Steps:
- Place all ingredients in the baking pan according to the manufacturer's directions.
- If baking in machine, use medium setting.
- If using dough cycle and baking in oven, remove from bread maker and place in a greased loaf pan. Let rise until doubled. Bake at 350º for 25 minutes or until loaf sounds hollow when tapped.

- 1 1/2 tablespoons vital wheat gluten
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons active dry yeast
Wet Ingredients:
- 1 cup buttermilk
- 1/4 cup water
- 2 tablespoons honey
- 2 tablespoons unsalted butter (room temperature)
Instructions
Here are the steps to bake the ABM Buttermilk Honey Wheat Bread:- In a mixing bowl, combine the dry ingredients: whole wheat flour, bread flour, wheat germ, vital wheat gluten, salt, and active dry yeast. Mix well and set aside.
- In another mixing bowl or measuring cup, combine the wet ingredients: buttermilk, water, honey, and unsalted butter. Mix well and set aside.
- Transfer the dry ingredients into a bread machine. Create a well in the center of the dry ingredients and pour the wet ingredients into it.
- Choose the "dough" cycle in your bread machine and start it. Check to see if the dough is too dry or too wet, add a tablespoon of flour or water accordingly.
- After the cycle is complete, put the dough on a floured surface and knead it a few times.
- Form the dough into a 14x8 inch rectangle and roll it up into a cylinder. Tuck the edges and ends under the dough to make it more uniform.
- Place the dough in a greased bread loaf pan and let it rise again for 30-45 minutes.
- Preheat the oven to 375°F.
- Bake the bread for 35-40 minutes.
- Let the bread cool in the pan for 5-10 minutes before cutting. Serve warm or store in an airtight container.
