1/2 lb lasagna noodle
1 lb lean ground beef
1/2 cup chopped onion
3 cloves garlic, minced
1 tablespoon olive oil
3 lbs tomatoes, peeled seeded,chopped or 3 lbs canned tomatoes, drained
1 1/2 teaspoons seasoning salt
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
1/2 teaspoon oregano
1/4 teaspoon fresh ground black pepper
1/2 cup butter
4 tablespoons flour
1 cup milk
1 cup chicken broth
1 chicken bouillon cube (optional)
1/8 teaspoon salt
1 egg
1/2 lb ricotta cheese
1/4 cup grated parmesan cheese
1/8 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups grated parmesan cheese
4 ounces mozzarella cheese, sliced
4 ounces teleme cheese
2 tablespoons butter

Steps:

  • Cook lasagne noodles in boiling salted water until"al dente", still firm to the bite.
  • Drain and keep them in cold water until ready to use.
  • Saute ground beef, onion, and garlic in olive oil until meat is no longer pink.
  • Add remaining ingredients and cook at a fast simmer until sauce is quite thick (about 30 to 40 minutes).
  • Preheat oven to 400*F.
  • For Bechamel, melt butter, add flour and cook, stirring with a whisk, for one minute.
  • Slowly add milk and chicken broth and bring to a boil, still using the whisk.
  • Taste and add chicken bouillon cube if needed.
  • Add salt.
  • For Ricotta filling, beat egg in a bowl and add remaining ingredients, stirring well with a fork.
  • IN the following order, layer in a lightly greased 13 X 9 inch baking dish; a little meat sauce, half of the noodles, half of the remaining met sauce, 1/2 cup BEchamel, 1/2 cup Parmesan cheese, half of the mozzarella, teleme, and ricotta filling; the remaining noodles and meat sauce, 1/2 cup Bechamel, 1/2 cup Parmesan, the remaining Mozzarella, teleme, Ricotta filling, the last of the Bechamel and Parmesan cheeses.
  • Dot with butter.
  • At this point the dish may be covered and refrigerated.
  • Bring to room temperature.
  • Bake at 400*F, uncovered, for 30 minutes, until bubbly.
  • The dish freezes well.

I came up with this after trying to duplicate lasagna I fell in love with at a Christmas party. I had some of the details/ingredients, but not the exact recipe. If you don't like ricotta cheese, like a creamy lasagna or just want to try something different, give this a whirl! PLEASE don't substitute anything...it just won't come out the same.

9 ounces barilla no-boil lasagna noodles
8 -12 ounces mozzarella cheese, shredded
1 cup parmesan cheese (freshly grated or shaved)
2 (28 ounce) jars francesco rinaldi ultra dolce spaghetti sauce (also known as "Sweet and Tasty Tomato", you will have about 1/2 jar leftover)
6 tablespoons butter
4 1/2 tablespoons all-purpose flour
1 cup heavy whipping cream
2 cups whole milk
salt and pepper
nutmeg

Steps:

  • Make the Bechamel Sauce:.
  • Heat the cream and milk in the microwave until it is hot, but not boiling.
  • In a medium saucepan over medium heat, melt the butter. Add the flour and cook, whisking constantly, until the mixture begins to bubble, about 2 minutes.
  • Gradually stir in the hot cream and milk. Continue to cook, whisking constantly, until the sauce comes to a boil. Reduce the heat and simmer, continuing to whisk, 2 to 3 minutes longer, or until fairly thick. Season to taste with nutmeg, salt and pepper. (I use about 1/8 teaspoon nutmeg, 1/4 teaspoon salt and 1/8 teaspoon pepper).
  • Directions for Assembling the Lasagna:.
  • In a deep lasagna pan begin layering with thin layer of red sauce.
  • Add first layer of pasta (4 sheets) on top.
  • Then add layer of red sauce (about 1 cup) and béchamel sauce (about 1 cup). Sprinkle parmesan on top. Then layer a third of the mozzarella.
  • Add second layer of pasta (4 sheets) on top.
  • Then add another layer of red sauce (about 1 cup) and béchamel sauce (about 1 cup). Sprinkle parmesan on top. Then layer a third of the mozzarella.
  • Add third layer of pasta (4 sheets) on top.
  • Then add another layer of red sauce (about 1 cup) and remaining béchamel sauce. Sprinkle parmesan on top. Then layer remaining mozzarella.
  • Add fourth and final layer of pasta (4 sheets) on top. Then top with red sauce and sprinkle with remaining parmesan.
  • Cover top of lasagna dish with cover or foil.
  • Place assembled lasagna dish into oven for 50 minutes at 375 degrees. Remove cover and bake for another 5 - 10 minutes.
  • Remove from oven and allow to settle for about 15-20 minutes before serving.

2 lb ground sirloin
1 1/2 jar(s) Meat Flavored Spaghetti sauce
1/2 Tbsp each salt and pepper
1/2 Tbsp garlic powder
12 lasagna noodles, cooked
8 oz sour cream
8 oz small curd cottage cheese
6 oz cream cheese room temperature
6 Tbsp grated parmesan cheese
2 c shredded sharp cheddar cheese
2 c shredded mozzarella cheese

Steps:

  • 1. Preheat oven to 375 degrees. In a large frying pan, brown ground beef with salt, pepper, and garlic powder. Drain meat when done and add back to the pan. Add the spaghetti sauce - just enough sauce to make the meat wet, but you don't want more sauce than meat. Simmer until you are ready to layer the lasagna.
  • 2. In a large mixing bowl thoroughly mix sour cream, cottage cheese and cream cheese with 3 tablespoons of parmesan and 1 teaspoon of salt.
  • 3. Boil about 12 lasagna noodles; drain them when cooked, usually about 10 minutes.
  • 4. You are ready to layer your lasagna! (Use a lasagna pan deep enough for about 3 layers.) 1.) Spoon a small amount of meat mixture on bottom of pan so noodles won't stick. 2.) Layer 3 lasagna noodles topped with a layer of the meat mixture. 3.) Now carefully add a layer of the cheese mixture, lightly dropping spoonfuls and smoothing it out. 4.) Next add a layer of shredded cheddar - enough to coat the white sauce - and then sprinkle with some grated parmesan cheese. 5.) Repeat previous layer 2 more times. (You should end up with the top layer of the lasagna being the shredded cheddar cheese.) 6.) The last layer is the shredded mozzarella. Sprinkle the mozzarella cheese on top of the cheddar, just enough to cover.
  • 5. Bake uncovered at 375 degrees for about 40 minutes. At that point turn broil on low until top is golden brown, about 8 minutes.
  • 6. Let the lasagna sit out for at least 30 minutes before serving. Cut into squares and ENJOY!!! NOTE: You can freeze this lasagna for up to 3 months in an airtight container that has been placed inside a freezer bag.
