ABC CASSEROLE
My kids named this dish, although I had been making it since my college days, when I paid my way through college working as a housekeeper for a very large house occupied by 3 bikers and myself (my own room and board). Steps:
- 1. Wash potatoes well (or peel, if you prefer), slice in 1/4 inch slices and line a 9x9 casserole dish with the slices, don't overlap too much. Spread the hamburger over the potatoes in a thin layer, covering all the potato (this is kind of messy, but fill in all the gaps).
- 2. Next spread the vegetable soup as evenly as you can over the whole thing. Then spread the creamed corn over all, closing up as many gaps as possible.
- 3. Cover with tin foil and bake at 400 for 45 minutes or until potatoes are fork tender (you got to stick the fork down deep enough to get to the potatoes). Allow to stand 5-10 minutes.

Vegetable casseroles are a delicious and nutritious way to incorporate a variety of vegetables into your diet. One popular type of vegetable casserole is the ABC vegetable casserole. This casserole typically features three key ingredients, each starting with the letters A, B, and C. These ingredients can vary depending on the recipe, but usually consist of some combination of asparagus, broccoli, cauliflower, carrots, and/or cheese.
The ABC Ingredients
A = Asparagus: Asparagus is a flavorful vegetable that is high in vitamins and minerals. It is often included in ABC vegetable casseroles because of its unique taste and texture. When preparing asparagus for a casserole, it is important to trim off the woody ends and chop the spears into small pieces so that they will cook evenly.
B = Broccoli: Broccoli is another nutrient-packed vegetable that is commonly used in ABC casseroles. It is known for its high levels of vitamin C, fiber, and other beneficial nutrients. When adding broccoli to a casserole, it is best to blanch it first to ensure that it is cooked through and tender.
C = Cauliflower: Cauliflower is a versatile vegetable that can be used in a wide variety of dishes, including ABC vegetable casseroles. It is low in calories and high in vitamins and minerals, making it a great addition to any healthy meal. To prepare cauliflower for a casserole, simply chop it into small florets and steam until tender.
Other Ingredients
While the ABC ingredients are the stars of the show in this type of casserole, there are usually a few other ingredients added to round out the flavor and texture. Some popular options include:
Cheese: Cheese is a common ingredient in many vegetable casseroles, including ABC casseroles. It adds a creamy, indulgent flavor and helps to bind the other ingredients together. Cheddar or Gouda cheese are popular choices.
Garlic: Garlic is a flavor powerhouse that can add depth and complexity to any casserole. It is often used in ABC casseroles to give them a savory kick.
Breadcrumbs: Breadcrumbs are used to give the top layer of the casserole a crispy, golden-brown texture. They also add a nice crunch that contrasts well with the soft, creamy vegetables.
How to Make an ABC Vegetable Casserole
The exact recipe for an ABC vegetable casserole can vary depending on personal preference, but generally follows a few basic steps:
Step 1: Prep the vegetables by washing, trimming, and chopping them into bite-sized pieces. Blanch the broccoli, steam the cauliflower, and sauté the asparagus until it is tender.
Step 2: Heat a skillet over medium heat and add garlic and any other seasonings you prefer. Once the garlic is fragrant, add the vegetables to the skillet and stir to combine. Cook for a few minutes until the vegetables are heated through and coated in the garlic mixture.
Step 3: Transfer the vegetable mixture to a casserole dish and sprinkle cheese over the top. Cover with a layer of breadcrumbs and bake in a preheated oven until the cheese is melted and bubbly and the breadcrumbs are golden brown.
Conclusion
ABC vegetable casseroles are a delicious and healthy way to enjoy a variety of vegetables in one dish. Whether you prefer asparagus, broccoli, cauliflower, or all three, there is an ABC casserole recipe out there for you. Try experimenting with different cheeses, spices, and herbs to create a casserole that is truly your own.
