THE OATIEST OATMEAL COOKIES EVER

The Oatiest Oatmeal Cookies Ever image

Provided by Alton Brown

Categories     dessert

Time 1h30m

Yield About 3 dozen cookies

Number Of Ingredients 10

1 pound old-fashioned rolled oats (about 5 2/3 cups)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch kosher salt
10 ounces unsalted butter, at room temperature
6 ounces dark brown sugar, packed (about 3/4 cup)
3 1/2 ounces granulated sugar (about 1/2 cup)
1 teaspoon vanilla extract
1 large egg
4 ounces raisins, optional, soaked overnight in rum and drained, optional (about 2/3 cup)

Steps:

  • Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
  • Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
  • Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

Oatmeal cookies are one of the most delicious and nutritious treats you can make. They are flavorful, filling, and perfect for satiating your hunger pangs. Oatmeal cookies are made using rolled oats, butter, sugar, and other ingredients, and they come in different varieties such as crispy, chewy or crunchy. Making absolutely excellent oatmeal cookies recipes requires more than just a recipe. In this article, I’ll share valuable tips on how to make the perfect oatmeal cookies, so keep reading.

Tip 1: Use the Right Kind of Oats

The first step in making excellent oatmeal cookies is choosing the right kind of oats. Rolled oats are the best type of oats to use in cookies because they are softer and more tender. Avoid using quick-cooking oats or steel-cut oats as they are too coarse and will not blend well with the other ingredients. Rolled oats are readily available in grocery stores and are perfect for baking.

Tip 2: Pay Attention to the Ingredients

To make excellent oatmeal cookies, you need to pay attention to the quality of ingredients you use. Use high-quality butter made from quality cream, fresh eggs, organic flour, and high-quality chocolate chips. Avoid using cheap ingredients as they will affect the taste and texture of the cookies. Using quality ingredients will make a big difference in the final product.

Tip 3: Follow the Recipe Exactly

One of the keys to making excellent oatmeal cookies is following the recipe closely. Pay attention to the measurements and instructions, and follow them exactly. Baking is a precise science, and even small deviations from the recipe can have a significant impact on the final outcome. Don't try to make changes or substitutions unless you are an experienced baker.

Tip 4: Chill the Dough

Chilling the dough is essential for making excellent oatmeal cookies. When you chill the dough, you allow the oats to absorb the moisture from the other ingredients, resulting in a more flavorful and tender cookie. After mixing the ingredients, chill the dough in the refrigerator for 30 minutes to an hour before baking.

Tip 5: Use Parchment Paper

Using parchment paper is an excellent way to ensure your oatmeal cookies come out perfectly. Parchment paper prevents the cookies from sticking to the baking sheet, making them easier to remove. Parchment paper also helps regulate the temperature of the cookies, resulting in even baking.

Tip 6: Pay Attention to the Oven Temperature

Another essential factor in making excellent oatmeal cookies is the oven temperature. Make sure your oven is preheated to the temperature indicated in the recipe. An oven that is too hot will cause the cookies to burn, while an oven that is not hot enough will result in undercooked and doughy cookies. Invest in a good quality oven thermometer to ensure the temperature is accurate.

Tip 7: Don't Overbake the Cookies

One of the most common mistakes people make when baking oatmeal cookies is overbaking them. Overbaking the cookies results in a dry, crumbly, and hard cookie. To avoid this, bake the cookies just until the edges start to turn golden brown, and the centers are still slightly soft. Remember, the cookies will continue to bake after you remove them from the oven, so take them out a few minutes early.

Tip 8: Let the Cookies Cool

Allowing the cookies to cool after baking is essential for making excellent oatmeal cookies. When you remove the cookies from the oven, let them cool on the baking sheet for a few minutes to set. Then transfer them to a wire rack to cool completely. Cooling the cookies allows them to set and gives them a chewy texture.

Tip 9: Experiment with Flavor Combinations

Making excellent oatmeal cookies requires creativity and experimentation. Once you have the basics down, start playing around with different flavor combinations. Add different spices, extracts, nuts or fruits to the dough to create unique and flavorful cookies. Don't be afraid to experiment; you never know what delicious combination you might stumble upon.
Conclusion
Making excellent oatmeal cookies is a breeze when you follow these valuable tips. Choosing the right oats, using quality ingredients, following the recipe closely, chilling the dough, using parchment paper, paying attention to the oven temperature, not overbaking the cookies, letting the cookies cool, and experimenting with flavor combinations will help you achieve delicious and nutritious oatmeal cookies. So, get in the kitchen, start baking and enjoy your fabulous creations.
