ONE CUP OF EVERYTHING COOKIES RECIPE



One Cup of Everything Cookies Recipe image

Add one cup of everything (and a few extra ingredients) for these amazing Everything Cookies that are perfect as a school or dessert treat.

Number Of Ingredients 12

1 cup butter, softened (2 sticks)
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
1 cup creamy peanut butter
1 cup oatmeal
1 cup flour
1 cup coconut
1 cup chocolate chips
1 cup chopped nuts (your preference)
1 cup chopped dried fruit, like raisins, dried cranberries or apricots

Steps:

  • Preheat oven to 350 degrees.
  • In one large bowl, cream together butter and both sugars.
  • Add eggs and vanilla, mix until blended.
  • Add peanut butter and mix again until blended.
  • Add in oatmeal, flour, coconut. Mix until blended.
  • Add in chocolate, nuts and dried fruit, then mix until blended.
  • Drop by spoonfuls onto a cookie sheet (12 to each pan).
  • Bake for 12-15 minutes at 350 degrees.
  • For softer cookies, take out of the oven after around 12 minutes. The cookies will appear slightly under baked. Loosen with a spatula and transfer immediately to a rack for cooling.
  • For crispy cookies, take out of the oven after around 15 minutes. Cookies will be darker around the edges. Loosen with a spatula. Let cookies rest on baking sheet for one additional minute before transferring to a rack for cooling.

I created this recipe when I was having a craving.I have made them for VBS and it was a big hit. With the whole wheat flour and oatmeal the children were eating high fiber and begging for more.

1 c butter
1 1/4 c shortening
3 c brown sugar, firmly packed
1 1/2 c sugar
1 Tbsp baking powder
3/4 tsp baking soda
1 1/2 tsp cinnamon
6 large eggs
1 Tbsp vanilla
4 1/2 c whole wheat flour
6 c quick rolled oats
1 c peanut butter chips
1 c semi-sweet chocolate chips
1 c butterscotch chips

Steps:

  • 1. You could put in 1 ½ cups of chopped walnuts or pecans but my children do not like nuts in their cookies. I have doubled the recipe for VBS and then added in white and milk chocolate chips also.
  • 2. Preheat at 375° In a mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking powder, baking soda, and cinnamon. Beat until combined, scraping sides of bowl. Beat in eggs and vanilla. Beat in as much of the flour as you can. Stir in remaining flour. Stir in rolled oats. Stir in chips and/or nuts. Bake for 8 to 10 minutes or until edges are light brown. Cool on cookie sheet 1 minute.

1 cup warm water (110 degrees)
1/4 cup sugar
2 1/4 teaspoons active dry yeast
2 tablespoons olive oil
1 teaspoon salt
2 teaspoons italian seasoning
3 cups all-purpose flour
1 tablespoon olive oil
2 garlic cloves, minced
2 shallots, chopped
1 (9 ounce) package fresh spinach, steamed and squeezed dry
1/4 cup sun-dried tomato packed in oil, drained and chopped
1/3 cup asiago cheese, finely grated
2 tablespoons butter
1/4 teaspoon garlic powder
1/8 teaspoon salt

Steps:

  • In large bowl, dissolve the sugar in the warm water. Stir in the yeast. Let yeast proof until becomes creamy foam (about 10 minutes).
  • Mix in 1 t. salt, 2 T. oil, and Italian seasoning. Mix in flour, one cup at a time. Knead dough on lightly floured surface until smooth. Place in well-oiled bowl, and turn dough to coat. Cover with cloth and allow to rise until doubled in size, about 1 hour.
  • While dough is rising, put 1 T. olive oil in medium frying pan and heat on medium. Add in shallots and garlic cloves and cook until soft. Add in spinach and tomatoes; stir. Remove from heat and allow to cool.
  • Lightly grease 9x5 loaf pan.
  • After dough has risen, punch down and allow to rest for 10 minutes.
  • Put dough on lightly floured counter and roll into 14x9 inch rectangle. Spread with spinach mixture.
  • Starting with short end, roll up jelly roll style tightly or you will have big gaps in the circles. Pinch ends together and place rolled side down in pan. Cover with towel and allow to rise again until doubled (1 hour). Sprinkle Asiago on top before placing in oven.
  • Bake in 350 degree oven for 45 minutes or until hollow when tapped. At 30 minutes cover top with aluminum foil to prevent excessive browning.
  • Melt butter in microwave for 20-30 seconds. Stir in garlic powder and 1/8 tsp salt. When bread comes out of oven, brush with garlic butter mixture. Allow to cool for 10 minutes before removing from pan to wire rack.

1/2 medium onion, chopped
1 garlic clove, minced
3 medium potatoes, sliced thinly
2 large carrots, sliced
1 1/2 cups frozen corn

1 (10 1/2 ounce) can condensed cream of celery soup
1/4 cup milk
1/4 cup parmesan cheese
fresh ground pepper

Steps:

  • Fry ground beef with onions and garlic. While it's frying, peel the potatoes and carrots, then slice.
  • Preheat oven to 350 degrees F.

6 large eggs
2 1/4 cups brown sugar
2 cups white sugar
1 1/2 teaspoons vanilla
4 teaspoons baking soda
1 cup butter, softened
3 cups crunchy peanut butter
9 cups oatmeal
1 1/2 cups plain M&M's
1 1/2 cups chocolate chips

Steps:

  • In very large bowl, use mixer to combine first seven ingredients--eggs through peanut butter.
  • Add oatmeal, candy, and chocolate chips and mix thoroughly by hand.
  • If dough is too sticky, either refrigerate or add another 1/2 to 1 cup oatmeal.
  • Scoop ice cream size balls of dough onto cookie sheets, with plenty of space in between.
  • Bake at 350° for 13-15 minutes. If using two racks, switch top to bottom and bottom to top about halfway through.
