A SOUP OF CELERY AND BLUE CHEESE

A Soup of Celery and Blue Cheese image

Long associated with the finale of the Christmas meal, Stilton and celery is a fine combination and there is every reason to turn it into a soup. I'm not sure it matters which blue cheese you use but the saltier types tend to be more interesting here. A good Stilton will work well enough, but something with more punch-say Picos, Roquefort, Stichelton, or Cashel Blue-would get my vote, as would good old Danish Blue. Cream is usually a given with celery soup, but I am not sure you need it.

Yield enough for 4

Number Of Ingredients 7

celery - a large head
an onion
celery root - half a head, about 9 ounces (250g)
butter - a thick slice
chicken stock - 4 cups (a liter)
a bay leaf
blue cheese - 4 1/2 ounces (125g)

Steps:

  • Give the celery stalks a really good wash, then chop them coarsely. Peel and coarsely chop the onion and celery root.
  • Melt the butter in a deep pan, add the chopped vegetables, and let them cook for about twenty minutes, until soft. Pour in the stock, add the bay leaf, and bring to a boil. Season with salt (remember that you will be adding a salty blue cheese later), then decrease the heat to a simmer, and leave for half an hour, stirring occasionally.
  • Purée the soup in a blender or food processor until really smooth. It may need a little longer than most other vegetables. Check the seasoning and ladle into warm soup bowls. Crumble the cheese into the soup at the table and stir until it is partially melted.

A Tasty Combination

Soup is a comforting and nourishing meal that can be made in countless ways. One particular blend that has been gaining popularity over the years is a soup of celery and blue cheese. This unique pairing of flavors results in a rich and savory dish that is packed with nutrients and can be enjoyed in both warm and cold weather. In this article, we will delve deeper into the main ingredients and benefits of this soup and explore how you can make your own version at home.
The Richness of Celery
Celery is a staple ingredient in many soups and stews due to its crisp texture and mild flavor. However, this humble vegetable brings much more to the table than just crunchiness. Celery is a good source of fiber, vitamins, and minerals such as vitamin K, potassium, and folate. It also contains antioxidants and anti-inflammatory compounds that can promote heart health, improve digestion, and lower the risk of cancer and chronic diseases. Moreover, celery is low in calories and carbohydrates, making it a popular choice for people who follow a low-carb or low-calorie diet.
The Boldness of Blue Cheese
On the other hand, blue cheese is a strong and pungent cheese that is made by adding a type of mold called Penicillium to milk. While some people may find its aroma and taste overpowering, others appreciate its distinctive tanginess and creamy texture. Like other cheeses, blue cheese is a rich source of protein, calcium, and vitamin B12. However, it is also higher in fat and sodium, so it should be consumed in moderation.
The Magic of Soups
When celery and blue cheese are combined in a soup, they create a unique harmony of flavors and textures that can satisfy different taste buds. The lightness of celery balances out the richness of blue cheese, while the crunchiness of raw celery contrasts with the creaminess of melted cheese. Also, the warmth and creaminess of the soup can provide comfort and nourishment on a cold or stressful day. Additionally, soups are easy to customize and can be adapted to different dietary needs and preferences, such as vegan, gluten-free, or paleo. You can add other ingredients based on what you have in your pantry or fridge, such as onions, garlic, potatoes, carrots, herbs, or spices.
The Recipe
To make a basic soup of celery and blue cheese, you will need the following ingredients: - 4 cups of chopped celery, including the leaves - 2 cups of vegetable or chicken broth - 1 cup of heavy or light cream - 1 cup of crumbled blue cheese - 2 tablespoons of butter or olive oil - Salt and pepper to taste Here are the steps to follow: 1. In a large pot or Dutch oven, melt the butter or heat the oil over medium heat. 2. Add the celery and sauté for 5-7 minutes, until slightly softened. 3. Pour in the broth and bring to a boil. Reduce the heat and let the soup simmer for 15-20 minutes, until the celery is tender. 4. Use an immersion blender or transfer the soup to a blender and puree until smooth. 5. Add the cream and blue cheese to the soup and stir until the cheese is melted and the soup is heated through. 6. Season with salt and pepper to taste. 7. Serve warm with crusty bread or crackers, or chill in the fridge for a refreshing summer soup.
The Variations
While the above recipe is a simple and delicious way to enjoy a soup of celery and blue cheese, there are many ways to tweak it and experiment with different flavors and textures. Here are some ideas to get you started: - Add other vegetables such as carrots, bell peppers, or zucchini for more color and nutrients. - Use different types of cheese such as goat cheese, feta, or cheddar for a different taste. - Top the soup with croutons, bacon, nuts, or fresh herbs for extra crunch and flavor. - Use almond milk or coconut milk instead of cream for a dairy-free version. - Add a dollop of sour cream or Greek yogurt for tanginess and creaminess. - Use a slow cooker or instant pot for a hands-off approach to cooking.
The Bottom Line
A soup of celery and blue cheese is a tasty and wholesome meal that can be enjoyed year-round. Whether you are a fan of creamy soups, bold cheeses, or nutritious veggies, this dish has something for everyone. By using fresh and high-quality ingredients and playing with different variations, you can create a soup that suits your taste and lifestyle. So why not give it a try and see how it can warm your heart and nourish your body?
When it comes to creating a delicious and healthy soup, celery is a popular ingredient. Combining it with the strong flavor of blue cheese can produce a rich and creamy composition. However, perfecting the recipe can be tricky. In this article, we will provide valuable tips on how to make the best soup of celery and blue cheese without using any recipe.

Tip 1: Choose the right blend of cheese:

When making blue cheese soup, it is essential to select the right type of cheese. Blue cheese comes in different varieties such as Gorgonzola, Roquefort, and Stilton, each with a unique taste. While Gorgonzola has a sharp, tangy flavor, Roquefort has a more nutty taste, and Stilton offers a milder flavor. To create the perfect soup, consider blending two or more types of cheese to arrive at a balanced flavor.

Tip 2: Cook celery properly:

Celery is known to be stringy and less flavorful than other vegetables. Therefore, it is crucial to cook it correctly to bring out its flavor. Begin by washing the celery thoroughly and trimming the ends. Cut them into small pieces and cook them with garlic, onions, and butter for about 10 minutes until they are tender.

Tip 3: Use the right broth:

Using the right broth is essential in creating an excellent soup. While vegetable or chicken broth is a popular choice, consider using beef broth to give the soup a rich and robust flavor. Beef broth can also balance the acidity in the blue cheese, giving you a well-rounded dish.

Tip 4: Prepare the vegetables appropriately:

To achieve an excellent celery and blue cheese soup, it is crucial to prepare the vegetables correctly. Consider adding diced carrots, onions, garlic, and butter to the soup. Allow them to cook for five minutes before adding the cooked celery. Sauté the vegetables for an additional fifteen minutes until they are entirely cooked.

Tip 5: Choose the right seasoning:

Seasoning is essential in bringing out the soups' flavor. To add depth to the soup, consider using a blend of herbs and spices such as thyme, bay leaves, and black pepper. Add salt to taste, depending on the saltiness of your chosen cheese.

Tip 6: Use Cream:

Adding cream is a common way of enhancing the texture and flavor of celery and blue cheese soup. Heavy cream works best, adding a rich and comforting texture to the dish. Add the cream after the soup has cooked and when it's off the heat, as it can curdle when exposed to high temperatures.

Tip 7: Consistency is key:

The soup's consistency can make or break the dish. It is crucial to fine-tune the thickness by adding more broth or reducing it as needed. A thinner soup can be served as a starter, while a thicker blend can be served as the main course.

Tip 8: Garnish:

Garnishing is the final touch in adding visual appeal to soup dishes. Consider adding chopped celery, blue cheese crumbles, and fresh thyme to complete the dish's look. Croutons, chives, and parsley can also add a slight crunch to the soup.

Conclusion:

With the above tips in mind, you are well on your way to creating a delicious and healthy soup of celery and blue cheese. Remember to experiment with herbs, cheese, and consistency to arrive at the perfect recipe for your taste buds.
