy texture on the inside, with a slightly crispy outer shell. Achieving this texture requires the right balance of ingredients and proper baking time. Overbaking your cookies can cause them to become too hard and crunchy, while underbaking them can result in a doughy texture.
Pro tip:
For a softer texture, try using bread flour instead of all-purpose flour. The extra protein in bread flour can help your cookies stay soft and chewy.

Ratio of Ingredients

To create the best chocolate chip cookies, you'll need to get the ratio of ingredients just right. This includes the amount of flour, sugar, butter, eggs, and chocolate. Most chocolate chip cookie recipes call for a 2:1 ratio of flour to sugar, with slightly more butter than sugar. The amount of chocolate used will depend on personal preference, but a good rule of thumb is to use about 1-2 cups of chocolate chips for every 2-3 cups of flour.
Pro tip:
If you're looking to cut back on sugar, try using a blend of white and brown sugar. The brown sugar will add sweetness and moisture to your cookies, while the white sugar will help them spread.

Chill Your Dough

A common mistake when making chocolate chip cookies is to skip the chilling step. Chilling your dough for at least an hour (or even overnight) can help your cookies stay thicker and prevent them from spreading too much. This is because the butter in the dough will solidify again after being melted, resulting in a firmer texture. Chilling your dough can also enhance the flavor of your cookies, as it allows the ingredients to meld together.
Pro tip:
For even better results, try scooping your dough and then chilling it. This will help your cookies bake more evenly and also make the process faster.

Add-Ins

While chocolate chips are the star of the show, adding extra ingredients can take your cookies to the next level. Some popular add-ins include nuts, dried fruit, caramel bits, or even potato chips (yes, really!). Experiment with different combinations to create your own unique flavor profile.
Pro tip:
When adding nuts or other chunky ingredients, try to chop them into small pieces to ensure they don't overwhelm the cookie.

Baking Temperature and Time

Finally, getting your baking temperature and time right is crucial for creating the perfect chocolate chip cookie. Most recipes call for a temperature of 350°F and a baking time of 10-12 minutes. However, every oven is different, so it's important to keep an eye on your cookies and adjust as necessary.
Pro tip:
To create a slightly crispier cookie, try increasing the baking time by 1-2 minutes. For a softer cookie, decrease the baking time by a minute or two.

The Bottom Line

When it comes to chocolate chip cookies, the possibilities are endless. Whether you prefer them crispy or chewy, loaded with add-ins or plain and simple, using high-quality ingredients and the right techniques will help you create the best chocolate chip cookies every time. Experiment with different recipes and find your signature twist on this classic dessert.

Valuable Tips for Making Absolutely the Best Chocolate Chip Cookies

Everybody loves a good chocolate chip cookie every now and then. It's the kind of dessert that can bring back memories of childhood or be the perfect treat to have after a long day at work. If you want to make your chocolate chip cookies stand out from the rest, there are a few key tips you need to keep in mind. Here are some valuable tips for making absolutely the best chocolate chip cookies recipes.
1. Choose the Right Type of Chocolate Chips
Chocolate chips are the star ingredient in chocolate chip cookies, so it's important to choose the right type. There are many different brands and varieties on the market, ranging from milk to dark chocolate. If you want to make the best chocolate chip cookies, choose high-quality chocolate chips that are made with real cocoa butter. These chips will have a richer flavor and a better mouthfeel than those made with vegetable oil.
2. Use the Right Type of Flour
The type of flour you use can impact the texture of your cookies. For the best results, choose an all-purpose flour that has a protein content of around 10%. Avoid cake flour, as it will make your cookies too delicate, and bread flour, as it will make them too tough.
3. Combine the Ingredients Carefully
When making your cookie dough, it's important to combine the ingredients in the correct order. Start by creaming the butter and sugar together until they are light and fluffy. Then, add in the eggs and vanilla extract. Finally, mix in the dry ingredients, being careful not to overbeat the dough.
4. Chill the Dough
Chilling the cookie dough before baking is essential for getting the perfect texture. When you chill the dough, the fat in the butter solidifies, creating a firmer dough that will hold its shape better during baking. It also allows the flavors to meld together, resulting in a richer, more complex taste. To chill the dough, wrap it in plastic wrap and refrigerate it for at least an hour, or overnight if possible.
5. Measure Carefully
Baking is a science, and it's important to measure your ingredients carefully in order to get the best result. Use a scale to weigh your ingredients instead of measuring them by volume. This will ensure that you add the right amount of each ingredient and that the cookies turn out perfectly each time.
6. Use Parchment Paper
Using parchment paper on your baking sheet will make it easier to remove the cookies once they are done baking. It also helps to prevent the cookies from sticking to the sheet, ensuring that they keep their shape and look perfect. If you don't have parchment paper, you can use a non-stick baking mat or grease the sheet with cooking spray.
7. Bake at the Right Temperature
Baking at the right temperature is crucial for getting the perfect chocolate chip cookies. Most recipes call for a temperature of around 350°F (175°C), but you should check your recipe to be sure. If the temperature is too high, the cookies will spread too much and be thin and crispy. If it's too low, they will be thick and doughy.
8. Don't Overbake
Overbaking is one of the biggest mistakes people make when baking chocolate chip cookies. It's important to take the cookies out of the oven before they look done, as they will continue to cook and firm up as they cool. The edges should be a light golden brown, but the centers should still look slightly underbaked. This will ensure that the cookies are soft and chewy, rather than hard and crunchy.
9. Experiment with Different Additions
Chocolate chip cookies are a classic, but that doesn't mean you can't experiment with different additions to make them even better. Try adding chopped nuts, dried fruit, or shredded coconut to the mix to add some texture and flavor. You can also switch up the type of chocolate chips you use, or even use a combination of different types.
10. Store Properly
Proper storage is key to keeping your chocolate chip cookies fresh and delicious. Store them in an airtight container at room temperature for up to a week, or freeze them for up to three months. If you freeze them, be sure to thaw them at room temperature before serving. In conclusion, the perfect chocolate chip cookie is a combination of choosing the right ingredients, measuring them carefully, and following the correct baking techniques. By following these tips, you can create absolutely the best chocolate chip cookies recipes that will impress your friends and family every time.
