ABC CHICKEN NOODLE CASSEROLE
Designated an ABC Casserole, because we found it so easy to prepare...Of particular note is the fact that it doesn't require any cream-of-whatever soup...I also like the kicky taste from the green olives (a favorite)...Serve with a tossed green salad for a nice meal!

Steps:
- Cook the egg noodles per pkg and drain.
- In a bowl, combine the cottage cheese, sour cream, 4 tbsp of the parmesan, salt and tabasco sauce (if you like more 'kick', add more tabasco).
- Stir in the olives, chicken and the egg noodles.
- Pour into a greased 2 quart baking dish/pan and sprinkle the top with the remaining parmesan.
- Cover and chill 1 hour; then bake, covered, in the preheated 350°F oven for 35 minutes.
- Then uncover the casserole and bake for 25 minutes more.
- Variation: Use a different pasta such as fettucine.

Steps:
- Preheat oven 375 degrees.
- Crumble 6 cups of Doritos with your hands into a large mixing bowl.
- Add onion, chili, enchilada sauce, tomato sauce and 1 -1/2 cups cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine.
- Place mixture into a 8 1/2 x 11 inch oven proof casserole dish.
- Bake for 30 minutes at 375.
- Remove from oven and spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining Doritos. Then add about a 1/2 cup of cheddar cheese.
- Bake for another 5 minutes.

- 1. Wash potatoes well (or peel, if you prefer), slice in 1/4 inch slices and line a 9x9 casserole dish with the slices, don't overlap too much. Spread the hamburger over the potatoes in a thin layer, covering all the potato (this is kind of messy, but fill in all the gaps).
- 2. Next spread the vegetable soup as evenly as you can over the whole thing. Then spread the creamed corn over all, closing up as many gaps as possible.
- 3. Cover with tin foil and bake at 400 for 45 minutes or until potatoes are fork tender (you got to stick the fork down deep enough to get to the potatoes). Allow to stand 5-10 minutes.
