Time 25m

Number Of Ingredients 7

1 cup butter room temperature
1 cup granulated sugar
2 tsp vanilla extract
1 egg
3 cups flour
2 tsp baking powder
1 batch Sugar Cookie Frosting

Steps:

  • Preheat oven to 350°.
  • Cream together the butter and sugar in the bowl of a stand mixer for a full 3 minutes.
  • Scrape sides and add in vanilla and egg. Mix until combined.
  • Add flour and baking powder to the bowl. Mix slowly at first gradually getting faster until the dough comes together. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.
  • Turn out onto a floured surface. Use a rolling pin and roll until about 1/4 inch thick. (The cookies will not rise while baking, they will not get thinner while baking. Roll out to your desired FINISHED thickness.)
  • Use cookie cutters and cut out desired shapes. Transfer the cookies to a silicone lined cookie sheet.
  • Bake at 350° for 6-8 minutes or until the centers are puffy and no longer glossy. Pull the cookies out of the oven BEFORE they start turning brown. If they turn brown, the cookie will be dry and 'crackery' instead of soft and chewy.
  • Frost with Sugar Cookie Frosting and Enjoy!

Time 4h30m

Yield twenty-four 2 1/2-inch cookies

Number Of Ingredients 12

2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/8 teaspoon baking soda
1/2 teaspoon fine salt
1 large egg
1 teaspoon pure vanilla extract
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1/2 cup granulated sugar
1/4 cup confectioners' sugar
1/2 pound (about 1 3/4 cups) confectioners' sugar, plus more for thickening
1 tablespoon meringue powder
1/2 teaspoon pure vanilla extract
Assorted food coloring, optional

Steps:

  • For the dough: Whisk together the flour, baking soda and salt in a medium bowl. Beat together the egg and vanilla in a small bowl.
  • Beat the butter, granulated sugar and confectioners' sugar together in a large bowl with an electric mixer on low speed. Once incorporated, increase the speed to medium and beat until slightly creamy, about 3 minutes. Stop and scrape down the sides of the bowl as needed.
  • Reduce the speed to low again and slowly pour in the egg mixture and beat until combined. Add the flour mixture, in 3 additions, increasing the speed as the dough gets thicker to keep the beaters spinning. Scrape down the sides of the bowl and the beaters as needed. Once all the flour is just incorporated, increase the speed to medium-high and beat until the dough is very smooth, about 5 minutes.
  • Turn the dough out of the bowl and bring it together. Divide into 2 even pieces. Shape each piece into a flat square and wrap in plastic wrap. Refrigerate the dough for at least 3 hours or overnight.
  • To roll, cut and bake the cookies: Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Dust another sheet of parchment paper with flour and put 1 piece of the dough on top. Dust with more flour and top with another sheet of parchment. Roll the dough out between the parchment sheets into a square about 1/4-inch thick (about 11-by-9 inches) and place in the freezer for 5 minutes. Repeat with the remaining piece of dough.
  • From 1 piece of rolled dough, cut out cookies with a 2 1/2-inch cutter and arrange on the prepared baking sheets, about 2 inches apart. Refrigerate while you cut the remaining cookies. Reroll any scraps of dough and repeat the freezing, cutting and refrigerating process until all the dough is used.
  • Bake, rotating the baking sheets front to back and bottom to top about halfway through, until golden brown around the edges, about 12 minutes. Let cool completely on the baking sheets set on a wire cooling rack, about 30 minutes.
  • Meanwhile, make the royal icing: Combine the confectioners' sugar and meringue powder in a large bowl. Add 3 tablespoons water and the vanilla and beat with an electric mixer on medium-high speed until the icing forms thick and glossy peaks, about 2 minutes (adding up to 1 tablespoon more water, if needed). Tint with a few drops of food coloring as desired.
  • Fit a pastry bag with a small round tip and fill it with the icing.
  • Pipe royal icing on cookies with the design of your liking and let dry for 30 minutes.

PERFECT SUGAR COOKIES

Perfect Sugar Cookies image

Classic sugar cookies take baking back to basics. But in their simplicity lies their perfection: It's hard to beat the delicate flavor of cookies with only the most elemental of ingredients. We veered from tradition a little by adding sour cream for softness and candied citrus for zest. This recipe appears in our cookbook "Martha Stewart's Cookie Perfection" (Clarkson Potter).

Yield Makes 10

Number Of Ingredients 14

2 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1 stick unsalted butter, room temperature
1 1/2 cups granulated sugar, plus more for sprinkling
1 large egg
1 teaspoon pure vanilla extract
1/4 cup sour cream
1 large egg white
2 cups confectioners' sugar, sifted, plus more if needed
1 to 2 teaspoons fresh lemon juice
Oranges, lemons, or grapefruits
1 1/2 cups sugar

Steps:

  • Sugar Cookies: Preheat oven to 350 degrees. In a bowl, whisk together flour, baking powder, salt, and baking soda. In a large bowl, beat butter and granulated sugar on medium-high speed until pale and fluffy, about 3 minutes. Add egg and vanilla; beat well to combine.
  • Reduce speed to low and add half of flour mixture, followed by sour cream, then remaining flour mixture; beat just until smooth. (Dough will be stiff; you may need to finish mixing it with a wooden spoon.)
  • Using a cookie scoop or a tablespoon, scoop dough (about 3 tablespoons at a time) and drop on parchment-lined baking sheets, spaced 3 to 4 inches apart.
  • Bake, rotating sheets halfway through, until edges of cookies are just firm and tops are barely beginning to brown, 20 to 25 minutes. Transfer cookies to wire racks; let cool completely, then top with sanding sugar or lemon glaze and candied zest (below).
  • Lemon Glaze: In a large bowl, whisk together egg white, sugar, and 1 teaspoon lemon juice until smooth. (If necessary, at up to 1 teaspoon more lemon juice to reach desired consistency. Glaze should be opaque but not so thin as to run down the edges of a cookie when dipped. If glaze runs, add more sugar; if too thick, add water, 1 teaspoon at a time. Use immediately. Makes: About 1/2 cup
  • Candied Citrus: With a sharp paring knife, slice the ends off citrus. Following curve of fruit, cut away outermost peel, leaving most of white pith on. Slice peel lengthwise into 1/4-inch-wide strips.
  • In a pot of boiling water, cook peel until tender, about 10 minutes. With a slotted spoon, transfer to a wire rack set over a rimmed baking sheet; spread in a single layer and let dry slightly, about 15 minutes.
  • In a saucepan, bring sugar and 1 cup water to a boil over high heat, stirring until sugar is dissolved. Add peel and boil until translucent and syrup thickens, 8 to 10 minutes. With slotted spoon, transfer peel to rack, separating as needed. Let cool 1 hour. Toss with remaining 1/2 cup sugar to coat. Use immediately.

SUGAR COOKIES

Sugar Cookies image

This sugar cookie dates back to a Swedish woman born in 1877! Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. These are my favorite cookies and I hope they'll become yours as well. -Helen Wallis, Vancouver, Washington

Sugar cookies are a classic treat that can bring joy to any occasion. They're perfect for holidays, birthdays, or just a sweet snack with a cup of tea or coffee. However, not all sugar cookies are created equal. A perfect sugar cookie recipe has certain qualities that make it stand out from the rest.

Texture

The texture of a perfect sugar cookie is a delicate balance of crispy and chewy. It should have a slightly crisp outer layer with a soft and chewy center. The cookie should not crumble apart, but rather hold its shape when bitten into. This is achieved by using the right amount of flour and sugar in the recipe, along with proper mixing and baking techniques.

Flavor

The flavor of a sugar cookie should be sweet, but not too overpowering. It should have a hint of vanilla or almond extract, which gives the cookie a lovely aroma and taste. The sweetness of the cookie should be complemented by a slight saltiness, which adds depth to the flavor. A perfect sugar cookie should not be bland but should have a pleasant, balanced taste.

Appearance

The appearance of a sugar cookie is just as important as its taste and texture. It should be rich golden in color, with a smooth and uniform surface. The edges should be slightly crisp with a soft center. The cookie should not be too thick or too thin, but rather have a perfect height that complements its texture and flavor. A sugar cookie that doesn't look appetizing is unlikely to be enjoyed, no matter how good it tastes.

Ingredients

A perfect sugar cookie recipe should have all the right ingredients in the correct amounts. Flour, butter, sugar, eggs, and vanilla extract are the basics. The flour should be all-purpose flour, and the butter should be unsalted, which makes it easier to control the amount of salt in the dough. The sugar should be granulated sugar, which gives the cookies their sweetness and helps create the desired texture. Eggs are added to provide structure and binding properties, while vanilla extract or other flavorings give the cookie its unique taste.

Baking Techniques

Baking techniques are just as crucial to a perfect sugar cookie as the ingredients of the recipe. The cookie dough should be chilled before baking, which allows the dough to firm up and retain its shape while baking. The oven temperature should also be carefully monitored, to ensure that the cookies bake evenly and do not burn. The cookies should be baked for just the right amount of time, until the edges are slightly browned, and the surface has a golden brown hue.

Variations

Although a traditional sugar cookie recipe is perfect in its simplicity, there are many variations that can be tried. These include adding sprinkles, chocolate chips, or changing the flavor of the cookie dough with different extracts or spices. Different shapes can also be created with cookie cutters, making them perfect for events like Christmas or Halloween. It's essential to experiment with different variations to find the perfect cookie that suits your taste.

Conclusion

In conclusion, a perfect sugar cookie recipe is one that has the right balance of texture, flavor, and appearance. It should be crispy on the outside and chewy on the inside, with a sweet yet balanced taste. The ingredients should be high quality and in the correct amounts, and baking techniques should be carefully followed. Experimenting with different variations is encouraged, and it's essential to keep in mind the key qualities that make a perfect sugar cookie recipe. With these tips, anyone can create a delightful batch of sugar cookies that are sure to impress.
Sugar cookies are loved by many people and make a great treat for any occasion. They are versatile, easy to make, and can be customized in a variety of ways. To ensure that your sugar cookies turn out perfectly, there are several tips that you should keep in mind. In this article, we will take a look at some valuable tips that you can follow when making the perfect sugar cookie recipe.

Tip #1: Use Fresh Ingredients

When making sugar cookies, it is important to use fresh ingredients. This includes the flour, sugar, eggs, and butter. Using fresh ingredients will ensure that your sugar cookies turn out delicious and will also help to extend their shelf life. Fresh ingredients will also make your dough easier to handle and shape.

Tip #2: Chill the Dough

Chilling the dough is an important step when making sugar cookies. This will help to prevent the cookies from spreading too much during baking and will also make the dough easier to handle. After you have mixed the ingredients together, form the dough into a ball and wrap it in plastic wrap. Place the dough in the refrigerator for at least 30 minutes or up to 24 hours.

Tip #3: Use the Right Type of Flour

When making sugar cookies, it is important to use all-purpose flour. This type of flour has a lower protein content than bread flour and will produce a softer cookie. If you use bread flour, your cookies may turn out too tough and dense.

Tip #4: Cream the Butter and Sugar Properly

Creaming the butter and sugar together properly is an important step when making sugar cookies. This will help to create a light and fluffy texture and will also help to incorporate air into the dough. To cream the butter and sugar together properly, use room temperature butter and beat it with the sugar using either a stand mixer or electric hand mixer. Beat the mixture until it is light and fluffy, which should take about 3-5 minutes.

Tip #5: Do Not Overmix the Dough

Overmixing the dough can cause your sugar cookies to turn out tough and dry. After you have added the flour to the butter and sugar mixture, mix the dough just until it comes together. Overmixing can also cause the cookies to spread too much during baking, which will result in thinner and less attractive cookies.

Tip #6: Roll the Dough to the Right Thickness

Rolling the dough to the right thickness is important when making sugar cookies. If the dough is too thick, the cookies may turn out dense and undercooked. If the dough is too thin, the cookies may become brittle and break apart easily. The ideal thickness for sugar cookies is about ¼ inch.

Tip #7: Use Parchment Paper or Silpat Mats

Using parchment paper or Silpat mats can help to prevent your sugar cookies from sticking to the baking sheet. They will also make the cookies easier to remove from the pan and will help to prevent them from spreading too much during baking. If you do not have parchment paper or Silpat mats, you can also lightly grease your baking sheet with cooking spray.

Tip #8: Do Not Overcrowd the Baking Sheet

Overcrowding the baking sheet can cause your sugar cookies to spread too much during baking. This will result in thinner and less attractive cookies. To prevent this from happening, leave at least 1-2 inches between each cookie on the baking sheet. This will give the cookies enough room to spread without touching each other.

Tip #9: Bake at the Right Temperature

Baking your sugar cookies at the right temperature is important to ensure that they turn out perfectly. The ideal temperature for baking sugar cookies is 350°F. If your oven runs hot or cold, you may need to adjust the temperature accordingly. It is also important to preheat your oven before baking the cookies.

Tip #10: Decorate with Care

Decorating your sugar cookies is a fun and creative process. However, it is important to handle the cookies with care when decorating to prevent them from breaking or crumbling. Wait until the cookies have cooled completely before decorating and use a gentle touch when handling them. Use your favorite frostings, sprinkles, and other decorations to make your sugar cookies look as beautiful as they taste.

Conclusion

If you follow these valuable tips when making sugar cookies, you can be sure that they will turn out perfectly. With their soft and buttery texture and delicious taste, sugar cookies are a classic treat that everyone will enjoy. So next time you are in the mood for a sweet and simple dessert, try making a batch of homemade sugar cookies - you won't be disappointed!
