ABSOLUTELY PERFECT CHICKEN AND DUMPLINGS

Absolutely Perfect Chicken and Dumplings image

Chicken and Dumplings has always been a favorite of mine, but I have been looking for a recipe that combines the chewy German dumpling with the lightness of a "biscuit" type dumpling. So I invented this recipe that makes a dumpling that is a nice combination of both. It's also super easy because you use pre-made chicken broth. My family loves it!

Categories     Chicken

Number Of Ingredients 9

4 cup(s) chicken broth
2 cup(s) chopped chicken
1 - small onion
1 cup(s) chopped celery
2 cup(s) white flour
1 teaspoon(s) salt
2 - large eggs
3/4 cup(s) soured milk
1/2 teaspoon(s) baking powder

Steps:

  • Chop onion and celery and add them to your chicken broth in a large wide pot. Bring to boil and let simmer about 20 minutes, or until vegetables are tender.
  • While veggies are simmering: mix flour, salt and baking soda in a medium sized bowl. In separate small bowl, combine eggs and milk. Pour wet ingredients into dry ingredients and stir til mixed. (Batter will resemble a thick paste.)
  • Once veggies are tender, add chicken to the broth and get the mixture back up to a nice boil. (At this point, I always add water to replace any of the liquid that evaporated during the simmering of the veggies.)
  • Using two spoons, gently add "dollops" of the dumpling dough all around the chicken and broth. (Be very careful not to burn yourself from splashing the boiling liquid.) Once you've added all of the dumpling dough all around the pan, put on the lid and turn the heat down to low. Let simmer about five minutes until the dumplings are fully cooked.
  • Ladle it up and enjoy!

Yield 20

Number Of Ingredients 13

7 pounds cut up chicken pieces
4 cups chicken stock
2 onions, chopped
3 stalks celery, chopped
3 teaspoons salt
1 egg
¼ cup milk
1 ½ cups all-purpose flour, divided
1 ½ teaspoons baking powder
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
1 cup water
½ teaspoon ground black pepper

Steps:

  • In a large pot place chicken pieces and add the chicken stock, onion, celery and 2 teaspoons of the salt. Put heat on medium low and simmer, partially covered, 15 to 20 minutes or until chicken is tender.
  • To Prepare Dumplings: In a large mixing bowl beat together the egg and milk. Add 1 cup flour, remaining salt and baking powder and mix all together. Cut the butter into the flour mixture until the mixture is crumbly. Add 1 tablespoon of the parsley and mix. In 6 large spoonfuls, drop dumpling mixture onto the top of the simmering chicken. Cover the pot and let all simmer for 10 minutes more.
  • To Make Gravy: Remove chicken and dumplings to a large serving bowl. Cover and set aside, keeping warm. Strain the stock left in the pot, pressing out any 'veggie liquid'. Return stock to pot. Combine water with remaining flour, then stir into the strained stock. Bring all to a boil, stirring constantly, to thicken. Return chicken and dumplings to pot, combing all gently. Serve with remaining parsley.

Absolutely Perfect Chicken and Dumplings Recipes

When it comes to comfort food, chicken and dumplings are at the top of the list. This timeless classic has been a favorite of many for generations, and for good reason. The combination of tender chicken and fluffy dumplings in a rich, creamy broth is simply irresistible. While there are many variations of chicken and dumplings, a truly perfect recipe has a few key components that make it stand out from the rest. Here are some elements to look for in an absolutely perfect chicken and dumplings recipe:
1. Flavorful Broth
The broth is the foundation of any good chicken and dumplings recipe. It should be rich and flavorful, with a balance of savory and slightly sweet notes. A good broth starts with a quality chicken stock, which is simmered for hours with aromatics like onion, garlic, and bay leaves. The addition of heavy cream or half-and-half gives the broth a creamy, velvety texture that is essential to the dish.
2. Tender Chicken
The chicken in chicken and dumplings should be fall-apart tender, with a melt-in-your-mouth texture. Ideally, the recipe should call for bone-in, skin-on chicken thighs or breasts, which have more flavor and retain their moisture better than boneless, skinless chicken. The chicken should be cooked low and slow in the broth until it is fully cooked and tender.
3. Fluffy Dumplings
Dumplings are what make chicken and dumplings so comforting and satisfying. The perfect dumpling is light and fluffy, with a tender texture that melts in your mouth. The dough for the dumplings should be made from flour, baking powder, salt, and butter, and should be dropped by spoonfuls into the simmering broth. The dumplings should be covered and cooked for about 10-15 minutes, until they are puffed up and cooked through.
4. Classic Vegetables
While there are many variations of chicken and dumplings that incorporate different vegetables, a truly classic recipe will include just a few simple veggies: carrots, celery, and onion. These aromatic vegetables are sautéed in butter before being added to the broth, giving the dish a rich, earthy flavor.
5. Seasoned to Perfection
The perfect chicken and dumplings recipe should be seasoned to perfection, with a balance of savory and sweet flavors. Salt, pepper, and thyme are classic seasoning choices, but some variations may include other herbs and spices like rosemary, sage, or bay leaves. The key is to taste the broth as you go and adjust the seasoning to your liking. In summary, a truly perfect chicken and dumplings recipe should feature a rich and flavorful broth, tender chicken, fluffy dumplings, classic vegetables, and a balanced seasoning. With these key elements in place, you can create a comforting and delicious dish that will warm your soul and become a family favorite for years to come.

Valuable Tips for Perfect Chicken and Dumplings Recipes

1. Choose the Right Chicken

When you are creating a perfect chicken and dumplings recipe, it is important to choose the right chicken. You can either use a whole chicken or chicken breasts. Whole chicken adds flavor and richness to the dish, but if you are in a hurry, you can use chicken breasts instead. Make sure you remove the skin and bones if using chicken breasts.

2. Season the Chicken

Before you add the chicken to the pot, it is important to season it. Salt, pepper, and some herbs like thyme or bay leaves work well. You can also add garlic, onions or celery to the pot. This will give your dish a more complex and flavorful taste.

3. Use Fresh Herbs

To give your chicken and dumplings recipe extra flavor, it is best to use fresh herbs. Dried herbs are fine, but fresh herbs are more potent, and you can taste the difference in the finished dish. You can use rosemary, thyme, or parsley, depending on your preference.

4. Cook the Chicken Properly

Cooking the chicken properly is vital for a perfect chicken and dumplings recipe. Overcooking the chicken will result in dry and tough meat, while undercooking it will result in uncooked meat. You can use a meat thermometer or poke a fork to check if it is done. The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit.

5. The Dumplings

The dumplings add a unique texture to the dish, so it is important to get them right. The dough should be firm but not too hard, and it should be evenly rolled to ensure even cooking. You can make your dumplings with flour, baking powder, and a pinch of salt. It would be best if you add a liquid such as milk or buttermilk to form a smooth batter. You can use a spoon to drop the dough into the pot or use a rolling pin to flatten it out and cut into strips.

6. Properly Thicken the Sauce

Thickening the sauce creates richness and depth to your dish. You can use a roux of butter and flour, cornstarch, or cream to thicken the sauce. It is important to whisk the ingredients continuously to avoid lumps in the sauce. If the sauce is too thick, you can add more broth or water to thin it out.

7. Let it Rest

After cooking, it is important to let the chicken and dumplings rest for a few minutes. This will allow the sauce to thicken, and the flavors will be more rounded. Give the dish at least 10 minutes to sit before serving.

8. Presentation

Finally, how you present your perfect chicken and dumplings recipe also counts. You can garnish the dish with freshly chopped parsley or chives to add color and elegance. You can also add some freshly cracked pepper to the top. Presentation matters because it shows you care, and it will make your dish more appetizing.

Conclusion:

Chicken and dumplings are an excellent comfort food that can liven up your day. If you follow the above tips, you can make a perfect chicken and dumplings recipe that is savory and delicious. With these tips, you are guaranteed to have a satisfying and hearty meal that your friends and family will enjoy.
